You can't just go to any restaurant and get smothered chicken like you would if you went down to the urban neighborhoods in Houston. This meal of browned chicken in a savory chicken gravy sauce is best when served over a bed of white rice.

- Melt the butter in a large skillet over medium-high heat. Season chicken pieces with 1 teaspoon salt and 1/2 teaspoon pepper. Dredge in 3/4 cup flour, place in the skillet, and brown on all sides. Set chicken aside, and drain skillet, reserving about 1 tablespoon butter.
- Reduce skillet heat to medium-low, and stir in onions, celery, garlic, and carrots. Cook 5 minutes, until tender. Stir in the flour, and cook 5 minutes more. Pour in the chicken broth, season with cayenne pepper, and remaining salt and pepper. Bring to a boil, and reduce heat to low.
- Return chicken to the skillet, cover, and continue cooking 30 minutes, until chicken juices run clear and gravy has thickened.

- Prepare noodles according to package directions. Keep warm.
- Meanwhile, stir together paprika, dried thyme, salt, and pepper in a small bowl.
- Melt butter in a large skillet over medium-high heat; add onion and mushrooms, and sauté 8 to 10 minutes or until onion is tender. Stir in garlic and paprika mixture; sauté 2 minutes. Add soup, milk, and, if desired, wine, and bring to a boil, stirring frequently. Add chicken pieces; spoon sauce over top of chicken. Reduce heat to low, and cook, covered, 10 to 15 minutes or until chicken is thoroughly heated. Stir in 1 Tbsp. parsley. Serve over hot cooked noodles. Sprinkle with remaining parsley.

- Start off by making sure that all of the chicken is nice and clean.
- Pour 1 1/2 cup flour into a large bowl, and add in seasonings : garlic powder, onion powder, salt, pepper, celery seed, poultry seasoning, and smoked paprika. Mix until well incorporated.
- Coat the chicken with the seasoned flour, and make sure you coat all surfaces.
- Reserve the seasoned flour
- Pour 1/4 cup of vegetable oil into a large pan, then place the plan over medium heat.
- Start adding in the chicken, but be sure to not over crowd the pan ( use a pan big enough to hold all of the chicken).
- Cook the chicken until it is golden brown(DO NOT worry about cooking the chicken until done, because we will cook it some more).
- Once the chicken is nice and browned, remove it from the pan. Leave the oil in the pan.
- Toss in the onions, and cook them for about 2 minutes, then add in the garlic. Once the garlic is in the pan let it cook for an additional minute, then remove the onions and garlic from the pan.
- Add three tbsp of the seasoned flour (the same flour that you coat the chicken with) to the pan. Stir in with the oil.
- Next pour in 2 cups of chicken broth. Whisk in while pouring in the broth. Make sure there aren't any lumps.
- Let the gravy cook for about 2 minutes ( still on medium heat), then pour in 1 cup of milk into the pan.
- Let the creamy gravy cook for about 3 minutes, then start adding the chicken back into the pan, as well as the onions and garlic.
- Make sure all of the chicken is coated with the creamy gravy.
- Place a lid on the pan, then let the chicken cook for 30-35 minutes. Be sure to occasionally turn the chicken.
- Once done serve the chicken with rice or mashed potatoes.

SMOTHERED SOUTHERN FRIED CHICKEN
This is a wonderful recipe from the "Old South" that I got from an old woman in Alabama many years ago.

- Wash the chicken pieces and pat it dry with paper towel.
- Heat the oil to 365 degrees for frying the chicken. Salt and pepper the chicken.
- Mix the flour, salt, pepper and garlic powder together.
- When the oil is hot, roll the chicken pieces in the flour and place into the skillet. Cook 3 to 4 pieces at a time on both sides until golden brown and almost done. Drain the chicken on paper towel and place into a baking dish and set aside until the rest of the chicken is done.
- To prepare the gravy, on medium heat, preferably in the same skillet, & if necessary, spoon out some of the oil, leaving 8 tablespoons of the oil in the skillet. Stir in the flour and cook, stirring constantly, for about 2 to 3 minutes.
- Add the water and stir until boiling. Salt and pepper to taste. The gravy will be kind of thin, but it will thicken.
- Return the chicken to the skillet of gravy. Cover with a splatter screen and simmer for 30 to 45 minutes until gravy is thickened and the chicken is smothered and fork tender.
SOUTHERN FRIED SMOTHERED CABBAGE
I created this recipe because raising a family isn't cheap and cabbage is. To make this a one-dish meal, substitute the bacon with a pound of coined Polish sausage or kielbasa.

- Heat a large, lidded cast iron pot over medium-high heat. Add bacon and fry until browned but not crispy, about 5 minutes. Quickly add cabbage pieces and water, in that order. Cover the pot with the lid and allow cabbage to steam, about 1 minute. Season with cayenne pepper and salt and boil for 15 minutes.
- Remove lid and reduce heat to a high simmer. Cook until all liquid has evaporated and cabbage is browning in the bottom of the pot and wilted but not soggy, about 10 minutes more. Scrape the bottom of the pot regularly and turn cabbage to prevent sticking.

SUNNY'S EASY SMOTHERED CHICKEN

- Heat the olive oil in a large skillet over medium-high heat. Add the mushrooms and thyme and more olive oil if needed and saute until lightly browned and tender, 5 to 10 minutes. Add the onion and season with salt and pepper. Let cook until the onions are softened, 5 to 7 minutes. Mix in the flour and mustard and cook for about 2 minutes. Whisk in the beef stock and bring to a simmer. Cook until thickened, 3 to 4 minutes. Add the grilled chicken breasts, then cover the skillet and turn down the heat to medium-low. - Place one or two of the chicken breasts in a large zipper bag and with a rolling pin or a meat tenderizer hammer beat the chicken breast to flatten slightly. You don’t want them flat, you just want to beat them down enough to where it isn’t so thick. Remove from the bag and season the chicken breast liberally with salt and pepper on both sides. Set the seasoned chicken on a plate and repeat with the remaining chicken breasts. Place the 2 cups of flour on a plate and add a couple dashes of salt and pepper to the flour.
- Place a large saute pan on the stove and heat the oil on medium to high heat. While the oil is getting hot, dredge the chicken breast through the flour. Make sure that the chicken is evenly coated. Place the chicken breasts in the hot oil and allow to cook for about 7 minutes on each side or until golden brown.
- Once the chicken has finished cooking, remove it from the oil with a kitchen spider or spatula and place on a plate lined with paper towels. Reduce the heat to low to medium heat. Leave all of that good chicken flavor and oil in the pan unless you have more than what you put in the first time. In this case, measure out the dripping until you have about 1 c. of oil and fat. Add the diced onions and allow to cook for about 3 minutes. Add the garlic and stir for a minute more.
- Slowly whisk the remaining cup of flour into the oil droppings to make sure no clumps are formed. Once the flour has been added, add a cup of water at a time while whisking. Keep adding the water and whisking until you get a thick gravy. Once the gravy has been formed, which should take about 5-7 minutes (not too long) add the cayenne pepper, garlic powder and onion powder, and season with salt and pepper to taste. Once the gravy is to your liking return the chicken back to the pan and allow to simmer for 15 minutes before serving over the cooked rice.
