S'MORES FUDGE BARS
Make indulgent s'mores bars with just six simple ingredients. Betty Crocker™ sugar cookie mix and graham crackers make the crust a breeze.

Steps:
- Heat oven to 375°F. In large bowl, stir cookie mix, graham cracker crumbs and melted butter until a soft dough forms. Press dough evenly into ungreased 8- or 9-inch square metal pan.
- Bake 20 to 25 minutes or until dough is set and golden brown. Cool completely, about 30 minutes.
- In 2-quart saucepan, heat chocolate chips and condensed milk over medium-low heat 10 minutes, stirring frequently, until chips are melted and mixture is thickened. Spread evenly over cooled cookie crust. Refrigerate 30 minutes or until set.
- Set oven control to broil. Sprinkle marshmallows evenly over chilled fudge filling. Broil 1 minute, rotating pan as needed until marshmallows are melted and lightly toasted. Refrigerate at least 1 hour before cutting into bars.
- For 16 bars, cut into 4 rows by 4 rows; for 20 bars, cut into 5 rows by 4 rows.

These might just be our favorite take on s'mores yet: cute graham cookie cups, filled with Hershey's™ chocolate and finished with marshmallow topping. And they're just the right size -- especially if you want to eat more than one!

- Heat oven to 350°F. Spray 36 regular-size muffin cups with cooking spray. In large bowl, mix cookie mix, 1 cup graham cracker crumbs, 3/4 cup softened butter and egg with spoon until soft dough forms. Press rounded tablespoonfuls dough evenly in bottom of each muffin cup and halfway up sides.
- Bake 9 to 11 minutes or until golden brown. Remove from oven to cooling rack. Immediately place 3 individual chocolate rectangles in each cookie cup. Let cool 10 minutes in muffin cups. Using knife, spread melted chocolate in each cup. Remove cookie cups from muffin cups to cooling rack. Cool completely, about 30 minutes.
- When ready to serve, in small bowl, beat Topping ingredients with spoon until smooth. Put topping in medium resealable food-storage plastic bag. Cut off one bottom corner; squeeze small dollop of topping on top of each cookie cup. Sprinkle 1 tablespoon graham cracker crumbs evenly over cookie cups.

Whipped this up for a birthday present and it was too excellent not to share! This is an excellent treat for your next holiday party or backyard barbecue! The amount of graham crackers and marshmallows used is based on personal preference. Feel free to experiment using more or less!

- Line an 11x7-inch baking dish with parchment paper. Sprinkle half of the graham cracker crumbs on bottom of dish.
- Melt chocolate chips, sweetened condensed milk, butter, and vanilla extract in top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Pour half of melted chocolate mixture into prepared baking dish; sprinkle about half of the miniature marshmallows over the top, covering the chocolate mixture. Repeat with the remaining chocolate mixture and graham crackers, respectively.
- Refrigerate until solid, 3 hours to overnight.

Steps:
- Preheat oven to 350°
- Line a 9×9 baking pan with foil. Set aside.
- Mix all the ingredients for your crust together and press evenly into pan.
- Bake for 10 minutes. Remove from oven and set aside.
- Next make your chocolate filling. In a medium sauce pan combine the milk chocolate and sweetened condense milk together over medium-low heat and stir until melted. Pour immediately onto crust.

- Making s'mores in the microwave works best if you just make one s'more at a time. Assemble the s'more with the marshmallow in between two cookies and place on a microwave-safe plate. Microwave for 30 seconds or until the marshmallow is soft and gooey.
- Place a large marshmallow on a stick and get it as close to the coals of the campfire as possible without touching them (or putting the marshmallow in the flames!). Roast until just barely golden brown, unless you are one of those people who like your marshmallows dark brown/black!

- In a large bowl using handheld or stand mixer, cream the butter and brown sugar together on medium speed. Beat for about 2 minutes until smooth and combined. Add the vanilla extract and egg, beating until combined. Scrape the sides of the bowl down as needed. Set aside.
- Toss the flour, graham cracker crumbs, baking powder, and salt together until combined. With the mixer running on low, slowly add the dry ingredients to the wet ingredients. Mix until combined.
- Press 2/3 of the graham cookie dough into prepared pan. Spread the marshmallow creme on top. This will be a bit tricky since the marshmallow creme is so sticky, but do the best you can to get an even layer. Sometimes I spray the bottom of a spatula with nonstick spray to spread it around. Sprinkle the marshmallow creme with chocolate chips and marshmallows. Mold the remaining cookie dough into flat disc pieces and layer on top of the chocolate chips. You won't have enough dough to make one single layer, so some of the chocolate chips and marshmallow creme will be exposed. That is ok! You want to see the marshmallow on top. Sprinkle the top of the pie with some of the chocolate chips and marshmallows.

- Spray an 8x8 inch square pan with cooking spray, then lay a double layer of cling film into the pan. Spray that with cooking spray too, then leave to one side. Alternatively, if you find foil or grease proof paper works for you, use that instead. I just find it always sticks, no matter what I do!
- Place the condensed milk into a deep, medium sized saucepan and break the chocolate up into the saucepan too.
- Place over a low heat and stir frequently, until all the chocolate is melted and the mixture is smooth. Remove from the heat and add the butter, vanilla extract and salt then mix until the butter is melted.
- Place a piece of cling film into the saucepan to cover the fudge mixture. Press it into the top of the mixture to prevent a film from materialising.
