AIR FRYER EGG ROLLS

- Pour hot water over bean sprouts in a small bowl; let stand 5 minutes. Drain., Meanwhile, in a Dutch oven, cook chicken over medium heat until no longer pink, 6-8 minutes, breaking into crumbles. Add green onions, ginger and garlic. Cook 1 minute longer; drain. Stir in 1/2 cup Chinese-style sauce, fish sauce and soy sauce; transfer to a large bowl. Wipe pan clean., In the same pan, cook and stir coleslaw mix, spinach and drained bean sprouts until crisp-tender, 4-5 minutes. Stir into chicken mixture. Cool slightly., Preheat air fryer to 400°. With one corner of an egg roll wrapper facing you, place 1/3 cup filling just below center of wrapper. (Cover remaining wrappers with a damp paper towel until ready to use.) Fold bottom corner over filling; moisten remaining wrapper edges with water. Fold side corners toward center over filling. Roll egg roll up tightly, pressing at tip to seal. Repeat., In batches, arrange egg rolls in a single layer in greased air-fryer basket; spritz with cooking spray. Cook until golden brown, 8-12 minutes. Turn; spritz with additional cooking spray. Cook golden brown, 4-6 minutes longer. Serve with remaining Chinese-style sauce.

AIR FRYER S'MORES EGG ROLLS
Air-fried and crispy on the outside, these s'mores egg rolls are filled with melted chocolate and marshmallows on the inside, with extra marshmallow fluff served on the outside to dunk into. The perfect twist on a campfire treat.

Steps:
- In a medium mixing bowl, stir together ¾ cup of the crushed graham crackers, fluff and chocolate.
- Place a wonton wrapper on the counter, so it's in a diamond shape directionally in reference to you. Add two tablespoons of the graham cracker filling to the bottom half of the wrapper. Pull the bottom corner over the top of the filling, bring in both sides to the middle. Dip your finger into some water and run it on the edge of the top corner. Roll the egg roll towards the top to seal it. Repeat this with the remaining filling.
- Brush the melted butter over the top of each eggroll and sprinkle with the crushed graham crackers.
- Place the egg rolls into the basket of your air fryer. Turn the air fryer to 400° F for 11 minutes.
- Serve with some chocolate sauce and/or marshmallow topping for dipping on the side.

- In a deep pot, heat oil to 380 degrees F. In a small bowl, beat egg.
- Cut chocolate into 1/2-inch cubes. Take an egg roll wrapper, and brush edges with egg wash, and lay on a work surface, wash side up, with a point facing you, not a straight edge. Place about 2 ounces of chocolate 1 or 2 inches from the edge, and top with 1/4 cup of microwaved marshmallow or fluff.
- Fold the corner closest you up and just over the filling, press lightly, then fold in the sides, making a little pull or tuck to keep the roll right. Then roll away from you and press to seal tightly. (Take care not to tear the egg roll wrapper. This can cause roll to leak while cooking. If tear occurs, pinch dough together until it reseals or discard wrap and use a new one.) Repeat until all egg rolls are formed.
- Fry egg rolls 4 at a time, turning almost immediately, cooking on all sides to just golden brown, less than a minute. (Make sure not to overcook filling. If you see marshmallows start to ooze out before both sides are golden, filling will be overcooked and egg roll will appear hollow inside) Remove to a paper towel-lined plate and repeat until all cooked. Make sure to check your oil temperature between additions.
- When ready to serve, dust with powdered sugar and graham cracker crumbs. Serve immediately, but caution very hot!
AIR FRYER S'MORES EGG ROLLS
For a fun (and lighter) twist on the classic campfire treat, we fill egg roll wrappers with a modest amount of graham cracker crumbs, mini chocolate chips, and mini marshmallows. The egg rolls are air-fried until shatteringly crisp on the outside, with gooey melted chocolate and marshmallows waiting for you inside. This recipe makes four egg roll treats, but you can easily whip up just one when you'd like a fast single-serve dessert. They're best eaten right away, but if you'd like to make them ahead, you can assemble and refrigerate the uncooked egg rolls, covered, for a few hours before cooking.

- Place an egg roll wrapper on a flat work surface with the corners set vertically (pointing up and down like a diamond shape). Moisten all edges of wrapper with water. Spoon 1 tsp graham cracker crumbs horizontally across the center of the wrapper; top with 1 tsp chocolate chips and 5 marshmallows. Fold the bottom corner of the wrapper to the center, over the filling. Fold in left and right sides of wrapper to seal the ends, and roll up. Repeat with remaining wrappers, cracker crumbs, chocolate chips, and marshmallows.
- Preheat air fryer, if necessary, to 400°F. Coat egg rolls all over with cooking spray and arrange in air fryer basket, seam side down. Air-fry at 400°F until well browned and crisp, 6 to 7 minutes. Remove egg rolls from air fryer; sprinkle with powdered sugar.
