My family enjoys this easy baked beans recipe with cornbread, but it also rounds out any cookout. Canned pork and beans make meal prep quick. -Phyllis Schmalz, Kansas City, Kansas

2 cans (28 ounces each) pork and beans
1-1/2 cups packed brown sugar
1/2 pound sliced bacon, cooked and crumbled
1 cup finely chopped onion
1 cup cola
1 cup ketchup
2 tablespoons ground mustard

Steps:

  • Preheat oven to 325°. In a large bowl, mix all ingredients. Transfer to a greased 3-qt. baking dish. Bake, uncovered, 1-1/4 to 1-1/2 hours or until bubbly.

I have been making this for almost 40 years. The original recipe calls for all ketchup; it was my idea to make that half ketchup and half barbeque sauce. I do love spicy. I have never had a baked bean recipe that was this good and also this easy. Nobody will know you didn't spend all day on it.

cooking spray
2 (16 ounce) cans pork and beans
¾ cup brown sugar
¼ cup ketchup
¼ cup barbeque sauce
4 slices bacon, cut into 1/2-inch pieces
1 teaspoon dry mustard

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Prepare a 9-inch baking dish with cooking spray.
  • Stir pork and beans, brown sugar, ketchup, barbeque sauce, bacon, and dry mustard together in the prepared baking dish.
  • Bake in preheated oven, stirring every 20 minutes or so, until bacon fat is rendered throughout the beans mixture, 2 1/4 to 2 1/2 hours.

Sneaky Veggie Franks and Beans image

A tasty dish that combines most kid's favorites - hot dogs and baked beans. The sweet potato and the carrots in the orange puree add not only a top source of nutrients and fiber but a delicious hint of sweetness! Adapted from the Sneaky Chef Cookbook by Missy Chase Lapine.

4 vegetarian hot dogs, sliced (or if you must turkey or beef hot dogs-preferably with no nitrates)
1 (16 ounce) can vegetarian baked beans (Bush's is good)
1/2 cup orange puree (see My Take on Sneaky Orange Puree)
1 tablespoon ketchup (or barbeque sauce)

Steps:

  • Put the dogs, beans, orange puree, and ketchup (or bbq sauce) in a saucepan and heat over medium until heated through, about 10 minutes, stirring occasionally.
  • Alternatively, place the ingredients in a microwave safe bowl, cover the top of the bowl with a wet paper towel, and microwave on high for 3-4 minutes, pausing to stir occasionally.
  • Note:.
  • Be careful, hot dogs can be a choking hazard for children under 4.

1 pound bulk spicy pork sausage
1 medium onion, chopped
2 15-oz. cans pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (16 ounces) butter beans, rinsed and drained
1 can (15-1/2 ounces) navy beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chilies, drained
1/2 cup hickory smoke-flavored barbecue sauce
1/2 cup ketchup
1/2 cup packed brown sugar
1 teaspoon ground mustard
1 teaspoon steak seasoning
1 teaspoon liquid smoke, optional

Steps:

  • In a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. , In a 5-qt. slow cooker, combine the beans, tomatoes and sausage mixture. In a small bowl, combine the barbecue sauce, ketchup, brown sugar, mustard, steak seasoning and Liquid Smoke if desired. Stir into bean mixture. , Cover and cook on low for 7-8 hours or until heated through.

SNEAKY BAKED ZITI



Sneaky Baked Ziti image

This recipe came from my new cookbook, I got called The Sneaky Chef. I absolutely love it. My kids will not eat spinach and blueberries. They don't even know it. Highly recommend it to anyone with kids. It looks like a lot of work, but if you spend an afternoon just doing the food purées, freeze them in ziploc sandwich bags then you're set.

1 lb ziti pasta (whole wheat preferred) or 1 lb rigatoni pasta (whole wheat preferred)
1 cup firm tofu, mashed well (or a 14 ounce block)
2 1/2 cups store-bought tomato sauce
1/3 cup grated parmesan cheese
3 cups shredded part-skim mozzarella cheese
1 medium sweet potatoes or 1 medium yam, peeled and rough chopped
1 large carrot, peeled and sliced into thick chunks
2 -3 tablespoons water
2 cups cauliflower, cut into florets
1 medium zucchini, peeled and rough chopped
1 teaspoon fresh lemon juice
1 -2 tablespoon water, if necessary

Steps:

  • In a medium pot, cover carrots and potatoes with cold water and boil for about 20 minutes until yams, and especially carrots, are very tender. If the carrots aren't thoroughly cooked, they'll leave telltale little nuggets of vegetables, which will reveal their presence (a gigantic no-no for the sneaky chef).
  • Drain the potatoes and carrots and put them in the food processor with two tablespoons of water. Keep on high until the orange purée is smooth; no pieces of carrots or potatoes should remain. Stop occasionally to push the contents from the top to the bottom.
  • If necessary, use the third tablespoon of water to make a smoother purée, but the less water the better. This makes about 2 cups of orange purée.
  • Double the recipe if you want to store another cup of purée. Store in refrigerator up to three days, or freeze 1/4 cup portions in sealed plastic bags or small plastic containers.
  • Steam cauliflower in a vegetable steamer over 2 inches of water, using a tightly-covered pot, for about 10 to 12 minutes until very tender. Alternatively, place cauliflower in a microwave-safe bowl, cover with water, and microwave on high for 8 to 10 minutes until very tender.
  • While waiting for the cauliflower to finish steaming, start to pulse the raw peeled zucchini with the lemon juice only (no water at this point). Drain the cooked cauliflower. Working in batches if necessary, add it to the pulsed zucchini in the bowl of the food processor with one tablespoon of water. Purée on high until smooth. Stop occasionally and push contents from the top to the bottom. If necessary, use the second tablespoon of water to make a smooth (but not wet) purée.
  • Makes about 2 cups of purée. Double recipe if you want to store even more, which can be done in the refrigerator for up to 3 days, or freeze 1/4 cup portions in sealed plastic bags or the small plastic containers.
  • Preheat oven to 375 degrees and spray a 13-by-9 glass baking dish with oil.
  • Cook pasta according to package directions or until slightly firm. Drain and place in the prepared baking dish. Before continuing with the baked ziti begin making the Orange and White Purée.
  • Mix tofu, tomato sauce, White and Orange Purees in a bowl. Toss pasta with the sauce mixture and 1 cup of the mozzarella cheese. Top the pasta with a combination of the parmesan and the remaining 2 cups of mozzarella cheese, sprinkling evenly over the top.
  • Cover ziti with foil. Bake 30 minutes. Uncover. Bake another 10 to 15 minutes or until the top is lightly browned.

Inspired by the Deceptively Delicious book, I made this recipe up and my family loved it! They usu. complain if I mix the Busch's baked beans with anything, other than hot dogs or ring bologna. It's a hearty main dish. Make sure your tomato soup is not condensed. I get mine from Imagine Foods.

1 small onion, chopped
1/2 red bell pepper, chopped
1 lb lean ground turkey (or 1/2 lb mixed with oatmeal and an egg to stretch it if you want)
1 medium sweet potato, cooked and mashed
1 (28 ounce) can busch's baked beans
1 cup homemade tomato soup (or more)
1 teaspoon Worcestershire sauce

Steps:

  • Saute onion and bell pepper in a little oil in a large skillet.
  • Add lean ground turkey and cook until done; drain fat if there is too much.
  • Add mashed sweet potato and mix in well.
  • Add baked beans, tomato soup and Worc. sauce.
  • Thoroughly mix and cook, on simmer, until warmed through, 10 minutes or so.

  • Add two tins of haricot beans beans and 275ml hot vegetable stock and stir well. Place in the pre-heated oven for 3-4 hours with the lid on. Stir occasionally. Season with salt and pepper to taste.
