S'MORES DESSERT SHOOTERS

Steps:
- In bottom of each of 8 shot glasses, crumble 1 graham cracker rectangle.
- Spoon chocolate mousse into decorating bag; pipe evenly into shot glasses. Refrigerate 2 hours, or as directed on mousse mix box, until set.
- Before serving, top each with 1 teaspoon marshmallow creme and a few chocolate chips.

Steps:
- Whisk 1 box pudding mix with 1/2 of the milk in a bowl until smooth, about 2 minutes. Repeat with second box of pudding mix and remaining milk in another bowl.
- Pour 1 bowl pudding into graham cracker crust. Put 1/2 of the marshmallows on the pudding. Top with remaining pudding, then layer with marshmallows. Put whipped topping over the marshmallows and level it out with a spatula.
- Chill in the refrigerator before serving, 1 to 2 hours.

Who would have thought to take a traditional camping dessert and make it into a delicious *adult* dessert?? Bob Blumer from the Food Network, that's who. I saw this on the Saturday Early Show and can't wait to try it!

Steps:
- Toast marshmallows over a campfire or stovetop until golden brown; let cool and reserve.
- In a small pot, bring half-and-half to a boil.
- In a medium bowl, add chocolate; pour cream over chocolate and stir until chocolate has fully melted.
- Return chocolate ganache to the pot and whisk in milk.
- Over medium heat, bring to a simmer and stir in 1/2 cup of amaretto.
- Pour remaining amaretto into a small bowl so that it is 1/4 inch deep and place graham cracker crumbs on a small saucer 1/4 inch deep.
- To assemble, dip the rims of each shot glass in amaretto, then in the graham cracker crumbs.
- Fill glasses with hot chocolate and top each with a toasted marshmallow (make your life easier by transferring the hot chocolate first to a measuring cup with a spout).

- On stove top, toast marshmallows over low heat until golden brown. Let cool.
- In small saucepan, bring to boil half-and-half. Place chopped chocolate in small bowl. Pour half-and-half over chocolate and stir till melted.
- Return chocolate to pot and whisk in the milk. Bring to a simmer over medium heat and stir in 1/2 cup amaretto.
- Pour remaining amaretto in small mixing bowl. On a saucer, place graham crackers.
- ASSEMBLE: Dip rims of shot glasses in amaretto, then in graham cracker crumbs. Fill glasses with hot chocolate mixture and top each shot glass with a toasted marshmallow. 2 points per shot

- In a medium bowl, beat ¼ cup of the heavy cream using a hand mixer until stiff peaks form. Cover the bowl with plastic wrap and place in the fridge to chill while prepping the rest of the recipe.
- Place a small amount of water in a saucepan and bring to a simmer. Place a metal bowl on top of the pan of simmering water to create a double boiler, checking to make sure the bowl sits above and does not touch the water. In the bowl, combine the egg yolks, coffee, salt, and 3 tsp. of the sugar. Cook the mixture, whisking constantly, until it becomes lighter in color and doubles in volume. An instant-read thermometer inserted into the mixture should read 160°F.
- Remove the bowl from the pan of simmering water. Add the chocolate and whisk until the chocolate melts and the mixture is smooth. Let the mixture stand, whisking occasionally, until it cools to room temperature.
- In a medium bowl, beat the egg white using a hand mixer until the egg white becomes foamy. With the mixer running on low speed, slowly add the remaining 1 ½ tsp. sugar. Increase speed to high and beat the mixture until stiff peaks form.
