SMOTHERED FLAT IRON STEAK IN A PARMESAN PEPPER SAUCE
This is a super tasty steak dinner! Throw some medium or large shrimp in with the onion mixture for a surf and turf meal. Prep time does not include marinade time.

- Pour 1/4 cup dressing over steak and seal in a Ziploc bag. Refrigerate at least 30 minutes or overnight to marinate.
- Combine sour cream, 2 tbsp of the remaining dressing, Parmesan cheese, salt and pepper. Refrigerate until serving time.
- Heat remaining 2 tbsp dressing and garlic in large nonstick skillet on medium heat. Add onions; cook until golden brown, stirring frequently. Remove onions; set aside.
- Drain steak; discard marinade. Cook steak in same skillet on medium heat 3-4 on each side for medium doneness. Place on cutting board; slice crosswise into thin strips. Serve steak topped with sauce and onions.

- Mix first six ingredients for a marinade.
- Put flat iron steak in a freezer bag, pour marinade over it, seal bag, and freeze. The night before you plan to serve this, take bag from the freezer and thaw in refrigerator. (Or marinate the steak for several hours in the fridge, without freezing at all.).
- To prepare for serving, remove beef from marinade; reserve marinade.Grill steak for 8 to 10 minutes per side; or broil 6 minutes on one side and 4 on the other.
- Put reserved marinade in sauce pan. Heat on medium; let this gently boil for at least 10 minutes or until reduced by about a third.
- Let steak rest for 10 minutes. Cut steak across grain at a slanted angle into thin slices.
- Pour reduced marinade over the steak, and serve.

FLAT IRON STEAK AND COGNAC SAUCE
You can serve the Flat Iron Steak with or without the sauce, but I highly recommend the sauce, sometimes I actually double the recipe. Brandy can be substituted for Cognac and sometimes I use boullion cubes to make my own broth as a $$ saver. The Hot Sauce is the bottled sauce in the hispanic food section, not chunky salsa, the label reads "Salsa Picante, Mexican Hot Sauce". Prep time does not include marinating time.

- Wisk together marinade ingredients, pour into a large ziplock bag, add steak; squish around until combined, refrigerate for 1-6 hours.
- While grill is heating, remove steak from marinade, pat dry and sprinkle seasoning rub on both sides.
- Grill steak 5 minute on first side and 3-4 on other side.
- Remove from grill, To serve; cut in thin slices.
- Cognac Sauce:.
- While steak is marinading, saute shallots in butter for about 4 minute add brown sugar, cook another minute, add broth and cognac, simmer until sauce has reduced to 1/2 cup (about 20 min.), Add cream, stir until heated through.
- Serve over grilled meat.

- Place the steak inside of a large resealable bag. In a small bowl, stir together the olive oil, garlic, parsley, rosemary, chives, Cabernet, salt, pepper and mustard powder. Pour over the steak in the bag. Press out as much air as you can and seal the bag. Marinate in the refrigerator for 2 to 3 hours.
- Heat a nonstick skillet over medium-high heat. Fry the steak in the hot skillet for 3 to 4 minutes on each side, or to your desired degree of doneness. Discard the marinade. These steaks taste best at medium rare. Allow them to rest for about 5 minutes before serving.

- Chop 4 garlic cloves in a food processor until minced. Add the basil and pine nuts, and pulse a few times to combine. With the food processor running, slowly pour in the olive oil, stopping once or twice to scrape down the sides. Place the Parmesan cheese, lemon juice, and red pepper flakes into the food processor, and pulse until blended. Season to taste with salt and pepper. The pesto should be quite thick, but loose enough to drip off a spoon in clumps. Remove 1/3 cup of pesto; put the rest in an airtight container and refrigerate.
- Rub the flat iron steaks with the reserved pesto, then cover with plastic wrap and refrigerate for 2 hours.
- Preheat an outdoor grill or broiler for medium-high heat and lightly oil grate. Bring the steaks and pesto up to room temperature while the grill heats.
- Grill or broil the steaks to desired degree of doneness on preheated grill, about 4 minutes per side for medium. Baste the steaks occasionally with a little of the pesto sauce. Once done, serve topped with the remaining pesto.

FLAT IRON STEAK WITH CABERNET SAUCE
I use a 1 3/4 pound of flat iron steak. I cooked it on for 4 minutes on each side and it came out rare. I do like my steak rare. My sister thought it was good but much better the next day, since it was medium rare after heating up. This is an easy recipe to make, however, next time I will add a little corn starch to the sauce to thicken it up a bit.

- Take the steak out of the fridge about 20 minutes before you are ready to cook.
- In a small pot over high heat, add the broth and wine, simmer until reduced by half (about 10 minutes).
- Heat oil in cast iron skillet over medium high heat until it very hot.
- Season the steak with grill seasoning and put it in the skillet.
- Cook about 3 minutes per side for medium rare.
- Remove from pan.
- Cover with foil for 5 minutes while you finish the sauce.
- Reduce the heat under the skillet and add the shallots.
- cook until they begin to soften (about 3 minutes).
- Add the reduced broth and wine mixture and cook until thickened about 5 minutes.
- Stir in butter and cook until butter is melted and incorporated into the sauce.
- Taste and adjust with salt and pepper if needed.
- Slice the stead against the grain, arrange on a platter with the sauce on the side or pour over the steak.
