SMOTHERED OKRA WITH CHICKEN AND SAUSAGE
Cajun-style smothered okra with tender chicken and smoked sausage.

Steps:
- Season the chicken wings with 1/2 tsp of cajun seasoning
- Pour the vegetable oil into a large pot, then turn the heat to medium high.
- Once the oil is nice and hot, add it the chicken wings.
- Brown the wings, then remove them from the pot.
- Next, toss in the sausage, and cook until browned. Remove from the pot.
- Toss in the onions, bell peppers, and celery.
- Cook for about 5 minutes, then add in the okra.
- Stir, and cook for about 5 more minutes.
- Pour in 1/4 cup of chicken broth, stir, and cover.
- Reduce the heat to medium, then let cook for 20 minutes.
- Next, add in the chicken & sausage.
- Fold the ingredients, then pour in the remaining chicken broth.
- Add in the garlic & seasonings, and fold.
- Cover, and let simmer over low medium heat for about 1 hour or so.
- Be sure to stir periodically!
- Once done, the chicken should be falling of the bones.
- Serve with rice and/ or cornbread!
SMOTHERED OKRA AND TOMATOES WITH SHRIMP AND ANDOUILLE
The key to making smothered okra and tomatoes with shrimp and andouille is the tomatoes. The recipe called for San Marzano tomatoes, and I didn't stray from the suggestion.

- Preheat oven to 375 F.
- Whisk together the water, salt and lemon zest in a medium bowl. Add the shrimp and toss to coat. Refrigerate for 1 hour, tossing every 15 minutes.
- Meanwhile, toss the okra with a good amount of Creole seasoning and some oil. Spread out onto a baking sheet and roast 30 minutes, turning once, until starting to brown. Remove.
- Heat 1 tablespoon of oil in a large saucepan over medium heat. Add the onion, bell pepper and sausage and cook until the onions and pepper start to soften, about 10 minutes. Note: If using pre-cooked andouille, cook the vegetables for 8 minutes then add the sausage to brown.
- Add the garlic. .Stir and saute for 2 more minutes.
- Stir in the tomato paste until it dissolves.
- Pour the tomatoes and their juices into a large bowl. Squeeze them through your fingers to shred, removing any hard cores. Pour into the saucepan and stir
- Add the bay leaves, lemon juice, garlic powder, oregano, pepper, and red pepper flake. Stir. If too thick add a bit of water but not too much. You want the sauce to be somewhat thick.
- Bring to a simmer and let simmer for 10 minutes, stirring often.
- Stir in the okra and a splash or two of the fish sauce.
- Add the shrimp AND the brine it was in and stir. Saute another 5 minutes or until the shrimp are pink and done.
- Serve hot over rice garnished with green onions.

This version is from Chef Drextal Carter, of The Praline Connection in New Orleans. it was published n The Times-Picayune in anticipation of the French Market Creole Tomato Festival coming this weekend. - Heat olive oil in a large skillet over high heat. Add chopped onion and celery and saute, stirring often, about 10 minutes, until onions have browned. Combine salt, peppers, thyme and flour. Sprinkle mixture onto the browned onions; add the garlic and bay leaf, stir and cook for 1 minute. Stir in the diced tomatoes and white wine, and remove the pan from the heat.
- Place okra in the slow cooker. Pour contents of the skillet over the okra. Stir to mix, cover and cook on LOW for 2 to 2 1/2 hours, until okra is tender but still holds its shape. Stir in the peeled shrimp and cook on LOW an additional 1 hour.

- 1. In a large skillet or dutch oven pot, saute onion mixture in Olive Oil until tender.
- 2. Add okra and water. Simmer on medium until okra defrosts in the pot, about 5 minutes Stir in diced tomatoes and mix well bring to slight boil..
- 3. Cook on low heat until okra is very tender and most of the liquids are gone, about 30 minutes or until desired fondness. I like mine well done and thick.
- 4. Serve as a side dish or if you like you can serve over steamed rice. You can also add cooked smoked sausage or cooked chicken 10 minutes before serving to use as a main dish.

- Stove Top Method: Method 1 - Wash fresh okra. Remove stems and cut okra into 1/2 inch rounds. In a heavy saucepan or Magnalite cookware, cook the okra, onions, tomatoes in the oil over medium low heat stirring continually for about 45 minutes to 2 hours (depending on the amount you are cooking) until the okra is no longer slimy and has achieved a light greenish brown color. Don't forget to stir, stir, stir to prevent sticking and burning. Do not use cast iron as the acid in the okra will remove the seasonings in your cast iron pot. Also never warm up any okra dish in a cast iron pot.
- Stove Top Method: Method 2 - Some cooks will sauté the onions and bell pepper in one tablespoon of oil until wilted in a separate skillet all the while cooking the okra in a separate pot until the okra is a light greenish brown color . Then will combine the okra, tomatoes, salt and Tabasco; cook for 10 minutes longer or until the tomatoes have cooked down, Again do not forget to stir, stir, stir to prevent sticking and burning.
- Check your seasonings and serve as a vegetable side dish, with rice and gravy or make the okra and shrimp gumbo. Cei cest bon!
- Oven Method: Method 3 - Preheat oven to 350 degrees. If you're using frozen okra, defrost in a microwave or at room temperature. Using frozen okra from your local supermarket allows you to “pick“ okra anytime saving time and freezer space. They are generally packed in one pound or three pound bags.
