LIQUOR-INFUSED CHOCOLATE-COVERED CHERRIES
This is a great recipe for the holidays (but not for kids!). Please prepare ahead of time, as for this recipe takes a week to make.

Steps:
- Pour cherries, with their juice, into a glass bowl. Cover cherries with rum. Cover with plastic wrap and store in the refrigerate for 1 week.
- Drain and dry rum-infused cherries.
- Line a baking sheet with waxed paper.
- Mix confectioners' sugar, 1/2 cup butter, milk, and maple syrup together in a bowl until smooth and pliable. Wrap each cherry with sugar mixture. Arrange on baking sheet. Cover loosely with plastic wrap and chill until firm, about 30 minutes.
- Combine chocolate chips, semisweet chocolate, 2 tablespoons butter, and paraffin wax in a saucepan. Heat over medium-low heat, stirring, until melted, about 5 minutes.
- Dip each wrapped cherry into the melted chocolate mixture using a toothpick. Return to baking sheet. Repeat with remaining cherries. Cover loosely with plastic wrap and chill until set, about 1 hour.

CHOCOLATE COVERED CHERRIES - SIMPLE STYLE
These Cherries are great. They are made with Marshmallow creme instead of condensed milk. They are very easy to make - especially if you've never tried to make them before! My mother in law passed the recipe on to me and they are very rich - but very good! A perfect valentines day treat.

Steps:
- Cream butter and beat in marshmallow creme and salt.
- Add powdered sugar.
- Turn and kneed until mixed thoroughly.
- Refrigerate the mixture for 2 hours .
- De-stem, drain and dry the cherries.
- Cover each individual cherry with some of the marshmallow mixture until completely covered and freeze solid. (usually about an hour).
- Melt chocolate in double broiler. (you can also use your microwave on a very low power setting, just be careful not to burn the chocolate).
- Dip marshmallow covered cherries in chocolate and place an a wax paper-lined cookie sheet.
- Refrigerate for 2 hours and serve.

- Finely chop 1/2 pound dark chocolate. Combine three-quarters of the chocolate and 1 teaspoon coconut oil in a microwave-safe bowl and microwave in 30-second intervals, stirring, until the chocolate is melted; stir in the remaining chocolate until smooth. Dip 1 pound fresh cherries in the chocolate by the stems and set on parchment paper. Let harden at room temperature.

DARK CHOCOLATE CHERRY S'MORES - 40 APRONS

- Brush both sides of the graham crackers with melted butter. Place in a single layer on a microwave-safe plate and lay a square of dark chocolate on graham cracker (for every two). Microwave about 30-45 seconds, or until the dark chocolate is beginning to soften and melt. Don't microwave too long, or parts of your graham cracker will burn!
- Transfer the graham cracker with white chocolate on it to a pan and place a marshmallow on top of the dark chocolate. Place under broiler and watch carefully--about 90 seconds to 2 minutes. The marshmallow should puff up and begin to brown; don't let over-brown or your graham cracker will suffer! If you prefer your marshmallow a bit more toasted, use a kitchen torch to brown the naked edge.
- Spoon halved cherries onto top of toasted marshmallow and top with remaining graham cracker. Serve immediately.
