Number Of Ingredients 17

1 Whole Red Snapper (cleaned and scaled. About 2 to 2/12 pounds in weight.)
2 tablespoons of lime juice.
2 Tablespoon of olive oil
1/2 cup of finely chopped white onion
4 garlic cloves (finely chopped.)
1.5 Lbs tomatoes, chopped (or 28 ounces crushed tomatoes)
4 tbsp flat parsley (finely chopped (about 1/4cup).)
2 tbsp fresh thyme (chopped)
2 Bay leaves
1 teaspoon Mexican oregano
1/2 cup of Pimiento Stuffed Olive (whole or sliced.)
1 Tablespoon small capers (rinsed.)
1/4 cup raisins (Optional see note bellow*)
4 Pickled Jalapenos peppers, thinly sliced
1/4 cup dry white wine **
Salt and pepper to taste.
Warm Mexican White Rice to serve. (Optional)

Steps:

  • Season the fish with salt, pepper and lime juice inside and out. Set aside.
  • In a large ovenproof frying pan, heat the oil in on medium heat. Add the onion and sauté until transparent. Your frying pan has to be big enough to fit the fish. If you do not have a large enough oven-proof frying pan, then have a large baking dish ready to bake the fish there. Preheat your oven to 375 degrees.
  • Stir in the garlic and cook for about 2 minutes.
  • Add the crushed tomatoes or chopped tomatoes to the frying pan and cook for about 8 minutes. Add the herbs. Keep cooking for 4 more minutes or until sauce is cooked.
  • If using the dry white wine, add it while the tomatoes sauce is cooking.
  • Before adding the red snapper, add the pickled jalapeños, raisins, olives and capers and cook until the flavors combine, about 4 minutes. Season the sauce with salt and pepper.
  • To bake the fish, add some sauce to the bottom of the baking dish, then place the fish and cover it with the rest of the sauce; bake for about 30 minutes or more. The fish meat should flake when you insert a fork. (If you want to cook it using the stove-top method, place the fish into the frying pan and cover with some of the sauce. Place a lid and simmer until fish is cooked.). The cooking time will depend on the size of the fish.

6 -8 ounces red snapper fillets
1/2 cup salsa
1/4 cup monterey jack cheese, grated
1/3 cup white wine
2 tablespoons butter, melted
1 teaspoon garlic, chopped
1 green onion, diced

Steps:

  • Preheat oven to 350 degrees.
  • Place fillet in a shallow pie pan or casserole dish with wine, melted butter and garlic.
  • Bake until fish is flakey (about 10 t0 15 minutes).
  • Remove from oven and top with salsa and cheese.
  • Broil in oven until cheese is golden brown.
  • Garnish with green onions.

Red Snapper with Garlic-Lemon-Dill Butter image

Robust ocean fish seeks tangy, buttery garnish for epicurean adventure. This garnish works well on most types of fish, but it was hatched using red snapper because I had a lemon and a single sprig of dill that needed to be used and the red snapper was the best looking fresh fish in the case. I've done Alaskan sockeye salmon the same way to good effect. Pairs well with pasta or rice, shown with my go-to Fettuccine with Sweet Pepper-Cayenne Sauce from this site, and fresh vegetables.

4 (4 ounce) red snapper fillets
3 tablespoons butter
2 cloves garlic cloves, minced
1 lemon, juiced
1 sprig fresh dill, or more to taste
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Place red snapper filets on the prepared baking sheet, skin side down.
  • Melt butter in a small saucepan over medium-low heat and saute garlic in the melted butter until softened, about 3 minutes. Squeeze lemon juice on top, straining out the seeds.
  • Brush the snapper liberally with garlic butter mixture, coating both pieces and season with salt and pepper of desired.
  • Bake in the preheated oven until fish is opaque and firm to the touch, about 20 minutes. Serve immediately.

1 habanero pepper
1 jalapeno pepper
1/2 pasilla pepper
One 14 1/2-ounce can whole peeled tomatoes
1/8 cup chili paste
4 teaspoons soy sauce
1 1/2 teaspoons brown sugar
1/4 teaspoon cayenne pepper
1/4 teaspoon ancho chili powder
1/4 teaspoon California chili powder
1/4 teaspoon paprika
2 teaspoons chopped fresh cilantro
1/2 lime, squeezed

Steps:

  • Roast the habanero and jalapeno peppers over an open flame until they are charred on the outside. Remove from the heat and cool slightly. Remove the stems and the seeds. Remove the stems and seeds from the pasilla pepper as well. Set aside.
  • Place the tomatoes with their sauce into a large pot. Crush the tomatoes up more with your hands to break them up. Add the roasted habanero and jalapeno peppers, the pasilla chili paste, soy sauce, brown sugar, cayenne, ancho and California chili powders and paprika into the pot and bring to a low boil. Reduce the heat and simmer for 30 minutes.
  • Remove from the heat and cool it down. You can place it into the refrigerator. Once the sauce it cooled completely, add the cilantro and lime juice.
  • Puree in a food processor or blender until it is smooth. You can adjust the levels of peppers and chili powders to make the sauce hotter or milder to your liking. We love it hot!
