I havent seen too many Okra recipes on Zaar, so i decided to post my favorite. My Grandmother taught me how to make this dish when I was 11, and I've been making it ever since. Its a great along side smothered steak and mashed potatoes, or rice.

8 slices bacon
1 large onion, chopped
2 (16 ounce) bags frozen cut okra (or 2lb. fresh okra, sliced into 1/2 inch pieces)
2 (14 ounce) cans diced tomatoes, undrained
salt and pepper

Steps:

  • Fry bacon in a large skillet that can be covered, until crisp. Remove from skillet and drain on paper towels. Saute onion in bacon drippings until tender. Add okra and tomatoes, stir to blend. Cover, reduce to low heat. Cook for about an hour, or until okra is tender, stirring occasionally. Do not stir too much or too briskly, because the okra will fall apart. Season with salt and pepper, to taste.
  • **Note: Nanny diced the bacon and fried it and the onion together. My family doesn't like the bacon cooked into it because the bacon becomes soft. If you do it my way, you can sprinkle the bacon on right before serving.

Cajun-style smothered okra with tender chicken and smoked sausage.

9 oz chopped okra (fresh or frozen)
1 large yellow onion (chopped)
1 large green bell pepper (chopped)
2 stalks of celery (chopped)
2 tbsp vegetable oil
1 lb chicken wings
3 smoked sausage links (mild or hot, sliced)
2 tsp minced garlic
2 tsp cajun seasoning
1 tsp ground black pepper
1 1/2 tsp paprika
2 cups chicken broth

Steps:

  • Season the chicken wings with 1/2 tsp of cajun seasoning
  • Pour the vegetable oil into a large pot, then turn the heat to medium high.
  • Once the oil is nice and hot, add it the chicken wings.
  • Brown the wings, then remove them from the pot.
  • Next, toss in the sausage, and cook until browned. Remove from the pot.
  • Toss in the onions, bell peppers, and celery.
  • Cook for about 5 minutes, then add in the okra.
  • Stir, and cook for about 5 more minutes.
  • Pour in 1/4 cup of chicken broth, stir, and cover.
  • Reduce the heat to medium, then let cook for 20 minutes.
  • Next, add in the chicken & sausage.
  • Fold the ingredients, then pour in the remaining chicken broth.
  • Add in the garlic & seasonings, and fold.
  • Cover, and let simmer over low medium heat for about 1 hour or so.
  • Be sure to stir periodically!
  • Once done, the chicken should be falling of the bones.
  • Serve with rice and/ or cornbread!

16 ounces okra (fresh or frozen, sliced)
1 green pepper (chopped)
1/2 onion (chopped)
1-15 ounce can diced tomatoes (with juice)
1/2 cup chicken broth
1 tablespoon unsalted butter
1 bay leaf
2 tablespoons Cajun seasoning
1-2 teaspoons salt (adjusted to taste)

Steps:

  • Heat the butter in a large skillet over medium heat.
  • Add the onion and cook for 3 minutes, until softened.
  • Add the green pepper and okra and cook for 20 minutes, stirring occasionally.
  • Add the tomatoes, broth and seasonings and bring to a simmer.
  • Cover and simmer on low heat for an hour, or until the sliminess of the okra disappears.
  • Serve plain or over rice with Louisiana hot sauce (optional).

SMOTHERED OKRA BASE FOR OKRA GUMBO OR A SIMPLE SIDE DISH



Smothered Okra Base for Okra Gumbo or a Simple Side Dish image

This is the easiest way to smother okra. Using this method, the okra can be eaten as is or used as a base for Okra Gumbo. To prepare the gumbo, all that needs to be added to this full batch of cooked okra is about 3 to 4 pounds peeled and deveined shrimp, cooking stovetop for about 20 to 25 minutes after returning to a simmer. Should additional liquid need be added, do so towards the end of the 20 minutes by adding broth, water or shrimp stock to reach desired consistency. Serve gumbo over cooked rice.

4 lbs fresh okra, washed, de-stemmed, sliced (frozen can be substituted)
3 large onions, chopped
2 large green bell peppers, chopped
2 (16 ounce) cans tomatoes with juice (whole, chopped, or crushed)
1/4 cup vegetable oil
3/4 cup water, can substitute chicken broth
5 garlic cloves, minced
1 cup celery (optional)
1 lb ham seasoning, small diced
salt
pepper

Steps:

  • In a large roasting pot, layer alternately the okra, onions, bell pepper, tomatoes with juice, oil, garlic, celery, ham seasoning, water or broth, salt and pepper.
  • Cover pot tightly and place in 425°F oven.
  • Cook 30 minutes, stir and reduce heat to 350 degrees.
  • Cover and cook 2 - 2 1/2 hours, stirring every 30 minutes.
  • When the stringing of the okra ceases, the okra is cooked.
  • Remove from oven and allow to cool.
  • Chill COMPLETELY before packaging and freezing.

1/2 16 oz. package frozen okra ,cut up
8 oz fresh mushrooms ,sliced
1 14 oz.can diced tomatoes with juice
1 6 oz. can tomato paste
1 tsp file powder
2 bay leaves
1 tsp salt
1 tsp ground blk pepper
2 Tbsp vegetable oil
1 Tbsp vegetable oil
2 Tbsp flour
1 clove garlic, minced
1 medium onion, finely chopped
1 medium bell pepper, finely chopped
cooked rice

Steps:

  • 1. heat 1 t. oil in a large skillet over med heat, stir in garlic, bell pepper ,and onion, saute until tender.stir in okra, mushrooms,diced tomatoes with juice,tomato paste, file,salt & pepper and bay leaf. cook ,stirring occasionally,for 45 min.
  • 2. heat 2 T.oil in a med skillet over med. heat ,stirring constantly,add flour, and cook 2 to 5 min. until golden roux has formed.
  • 3. spoon roux into the okra mixture, and continue to cook, stirring occasionally for 5 to 10 until thickened. serve with rice

1/2 cup all-purpose flour
1/2 cup vegetable oil
GUMBO:
1 onion
2 celery ribs, (chopped)
1 green bell pepper, (cubed)
2 cups okra
4-5 garlic cloves, (sliced)
4 cups vegetable stock
2 bay leaves
1 tsp smoked paprika
1 tsp dry thyme
1-2 tsp Cajun seasoning
1 Tbsp Worcestershire sauce
salt and black pepper, (to taste)
OPTIONAL ingredient: 1-2 Tbsp Oyster sauce

Steps:

  • ROUX: Turn on Instant Pot, Saute setting, High, lid opened. Put flour in it and stir every 30 seconds or so. When it starts changing color, stir non-stop until it becomes dark as peanut butter. Add oil and stir some more.
  • Add onion, celery and bell pepper. Saute for about 5 minutes, stirring occasionally.
  • Add all remaining ingredients* and stir to combine. Cover the Instant Pot with a lid, set seal to "Sealing" and cook for 10 minutes on Manual setting. Release pressure quickly by turning valve to "Venting".
  • Serve gumbo over cooked long grain rice.

Then will combine the okra, tomatoes, salt and Tabasco; cook for 10 minutes longer or until the tomatoes have cooked down, Again do not forget to stir, stir, stir to prevent sticking and burning.
  • Check your seasonings and serve as a vegetable side dish, with rice and gravy or make the okra and shrimp gumbo. Cei cest bon!
  • Oven Method: Method 3 - Preheat oven to 350 degrees. If you're using frozen okra, defrost in a microwave or at room temperature. Using frozen okra from your local supermarket allows you to “pick“ okra anytime saving time and freezer space. They are generally packed in one pound or three pound bags.
