THIS SEAFOOD MELT FROM A PHILLY EAGLES FAN = A BIG WIN
Scallops, shrimp and lump crab meat get mixed together under a comforting blanket of American cheese for a delicious seafood sandwich.

Steps:
- Heat grill pan to 375˚F to 400˚F or a pan to medium-high heat
- Add oil
- Once hot, add the garlic and scallops to pan, then add shrimp and cook for 2 to 3 minutes
- Add crab meat to pan to warm through, then add cheese slices, season with salt and pepper, and stir to combine
- Assemble sandwich on the toasted roll using shredded lettuce, chipotle mayo, and the seafood mixture

- In a small bowl, combine the crab, mayonnaise, celery and onion. Place muffins on an ungreased baking sheet. , Broil 4-6 in. from the heat until toasted. Spread each muffin half with crab mixture. Top with tomato and cheeses; sprinkle with paprika. Broil until bubbly.

I haven't tried it yet but I found it in a coupon book and it looks quick, easy, and delicious! It would probably taste good with bacon bits in it and a side of potato soup or clam chowder. :)

- In medium bowl, combine crab, artichoke hearts, bell pepper, all but 3 tbsp green onion, mayonnaise, sour cream, and lemon zest; mix well.
- Spread over bread slices; arrange cheese slices over crab mixture to cover.
- Place sandwiches on baking sheet. Place under broiler until cheese softens, about 2 minutes.
- Sprinkle with remaining 2 tbsp green onion.

Steps:
- Heat oven to 375°F.
- Combine ingredients reserving 1/4 cup of cheese.
- Separate crescent dough into 4 rectangles;press perforations together to seal.
- Divide mixture evenly into centre of 4 rectangles.
- Roll up and press to seal.
- Place seam side down on a greased cookie sheet.
- Sprinkle tops of rolls with remaining cheese.
- Bake for 15-18 minutes, or until golden.
MARY PAT'S TUNA MELT
This sandwich gets a crunchy finish with chips embedded into the bread. I use very special potato chips that were sent to me from Pennsylvania by my dear friend, MP. But if you can't find Utz®, your favorite chip will work just fine. Serve with more chips and pickles.

- Mix tuna, 1/4 cup mayonnaise, and Dijon mustard together in a small bowl. Stir in pickle and red onion. Spread tuna mixture on 2 slices of bread. Top each with 2 slices of Cheddar cheese.
- Spread 1 tablespoon cream cheese on each of the remaining 2 slices of bread. Place on top of the Cheddar cheese.
- Place crushed chips in a shallow bowl. Spread top side of each tuna melt with 1 1/2 teaspoon mayonnaise and press into the chips. Repeat on other side.
- Heat a dry grill pan over medium-high heat. Toast tuna melts until golden brown, about 2 minutes per side.

- Bake in oven for 10 minutes, or until cheese begins to bubble.

LUNCHTIME FISH MELTS
I know it sounds strange, but I've found this is a quick and easy way to dress up your favorite fish for lunch. I use whatever fish we catch around here (snapper, flounder) but any grocery store fish filets should work just fine. Also, I recommend a cast-iron skillet.

Steps:
- Drizzle filets with lemon juice on both sides, then sprinkle with garlic powder.
- Allow skillet to heat, then spray lightly with cooking spray (or just a small amount of olive oil).
- Slice tomato and enough mozzarella to cover two slices of bread (2-4 oz. depending on thickness of slices).
- Place fish in skillet and sprinkle with basil. Cook 2-3 minutes, adding lemon juice as needed. Turn fish over and sprinkle with basil. Cook another 4-5 minutes or until fish is cooked through and flaky.
- Lighty butter one side of each slice of bread. Buttered sides go on the outside of the sandwich.
- Layer mozzarella slices, cooked fish, and sliced tomato between slices of sourdough.
- Remove any extra flakes of fish, oil, etc from skillet.
- Place sandwiches in skillet (buttered sides out) and cook over low-medium heat until one slice of bread is"toasted" to desired darkness.
- Using two spatulas, turn sandwiches over in skillet, taking care not to loose the tomato slices, and cook as before. Remove from skillet, slice in half, and serve.
