VEGAN MERINGUES
These vegan meringues use the liquid from a tin of chickpeas as the substitute for egg whites - genius! Use these vegan meringues wherever you would use egg white meringue such as summer fruit pavlova and Eton mess.

- Preheat oven to 210 degrees F (100 degrees C). Line a baking sheet with baking parchment.
- Drain chickpeas, reserving 1/2 cup liquid from the can. Save the chickpeas for another use. Pour chickpea liquid into a bowl and add the cream of tartar. Beat mixture using an electric mixer until soft peaks form. Gradually add sugar, 1 tablespoon at a time, as you continually beat until glossy peaks form, about 20 minutes; beat in vanilla extract until well incorporated.
- Spoon mixture into a piping bag and pipe into small circles, about 1 inch in diameter, onto the prepared baking sheet.
- Bake in the preheated oven until meringues are firm and come away easily from the parchment paper, about 90 minutes. Remove from the oven and allow to cool completely, at least 15 minutes.

SNAKE MERINGUES
I found this recipe in the New Idea and thought I would post it here for later. These look so good and would be great for a kids party! Snakes can be made one week ahead and stored in an airtight container.

Steps:
- Beat whites in a small bowl with an electric mixer until soft peaks form. Gradually add sugar, 1 tblsp at a time, beating until dissolved between additions. This process will take about 10 minutes. Beat in cornflour and tint mixture with food colouring.
- Spoon the mixture into a piping bag fitted with a 1cm-fluted nozzle. Pipe 16cm-long snake shapes, 4cm-apart, on oven trays lined with baking paper.
- To decorate snakes, cut forked tongues from licorice using a small sharp knife and lightly press into front of meringue heads. Lightly press M&M's on top of heads for eyes.
- Cook in a very slow oven (120C) for about 40 minutes, swapping trays halfway through cooking, or until firm to touch.
- Cool trays in oven with door slightly ajar.

- Preheat the oven to 140C/275F/Gas 1 and line two flat baking sheets with baking parchment.
- Separate the eggs into a clean, large bowl, preferably metal or glass. Gently crack the shell against the side of a small bowl. Slowly pull the shell apart as cleanly as possible along the crack, tipping the yolk into one half of the shell.
- Using an electric hand whisk, whisk the whites until stiff peaks form when the whisk is removed, but the mixture should not look too dry.
- Add one tablespoon of the sugar to the egg whites, and continue to whisk until the mixture comes back to stiff peaks. Add the sugar one tablespoon at a time until it has all been used, and the meringue is thick and glossy.
- Using two dessertspoons, scoop 16 rugby-ball shaped meringues onto the baking paper, leaving plenty of space between them.
- Bake for an hour until the meringues are pale, golden-brown, crisp and lift away easily from the baking paper. Open the oven door slightly and leave the meringues to cool in the oven.
- Meanwhile, make the chocolate filling (ganache). Use a large, sharp knife to chop the chocolate into small pieces.
- Pour the cream into a small saucepan, then bring it to just below boiling. Take the pan from the heat, add the chopped chocolate, swirl the pan to help combine the chocolate and then stir until smooth.
- When the ganache has cooled, spread it over the flat side of half of the meringues, then sandwich meringues together. To make these a little more luxurious, whip some double cream, then spoon on top of the ganache before sandwiching the meringues together.

- Meringue Basics.
