S'mores Whoopie Pies - a decadent indulgence!

- Preheat the oven to 375 degrees and line two baking sheets with parchment paper.
- In a medium bowl add the flour, baking powder, cinnamon, and salt. In a mixer fitted with the paddle attachment, beat the butter, and brown sugar until light and creamy, about 3 minutes. Add the eggs, buttermilk, and vanilla and beat until well incorporated.
- In a small bowl, combine the milk, baking soda and vinegar. Add this mixture to the batter along with the flour mixture and beat on low speed until completely combined.
- Put the batter into a pastry bag fitted with a large round tip, you can also use a ziploc back and just cut off one tip, and drop about 1 tablespoon of batter onto the baking sheet. Repeat making sure to leave about 2 inches in between the cakes.
- Bake for about 10-12 minutes until the cakes begin to brown. Remove from the oven and let the cakes cool on the baking sheet for 3-5 min before transferring them to a rack to cool completely. Let them cool for a couple minutes on the baking sheet before moving them.
- To make the marshmallow cream, beat the marshmallow fluff and butter (you can also use shortening) in a mixer, starting on low, then gradually increasing the speed to medium until the mixture is smooth and fluffy. Reduce the speed to low and add the powdered sugar and vanilla and mix well. Increase the speed to medium again until mixture is fluffy. Place the marshmallow cream into a piping bag or another ziploc bag.
- In a sauce pan heat the cream over medium heat until it starts bubbling. In a heat proof bowl add the chocolate. Pour the hot cream over the chocolate and let it sit for 10 minutes until the chocolate melts. Whisk the chocolate and cream together until it’s nice and smooth. You need to let the chocolate ganache rest at room temperature so that it firms enough to spread, about 2 hours, or do what I did and place it in the freezer to speed up the process.
- Pair the cakes up with cakes of similar size and turn them over with the flat side up. On half of the cakes, pipe the marshmallow cream.
- On the other half, pipe the cooled chocolate ganache.
- Bring the two cakes together, but do not squeeze. You may store them in the fridge in an air tight container.

- CAKES.
- Preheat the oven to 375F and line two baking sheets with parchment paper.
- In a medium bowl, stir together both flours, baking powder, cinnamon, and salt.
- In another bowl, beat the butter, shortening, and brown sugar for about 3 minutes until light and creamy. Add the eggs, buttermilk, and ½ teaspoon vanilla and beat until combined.
- In a third bowl, combine the milk, baking soda, and vinegar. Add this slowly to the butter mixture, then add the flour mixture and beat on low speed until completely combined.
- Drop about 2 tablespoons of batter onto the baking sheet with a spoon. Each drop should be spaced at least 3 inches apart.
- Bake for 10 minutes until the cakes begin to brown. Remove from the oven and let them cool on the baking sheet for 5 min before transferring them to a rack to cool completely. They might break if you try to move them when they are too warm.
- MARSHMALLOW CREAM.
- Beat together the marshmallow fluff and shortening for 3 minutes until smooth and fluffy.
- Reduce the mixer speed and add the powdered sugar and 1 teaspoon vanilla. Increase speed and beat until fluffy.
- CHOCOLATE GANACHE.
- Place the chocolate in a large, heat proof bowl.
- Heat the cream in a saucepan over medium heat just until it bubbles. Pour the heated cream over the chocolate in the bowl and let it sit for about 10 minutes, until the chocolate is just melted. Stir with a whisk until smooth.
- Refrigerate for about 30 minutes, stirring every 10 minutes until it is firm enough to spread.
- ASSEMBLY
- Pair up your cakes by size. Spread the marshmallow cream onto the flat side of one cake and the chocolate ganache on the flat side of another, squish together, and repeat until all cakes are covered.

- Preheat oven to 375 degrees
- Line a baking sheet with parchment paper. This will help thee cookies not to stick to the pan.
- In a medium sized bowl, combine graham cracker crumbs, flour, and baking powder, set aside
- In a separate bowl, combine milk, vanilla, baking soda, and vinegar, set aside
- In a stand mixer, combine 1/2 cup butter and brown sugar using the paddle attachment and cream together for 2 minutes.
- After creaming the sugar and butter together for 2 minutes, add the eggs in one at a time.
- Beat for 1 minute.
- Slowly add in milk mixture and flour mixture, and mix until just combined.
- Scoop mixture into a gallon sized ziptop bag, and cut the tip.
- Pipe 2 inch circles of batter, it will spread, so make sure to give them space. (9 to a pan is the most I would do, you should get 24-26 total)
- Bake 8-10 minutes, let sit on pan for 1-2 minutes, then move to a cooling rack.
- While the whoopie pie shells cool, mix together all of the marshmallow buttercream ingredients in a large bowl, using a hand mixer, and pop in the fridge for a few minutes to allow to set up a bit.
- In a microwave safe bowl, heat 1/4 cup heavy whipping cream for 45 seconds to 1 minute
- Pour the chocolate chips into the whipping cream, and stir until melted and shiny!
- Add salt.
- Take a "cookie" and scoop 1 Tablespoon of chocolate ganache on top, and spread, then add 1 Tablespoon of the marshmallow buttercream, and top with another "cookie".
- Store in an airtight container for up to a week!

- For the Cake1. Heat oven to 320 F. Spray your whoopee pie pan with non-stick cooking spray. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add egg, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). 2. Pour 1 ½ tablespoons of batter into each well of the whoopie pie pan. 3. Bake 8-10 minutes or until wooden pick inserted in the center comes out clean. 4. Cool for 10 minutes in the pan then invert the pan and allow the whoopies to cool completely on wire racks. 5. Wash and dry the pan and re-spray with non-stick cooking spray and repeat with the remaining batter. You will end up with 36 whoopie cakes that once sandwiched will yield 18 whoopie pies. 6. Once your whoopies are cool, prepare the marshmallow frosting.
- For the Marshmallow Frosting1. Place egg whites, sugar, and cream of tartar in the heatproof bowl of an electric mixer. Set over a saucepan with simmering water. Whisk constantly until sugar is dissolved and whites are warm to the touch, 3 to 4 minutes. 2. Transfer bowl to electric mixer fitted with the whisk attachment, and beat, starting on low speed, gradually increasing to high, until stiff, glossy peaks form, 5 to 7 minutes. Add vanilla, and mix until combined.
- For the Topping:Place the chocolate into a medium bowl. Heat the cream in a small sauce pan over medium heat. Bring just to a boil, watching very carefully because if it boils for a few seconds, it will boil out of the pot. When the cream has come to a boil, pour over the chopped chocolate, and allow to sit for a few minutes. Whisk until smooth.
- To assemble the S’mores Whoopie Pies:1. Pipe filling on the flat sides of half the cakes (18 of them). 2. Use a kitchen torch to lightly toast the marshmallow frosting. Top each with one of the remaining cakes; flat side down. 3. Place a spoonful of ganache on top of each whoopee pie and spread in a circular pattern; garnish with graham cracker crumbs and allow the ganache to set up.
