4 tablespoons butter
1 onion, thinly sliced and quartered
4 cloves garlic, minced
4 tablespoons all-purpose flour
2 cups beef broth
1 ½ cups sliced baby bella mushrooms, or more to taste
1 tablespoon chopped fresh parsley
4 center-cut pork chops
½ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste

Steps:

  • Melt butter in a 3-quart saucepan over medium-low heat. Cook onion and garlic in the butter, stirring occasionally, until is browned, 7 to 10 minutes. Remove onion and garlic and set aside.
  • Stir flour slowly into butter. Cook over low heat, stirring constantly, until flour is deep brown, 7 to 10 minutes. Remove from heat. Gradually stir in broth. Add onion, garlic, mushrooms, and parsley. Bring to a boil, stirring constantly. Remove from heat.
  • Coat a large skillet with cooking spray and heat over medium-high heat. Season pork chops with salt and pepper and brown in the hot pan, 5 to 7 minutes per side. Add gravy mixture from the saucepan. Cover and cook over low heat until tender and no longer pink in the centers, 30 to 40 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

4 8-oz Boneless pork chops
1 tsp Sea salt
1/4 tsp Black pepper
2 tbsp Olive oil
1 large Onion ((sliced into thin half moons))
2 cloves Garlic ((minced))
1 tbsp Fresh thyme ((or 1 tsp dried thyme))
1 cup Chicken broth, reduced sodium
1.5 oz Cream cheese ((cut into small chunks))

Steps:

  • Season the pork chops on both sides with sea salt, garlic powder, onion powder, and pepper.
  • Heat the olive oil in a dutch oven over medium-high heat. Add the pork chops and sear on both sides, about 3 minutes per side without moving, until browned. Transfer the pork chops to a plate and set aside.
  • Reduce heat to medium-low or medium. Using the same dutch oven, saute the sliced onions for 15-20 minutes, until caramelized.
  • Once the onions are caramelized, preheat the oven to 375 degrees F (190 degrees C).
  • Add the minced garlic and thyme leaves to the dutch oven. Saute for about a minute, until fragrant.
  • Add the chicken broth to the dutch oven. Scrape any browned bits from the bottom of the pan. Bring to a gentle boil, then simmer for about 2-3 minutes, until it gets thicker and the volume is reduced by at least 1/4.
  • Remove from heat. Add the cream cheese. Stir in the cream cheese until it melts into the sauce.
  • Return the pork chops to the dutch oven and spoon the sauce and onions over them. Cover with the lid and bake for 20-25 minutes, until cooked through. (Time will vary depending on the thickness of your pork chops - use a thermometer to check and cook to 145 degrees F (63 degrees C).)

One 10-ounce can beef broth, plus more if needed
4 onion slices, separated into rings

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium skillet, melt the butter over medium-low heat. Add the rice and saute until it is light brown, about 5 minutes.
  • Spread the rice in a 9- by 13- by 2-inch casserole. Sprinkle the pork chops with salt and arrange them on top of the rice. Pour the broth and 2/3 cup water over the chops. 1 pound (500g) bone-in pork chops,* (about 3/4-1 inch thick.)
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1/2 teaspoon cayenne
1 teaspoon seasoning salt
1/2 teaspoon fresh cracked black pepper
2 teaspoons olive oil
1/2 cup all-purpose flour
2 tablespoons olive oil
1 tablespoon unsalted butter
1 tablespoon unsalted butter
1 large onion, (thinly sliced)
pinch of salt
4 cloves garlic, (minced)
1 teaspoon fresh chopped thyme
1/2 cup chicken broth, (divided)
3/4 cup buttermilk or heavy cream
Chopped fresh flat-leaf parsley, (for garnish)

Steps:

  • Pat the pork chops dry with paper towels to remove any moisture. Season pork chops with garlic powder, onion powder, cayenne, seasoning salt, pepper and olive oil.
  • Dredge each chop in the flour; shake off the excess and KEEP THE REMAINING FLOUR.
  • Heat 2 tablespoons olive oil and 2 tablespoons of butter in a skillet or pan over medium heat. When hot, fry the pork chops in a single layer on each side until golden browned, about 3-4 minutes per side.
  • Remove pork chops from the pan and keep warm.
  • In the same pan, heat 1 tablespoon of butter over medium heat.
  • Add in sliced onions and add a pinch of salt. Cook while stirring occasionally, until soft and caramelized, about 10 minutes. (Add in 1 tablespoon of the chicken broth if the pan becomes too dry.)
  • Add the garlic and thyme; cook until fragrant, about 30 seconds.
  • Add 2 tablespoons of the remaining flour to the pan. Mix the flour into the onions and cook to dissolve, about 2 minutes.
  • Pour in the chicken broth, scraping up the browned bits from the bottom of the pan. Let the liquid reduce and thicken slightly, about 2 minutes.
  • Whisk in the buttermilk (or cream) and simmer for 1-2 minutes until thick and creamy.
  • Return the pork chops to the pan. Coat them in the sauce and let simmer until the pork is completely cooked through, about 5 minutes (or until the pork is cooked to your desired doneness). (The sauce will continue to thicken due the coating on the pork. If too thick, add a little cream or broth to thin out until reaching your desired consistency.)
  • Taste test and season with salt and pepper, if needed. Garnish with the chopped parsley before serving. Serve warm.

1 tablespoon butter
1 tablespoon vegetable oil
¾ cup water
½ cup diced celery
2 tablespoons dry onion soup mix ((half of a 1-oz packet))
¼ teaspoon garlic powder
4 ounce can mushrooms, drained
¼ cup all-purpose flour
1 tablespoon dried parsley
2/3 cup whole milk or half-and-half
Cooked rice, for serving
Optional garnish: chopped fresh parsley

Steps:

  • Pat pork chops dry with a paper towel. Season liberally with salt and pepper on all sides.
  • Heat butter and oil in a large skillet over medium heat. Brown pork chops on both sides (about 2-3 minutes per side). Remove pork chops from the skillet; drain fat off the pan, but leave browned bits in the bottom (you don't need to wipe it clean).
  • Add water, celery, onion soup mix, and garlic powder; stir to combine, scraping up the browned bits from the bottom of the pan to add flavor to the sauce. 2 cups long grain or parboiled white rice
two 10.5 ounce cans condensed mushroom soup
three 10.5 ounce cans water (use the empty cans from the soup)
2 tablespoons dry onion soup mix
10 saltine crackers
1 cup shredded cheddar cheese
parsley to garnish

Steps:

  • Preheat your oven to 350 °F.
  • Whisk together the rice, soup, water and soup mix until the lumps in the soup are smoothed out and mixed in. To get three cans of the water, simply fill up the empty mushroom soup cans and use to measure. It also helps clean out the extra soup!
  • Pour into a large deep large lidded casserole dish or Dutch oven like I used. This recipe is too big for a 9x13 usually, with those thick chops.
  • Place your frozen pork chops on top of the rice and gently immerse the chops into the soup and cover it completely so that the pork chops don't dry out.
  • Cover with foil or a lid and cook for 1 1/2 hours OR until the rice is tender and the pork has reached a temperature of 145°F .
  • Remove from the oven and sprinkle the crackers, then the cheese on top. Return to the oven and broil for 2-3 minutes until the crackers are browned and the cheese has melted.
  • Remove and serve.

8 thinly cut pork chops (about 3 pounds cut about 1/2-inch thick)
1 teaspoon paprika
1 teaspoon salt

1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 cup olive oil

Steps:

  • Mix ingredients for seasoning mix together in a small bowl and sprinkle generously on both sides of pork chops.
  • (Save the extra seasoning mix to add to the sauce later if you think it needs more seasoning--I tossed it out, and then wished I had a little bit more to make it a little spicier).
  • Heat the oil in a Dutch oven or large pot over medium-high heat.
  • Add the pork chops, a few at a time and cook them until they are lightly browned on both sides (about 2 minutes per side).
  • Remove the pork chops to a platter and set aside.
  • Reduce the heat to medium.
  • Add the flour and stir constantly until the roux is the color of peanut butter, about 4 minutes.
  • Add the onions, salt, and pepper.
  • Cook, stirring, until the onions are slightly soft, about 5 minutes.
  • Add the garlic, bay leaves, chicken broth and water.
  • Bring to a boil.
  • Return the pork chops to the pot.
  • Reduce the heat to medium-low, cover and simmer for 45 minutes.
  • Add the smoked sausage and the potatoes.

This was a spare of the moment idea for cooking lunch today. Low maintenance but totally delicious and satisfying!

2-3 lb boneless pork chops
1 c long grain and wild rice, uncooked
1 c grated carrots, divided in half
1 c celery, finely chopped, divided in half
1 small onion, chopped and divided in half
4 Tbsp butter
1/4 c canola oil
mrs. dash original blend
3-4 c chicken broth, low salt
salt and pepper to taste
1/4-1/2 c flour

Steps:

  • 1. PORK CHOPS: In an oven proof skillet add about 1/4c canola oil and heat. Season chops with Mrs. Dash then lightly brown on both sides. Add 1/2 c of chopped onions, 1/2 c chopped celery and 1/2 c shredded carrots on top of chops. Add 1-2 c of chicken broth, depending on how many chops you have. You want the chops almost covered with broth. Cover and bake on 400° for about 45 min. Remove from oven and move chops to one side of pan, add flour into broth and stir well to make a gravy, mix chops back in with gravy.
  • 2. RICE: Add 4 tbs of butter to sauce pan and melt. Add 1/2 c of shredded carrots, 1/2 c of chopped celery and 1/2 c chopped onions. Simmer for about 10 min. till they start to become tender.
  • 3. Add 1 c of long grain and wild rice and 2 c. of chicken broth. Bring to a boil, then return to simmer and cook with lid on for 45-55 min. till tender.
  • 4. Serve a helping of rice with some pork chops and gravy on top.
