- In the bowl of a stand mixer, blend egg whites and salt together in a bowl on medium speed until soft peaks form.
- Meanwhile, bring corn syrup to a boil in a saucepan; add marshmallows and stir until melted.
- Raise mixer speed to high. Very carefully, pour the hot syrup in a steady stream between the side of the mixing bowl and the moving beater. Beat until mixture is cool enough to touch; mix in vanilla extract. Makes enough to frost a 9x13-inch cake or an 8-inch layer cake.

Steps:
- Heat 1 1/2 cups sugar, the corn syrup, and 2/3 cup water in a small saucepan over medium heat, stirring, until sugar has dissolved. Bring to a boil over medium- high heat. Wash down sides of pan with a wet pastry brush to prevent crystals from forming. Cook, without stirring, until a candy thermometer reaches 235 degrees.
- Meanwhile, put egg whites into the bowl of an electric mixer fitted with the whisk attachment. Beat on medium speed until soft peaks form. Gradually add remaining 2 tablespoons sugar. Reduce speed to medium-low. Add the hot syrup in a slow, steady stream down sides of bowl. Raise speed to medium-high; beat until stiff peaks form and frosting is smooth and cool, about 7 minutes.

SNOW-WHITE FLAVOURED BUTTERCREAM ICING
A great icing, makes enough for two gingerbread houses or about four cakes! I love this at the holidays, easily reduced as well, or store the icing for the next cake you make!

SNOW FROSTING
This is a cookie decorating frosting from a 1953 Better Homes and Gardens that my mother used all my life. I use it on my "Fat Santa" recipe for his hair and hat. A nice consistency that dries well.
