Lemon Snack Cake image

Tangy lemon cake that you can make and bake all in one pan. Could it be any easier?!

Cake
1 1/4 cups all-purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 large Land O Lakes® Egg
2 teaspoons freshly grated lemon zest
1/4 cup * Land O Lakes® Butter with Canola Oil melted
3/4 cup milk
Glaze
3/4 cup powdered sugar
1 to 2 tablespoons lemon juice
Lemon zest, if desired

Steps:

  • Heat oven to 350°F. Lightly grease 8-inch square baking pan.
  • Combine flour, sugar, baking powder and salt in prepared pan. Make 2 indentations in flour mixture. Set aside.
  • Combine egg and lemon zest in bowl with fork; pour into 1 indentation. Pour melted Butter with Canola Oil in other indentation. Pour milk over all; mix well. (Some lumps will remain.)
  • Bake 30-35 minutes or until toothpick inserted in center comes out clean. Cool completely.
  • Combine powdered sugar and enough lemon juice for desired glazing consistency in small bowl. Spread glaze over cooled cake. Sprinkle top of cake with additional lemon zest, if desired.

1/4 cup unsweetened baking cocoa
1 teaspoon baking soda

1/3 cup vegetable oil

1 cup cold strong brewed coffee or cold water
Ice cream or whipped cream, if desired

Steps:

  • Heat oven to 350°F. Grease bottom and side of 9-inch round pan or 8-inch square pan with shortening; lightly flour.
  • In medium bowl, mix flour, sugar, cocoa, baking soda and salt. In small bowl, stir oil, vinegar and vanilla until well mixed. Vigorously stir oil mixture and coffee into flour mixture about 1 minute or until well blended. Immediately pour into pan.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Serve warm or cool with ice cream.

1 egg
1 teaspoon vinegar
1 teaspoon vanilla
1/3-1/2 cup mini chocolate chip
1/3 cup walnuts or 1/3 cup pecans, chopped

Steps:

  • Set oven to 350 degrees F.
  • Set oven to second-lowest rack.
  • Grease an 8 x 8-inch square baking pan.
  • In a bowl mix together the first 6 dry ingredients.
  • In another bowl whisk the water or milk with oil, egg, vinegar and vanilla; add to the dry ingredients and mix until combined.
  • Transfer/spread into prepared baking pan.

7 small red sugar plums, or another variety
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon kosher salt
2/3 cup vegetable oil
1 cup light brown sugar
1/4 cup granulated sugar
1 large egg
1 yolk
2 teaspoons vanilla extract
2/3 cup sour cream
Turbinado Sugar, for Sprinkling

Steps:

  • Preheat the oven to 350-degrees. Generously grease a 9-inch spring form pan with cooking spray or softened butter and line with parchment You can also use a 9-inch cake pan, but you might have a little more trouble removing the cake from the pan.
  • Slice the plums in half and remove the pits.
  • Combine the flour, baking powder and salt in a small bowl and whisk to combine.
  • In a medium-sized bowl, combine the oil and sugar and whisk vigorously to combine. And the egg, yolk and vanilla, and whisk again. Add the sour cream and whisk a final time.
  • Add the dry ingredients to the wet and with a rubber spatula, gently fold to combine. Do not over mix. Stop folding when there is still a streak of flour or two.
  • Transfer the batter to the prepared pan and decoratively place the plum halves on top, skin side down.
  • Generously sprinkle the cake with Turbinado sugar and place in the preheated oven for about 40 minutes, rotating the cake at 20 minutes and testing it for doneness at 35. The cake can be pulled from the oven when a tester inserted in the center comes out with only a moist crumb or two. Once cooled enough to handle, remove the sides of the pan. Using a large spatula, slide the cake onto a platter or cake stand. Serve slices warm or at room temperature, with vanilla ice cream or whipped cream.

2 1/4 cups unbleached all-purpose flour
1 1/2 cups granulated sugar
1 tablespoon plus 1/2 teaspoon baking powder
3/4 teaspoon kosher salt
3/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1 large egg plus 1 large egg yolk, room temperature
3/4 cup sour cream
2 1/4 teaspoons pure vanilla extract
4 1/2 tablespoons whole milk, room temperature
3/4 cup confectioners' sugar
1 vanilla bean, split and seeds scraped
1 1/2 teaspoons to 1 tablespoon grated lemon zest, plus 1 to 3 tablespoons fresh juice

Steps:

  • Preheat oven to 350°F. Brush a 9-by-13-inch baking pan with oil. Line with parchment, leaving a 2-inch overhang on two sides; brush parchment. In a large bowl, whisk together flour, granulated sugar, baking powder, salt, cinnamon, and cardamom.
  • In a medium bowl, whisk together egg and yolk, sour cream, oil, vanilla, and 3 tablespoons milk until combined. Add egg mixture to flour mixture; stir until smooth (batter will be thick). Transfer to prepared pan, smoothing top with an offset spatula.
  • Bake until lightly golden and top of cake springs back when lightly pressed, 35 to 40 minutes. Transfer pan to a wire rack; let cool 30 minutes. Using overhangs, transfer cake from pan to rack; let cool completely.
  • In a small bowl, whisk together confectioners' sugar, remaining 1 1/2 tablespoons milk, vanilla seeds, 1 1/2 teaspoons lemon zest (or up to 1 tablespoon, for a zesty bite), and 1 tablespoon lemon juice until smooth and pourable. (If glaze is too thick, add up to remaining 2 tablespoons lemon juice.)
  • Pour over top of cake, spreading to edges with offset spatula. Allow to set before slicing, about 30 minutes. Cake can be refrigerated, wrapped in plastic, up to 3 days; return to room temperature before serving.

1/2 cup (113g) sour cream
1/2 cup (85g) + 3/4 cup (127g) chocolate chips*

Steps:

  • Preheat oven to 350°F. Grease an 8-inch square baking pan.
  • Whisk together the flour, baking powder, salt, and cinnamon. Set aside.
  • Using an electric mixer on medium speed, beat the butter and brown sugar until light and fluffy. Add the eggs, one at a time, and mix well. Mix in the vanilla.
  • Reduce mixer speed to low. Gradually add the flour mixture, mixing just until combined. Stir in the sour cream. Stir in 1/2 cup chocolate chips and the pecans.
  • Transfer the batter to the prepared pan. Bake 28-32 minutes, or until a pick inserted into the center comes out clean.

3/4 cup oil
1 cup granulated sugar

1 cup full-fat sour cream
Turbinado sugar (for sprinkling)
Vanilla ice cream and hot fudge sauce for serving (optional)

Steps:

  • Preheat the oven to 350 degrees. Lightly spray an 8-by-8-inch pan with cooking spray. Cover the bottom of the pan with parchment paper. Spray the parchment paper.
  • Place the mini chocolate chips in small bowl and lightly spray them with cooking spray. Toss them with 1 tablespoon of the all-purpose flour until covered, and place in the freezer.
  • Whisk the 2 cups of flour, baking powder, and salt in a medium-sized bowl, and set aside.
  • Place the oil and sugars in a large bowl and whisk until thoroughly combined. Add the eggs and vanilla and whisk again, add the sour cream and whisk a final time. With a rubber spatula, gently fold the dry mixture into the wet, until a few streaks of flour remain..
  • Fold about 3/4 of the frozen chocolate chips into the batter. Transfer the batter to the prepared pan and sprinkle the remaining chips and the Turbinado sugar over the top. Place the pan in the oven and bake for 50 to 55 minutes, rotating the pan after 25, and checking on the cake after 45. The cake is ready when a toothpick inserted in the center comes out with a moist crumb or two.
  • Let the cake rest on a wire rack until cool enough to handle - it will sink a bit in the middle as it cools - then invert the cake right side-up on to a serving platter. Let cool completely and serve slices with vanilla ice cream and chocolate sauce. Or eat the cake warm (I won't tell).

  • Pour cake batter into prepared pan.
  • Bake until the center is firm and the cake is golden on top, 33 to 36 minutes.
  • Let cake cool in the pan before slicing and serving.
