SNOOTY MODERN FRENCH TOAST
Old-style French toast is too decadent to fit into most diets, especially them snooty Frenchmen. So here's my favorite way to make my cake and eat it too. I use Arnold's 100% whole wheat, which soaks up the mixture beautifully and, with each slice having 90cal, 3g fiber, and 4g protien, means two slices stack up pretty well against your favorite health cereal.

Steps:
- Spray and begin heating a nonstick skillet on med-high.
- Whisk together egg whites, spices, vanilla, sugar (if using) and milk in a bowl or small dish.
- Slice your bread however you desire.
- Dip and soak your bread until most of the mixture is absorbed (it should be a little soggy).
- Cook bread slices on the skillet, flipping two or three times, until nice and crispy on the outside. This may take up to 4-6 minutes per side, since the bread has absorbed more than normal french toast bread.
- Put banana slices on top of bread, and, if you feel like adding the calories, a bit of maple syrup.

Steps:
- Melt butter in a pan; mix/whisk eggs, milk, sugar, and cinnamon in a separate bowl.
- Dip the bread(Top/bottom) in the mixture then lay it in the pan. Once golden brown on both sides, set aside and proceed with the rest.
- Once all the French Toast has been made, apply peanut butter to the surface of them. Then cut up the banana and disperse it among the French Toast.
- Take some cinnamon and sugar and combine it to make a c/s mixture to sprinkle over the French Toast.
- drizzle the honey over it and ENJOY!

FAMILY STYLE FRENCH TOAST
I make this when I have a large group of guest staying over. You can make up two baking dishes of this. Your French Toast is done at the same time.

Steps:
- Combine brown sugar, butter and cinnamon; spread evenly in a greasted 15 x 10 x 1 inch baking pan; set aside.
- Combine eggs and milk in a shallow dish; place bread in dish and soak for 5 minutes, turning once.
- Place bread over sugar miture.
- Bake, uncovered at 350 degrees for 20- 25 minutes or until golden brown.
- You can serve it with maple syrup but it is really good without.

MY FAVORITE FRENCH TOAST
I'd been polishing this recipe for a while, then found the absolute best bread to use and now The Beau says I've ruined him for all other French Toast. It's called shoku pan, it's from the Japanese bakery. Shoku pan is wonderfully square and comes sliced either thin or thick--each of the thick slices are an inch fat! Look for it at an Asian market, I get mine at Uwajimaya or 99 Ranch Market and buy it a couple of days before I'm planning to make this so the bread is slightly stale. If you can't find shoku pan, substitute another thick sliced Texas Toast style bread.

- Pour flour into a large mixing bowl.
- Slowly whisk in the milk.
- Whisk in salt, eggs, spices, vanilla, sugar and cognac or Grand Marnier until smooth.

- In a medium-size bowl, combine flour, sugar, salt, and cinnamon.
- Add milk, eggs, and vanilla. Whisk briskly to remove all clumps.
- Grease a skillet or frying pan with a paper towel that has been dipped in oil or shortening.
- Heat skillet over medium-high heat until a drop of water sizzles when flicked onto skillet.
- Dip both sides of bread slice into the batter briefly.
- Let some of the batter drip off, then place bread in skillet.
- Cook until golden brown on both sides, about 2 minutes on the first side and 1 minute on the second.
- If needed, add a little more oil to the skillet to cook all of the slices.
- Repeat procedure with remaining bread slices.
- Keep French toast warn in a low oven as you cook remaining slices.

MURRAY'S FRENCH TOAST
This is my (Bird's) favorite French toast recipe. Growing up with 4 siblings, my dad would make sugar-butter when there was no syrup in the house (hence 'Murray's', named after my dad). Some folks like it on pancakes, but for me, it's on French toast all the way! I even have a 'pattern' to how I eat it. I haven't tried it using Splenda yet, so I guess I need to soon, but then, this is not a 'diet-conscience' recipe. When we were real broke, and there was no money even for dog food, my dad would leave some egg mixture in the bowl, break up some bread in it, and the dog (and cats) ate too (we were always bringing home strays). :) My dad was the master of inginuity, making sure we all had full bellies!

- SUGARBUTTER: Using the tines of a fork, mix butter and sugar in a small bowl. Do not beat (you should feel the granules of sugar in the butter). Set aside.
- Beat eggs and milk in a bowl large enough to fit a slice of bread. Heat a small pat of butter in a large pan or griddle over medium heat.
- When butter is melted in pan, dip 1 slice of bread into the egg mixture, flip over, then hold it over the bowl for a second or so to let excess egg drip off. Place into pan and sprinkle with a light dusting of cinnamon. Repeat with other slices (so as to fit on griddle or in pan, may need to do in batches).
- Cook for 3-5 minutes until golden brown. Flip toast and cook remaining side to golden (sprinkle with more cinnamon if desired).
- Place one toast each onto individual plates. Spread sugar-butter over one side (like buttering toast). Place another slice on top and repeat. Continue until you reach the desired stack amount and serve. I love to eat the crust off first, then dive into the center of soft french toast smothered in sugar-butter to divulge into at the end. A mouth-watering experience!
