ROASTED PORTOBELLO CAPS
Think of a jumbo stuffed mushroom without all the high-fat ingredients but with all the flavor. Serve these alongside grilled chicken breasts or a juicy steak.

Steps:
- Preheat oven to 450 degrees F. Coat a rimmed baking sheet or roasting pan with cooking spray.
- Place mushroom caps, gill-side up, on the prepared pan. Sprinkle with 1/8 teaspoon salt and pepper. Roast until tender, about 20 minutes.
- Meanwhile, combine breadcrumbs, Parmesan, parsley, oil, the remaining 1/8 teaspoon salt and pepper in a small bowl. Remove the mushrooms from the oven and top each cap with about 2 tablespoons of the breadcrumb mixture, spreading evenly. Return to the oven and roast until the breadcrumbs are browned, about 5 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Grease baking sheets or line with parchment paper. Sift together the flour, baking powder and salt; set aside.
- In a medium bowl, cream the butter and beat in egg yolks one at a time. Stir in cream, and then mix in the dry ingredients to form a light dough. If necessary, cover dough and chill for 30 minutes for easier handling.
- On a lightly floured surface, roll the dough out to 1/4 inch thickness, and cut into small circles. Place the circles onto the prepared baking sheets. In a clean glass or metal bowl, whip egg whites to soft peaks. Gradually add confectioners' sugar while continuing to whip to stiff peaks. Fold in walnuts and coconut. Spoon some of the meringue mixture onto the top of each cookie.
- Bake for 12 minutes in the preheated oven, or until delicately browned.

These cookies look like little snow-covered mountains. Roll each ball in confectioners' sugar twice to make sure it's thoroughly coated and no dark dough is visible.

- In a medium bowl, sift together flour, cocoa, espresso, baking powder, and salt. With an electric mixer, cream butter and brown sugar until light and fluffy. Beat in egg until well combined; mix in cooled chocolate. With mixer on low, gradually add flour mixture; beat in milk until just combined. Flatten dough into a disk; wrap in plastic. Freeze until firm, about 45 minutes.
- Preheat oven to 350 degrees. Line two baking sheets with parchment. Shape dough into 1-inch balls. Pour confectioners' sugar (about 1/2 cup) into a medium bowl; working in batches, roll balls in sugar two times, letting them sit in sugar between coatings.
- Place on prepared baking sheets, 2 inches apart. Bake until cookies have spread and coating is cracked, 12 to 14 minutes; cookies will still be soft to the touch. Cool cookies on a wire rack.

Steps:
- Stir ingredients together and pour over crushed ice. Garnish with nutmeg and orange twist. Serve in small brandy snifter.
SNOW CAPS
Steps:
- 1. Preheat oven to 200 degrees.
- 2. Line baking sheets with parchment paper.
- 3. In large mixer bowl, combine egg whites and cream of tartar.
- 4. Beat at highest speed of electric mixer until mixture is just frothy.
- 5. Add sugar, 1 tablespoon at a time, beating well after each addition.
- 6. Beat until stiff peaks form, then add vanilla; beat 1 minute.
- 7. Fold in chocolate chips and drop mixture by teaspoonfuls, 1\" apart, onto prepared baking sheets.
- 8. Bake 2 hours or until meringues are thoroughly dry to touch but not browned, rotating baking sheets halfway through baking.
- 9. Turn off heat and leave in closed oven 3-4 hours or until completely dry.
- 10. Remove from oven and cool completely.
- 11. Carefully remove from parchment.
- 12. Melt white chocolate in top of double boiler over hot, not boiling, water.
- 13. Stir constantly until chocolate melts.
- 14. Dip top of each cookie into melted chocolate, if desired.
- 15. Place on waxed paper to dry.
- 16. Store at room temperature in tightly covered containers--makes about 6 dozen cookies.

- For Bottom Crust, in a large bowl beat butter and sugar with an electric mixer on medium-high speed until light and fluffy. Add vanilla and lemon zest; beat until just combined, scraping down sides of bowl and necessary. Add egg yolks; beat until combined. Add flour and salt; beat until dough just comes together. Using your hands, knead dough until flour is fully incorporated.
- In a very large bowl toss together apples, pears, cake crumbs, cranberries. flour, brown sugar, and orange zest; set aside. In a small bowl whisk together instant pudding mix, cream, and orange juice for 1 minute or until well blended. Let stand 3 minutes until thickened. Stir pudding mixture into apple mixture. Mound filling into prepared crust*, leaving about 1/2 inch around the edge to tuck in pastry top.
- Unfold puff pastry. On a lightly floured surface roll out pastry to a 12-inch square. Carefully drape pastry over filling. Tuck edges of pastry between filling and bottom crust; trim excess pastry. In a small bowl combine 1 egg and 1 Tbsp. water. Using a pastry brush, brush pastry with a egg mixture. Transfer pan to a foil-lined baking sheet. Bake 50 minutes or until top crust is golden brown. Remove from oven. Cool completely on a wire rack.
- For Icing, whisk together powdered sugar and milk until smooth. Spoon half the icing over top of the pie; let stand 2 minutes. Spoon remaining icing over. Top with maraschino cherry, if desired.
