- Fry bacon in a large skillet over medium-high heat until crispy, about 5 minutes. Remove bacon from skillet and drain on a plate lined with paper towels; reserve bacon grease in the skillet. Crumble bacon into a bowl when cool and set aside.
- Add onion, celery, and red bell pepper to the bacon grease in the skillet. Cook over medium heat until softened, about 3 minutes. Add cayenne, parsley, mustard, and black pepper and cook 2 minutes. Add cabbage; cover and cook 10 minutes. Uncover, increase heat to high, and cook, stirring often, until cabbage is wilted and tender, about 10 additional minutes.
- Add apple cider vinegar and reserved crumbled bacon to the skillet and toss to coat. Serve immediately.

SMOTHERED CABBAGE
This down-home dish is a family favorite. The addition of a ham hock and pork shank add richness and a depth of flavor that can't be beaten. It's perfect for a holiday or everyday meal, and leftovers freeze well.

- Combine water, ham hock, and pork shank in a large pot. Bring to a boil, reduce heat, and simmer until meat is cooked through, about 2 hours. Drain and set meat aside to cool to room temperature, about 20 minutes.
- Remove meat from pork shank, chop into bite-sized pieces, and place in a bowl. Remove skin and meat from ham hock, chop into very small pieces, and add to the bowl, omitting skin if you prefer.
- Heat bacon drippings in a large skillet or Dutch oven over medium-high heat until hot, but not smoking. Add 1/4 of the cabbage to the hot skillet and saute until slightly wilted, about 3 minutes. Add 1/4 of the meat mixture. Add another 1/4 of the cabbage, cooking until slightly wilted, about 3 minutes, followed by another 1/4 of the meat mixture. Repeat until all cabbage and meat have been added. Season with salt and pepper. If mixture sticks to the skillet, add 1 to 2 tablespoons chicken broth.
- Slowly add remaining chicken broth to the cabbage-meat mixture in the skillet, give it a good stir, and reduce heat to medium-low. Simmer until cabbage is tender, 30 to 45 minutes.

SOUTHERN SMOTHERED CABBAGE
This flavorful smothered cabbage has onions, garlic, authentic creole spices, and tender smoked turkey. It's a classic southern side dish that's perfect for just about any soul food style meal!

Steps:
- Place the smoked turkey into a large pot, and pour in 4 cups of water.
- Bring the water to a boil, and cook until the turkey is tender. At this time, there is very little liquid in the pot, but do not get rid of it (It's flavor baby!!)
- Next turn the heat off, and remove the turkey from the pot.
- Chop the turkey meat into bite sizes, then set to the side.
- Place the pot back on the stove top, and turn the heat to medium high.
- Add in the onions, and garlic then cook until they are translucent.
- Start adding in the cabbage, and stir.
- Cover the pot, and let the cabbage cook down some.
- Toss in the smoked turkey meat, and sprinkle in the creole seasoning and black pepper.
- Stir everything, place the lid on the pot, and let the cabbage cook down for 5 minutes.
- Remove the lid from pot, and stir the cabbage. Place the lid back on pot.
- Cook the cabbage until it's nice and tender.
- Serve and enjoy!

- Dice onions, and all other ingredients chop into medium size pieces.
- Place in a medium to large size pot and cover 1/4 the way with water. Add all seasonings and cook on medium for about 30 minutes makings sure to stir every 15 miutes. Make sure you cook until tender.
SMOTHERED CABBAGE, VENETIAN STYLE
Steps:
- 1. Detach and discard the first few outer leaves of the cabbage. The remaining head of leaves must be shredded very fine. If you are going to do it by hand, cut the leaves into fine shreds, slicing them off the whole head. Turn the head after you have sliced a section of it until gradually you expose the entire core, which must be discarded. If you want to use the food processor, cut the leaves off from the core in sections, discard the core, and process the leaves through a shredding attachment. 2. Put the onion and olive oil into a large saute pan and turn the heat on to medium. Cook and stir the onion until it becomes colored a deep gold, then add the garlic. When you have cooked the garlic until it becomes colored a very pale gold, add the shredded cabbage. Turn the cabbage over 2 or 3 times to coat it well, and cook it until it is wilted. 3. Add salt, pepper, and the vinegar. Turn the cabbage over once completely, lower the heat to minimum, and cover the pan tightly. Cook for at least 1.5 hours, or until it is very tender, turning it from time to time. If while it is cooking, the liquid in the pan should become insufficient, add 2 tablespoons water as needed. When done, taste and correct for salt and pepper. Allow it to settle a few minutes off heat before serving.
