AWARD-WINNING CROCK POT APPLE BUTTER
I like this recipe for the taste and because it all fits into my 4 quart crock pot (packed). After the batch is done, I can them into jars for home use and gifts. To make it easier on myself, I use my spiral apple peeler/corer.

Steps:
- Place apples in slow cooker in thirds, layering sugar between each layer.
- Add rest of ingredients on top and pack them down as well as you can.
- Cover and cook on high for 1 hour.
- Reduce heat to low. Open and give it a stir. Keep covered and cook 8 hours or until thick and dark brown, stirring occasionally. (You can do this overnight and can in the morning).
- Uncover and cook for the last hour on low.
- If a smoother apple butter is desired, you may puree in blender or food mill.
- Place in sterile jars with lids and process for 10 minutes in hot water bath or you can freeze.

APPLE BUTTER BARBECUE SAUCE
I saw jars of apple butter BBQ sauce at an apple orchard a few weeks ago. I thought this was a splendid idea-especially for ribs. I've scoured the Internet, and this recipe looks like the best bet. It's originally from Smuckers, (featuring their apple butter). That said, I made a large batch of apple butter (Recipe #70016), so I'm using homemade. Again, use what you can get.

Steps:
- Add everything together. Well, that's where their recipe ends. I think that's silly. So, let's continue.
- Sauté the onion in a frying pan with a little bit of olive oil, medium heat. Cook till translucent.
- Add the garlic, cook for about a minute.
- Put everything into a sauce pot on medium heat, stir everything together.
- Before a boil begins, drop the heat to low and simmer for 15-20 min., stirring frequently.
- Take it off heat, let it cool for 30 minute (unless you're canning, of course).
- Store it however you wish. It should keep in the fridge for 30 days, in a freezer for longer, or just can it.

Steps:
- Put the apples with the skin on and honey into a slow cooker (I use this one). Cover with the lid and turn on high for 4-6 hours, but no longer than 8 hours.
- Reduce heat to low for 8-12 hours.
- Puree fruit using an immersion blender (I have this one), or in batches with a blender (I use this one). Be careful since the fruit will be very hot.
- With the pureed fruit in the crockpot, prop at least one side of the lid open with a knife or chopstick. This allows the water inside to evaporate, thickening the apple butter.
- Cook on low for 2-6 hours, until apple butter is desired thickness.
- Store fruit in glass jars in the freezer, or refrigerator, or can using these basic steps.
