SMOOTH BROCCOLI VITAMIX® SOUP
This is a healthy and simple soup I whipped up for the Vitamix®. Can easily be made vegetarian or vegan by substituting vegetable broth and/or non-dairy milk. You can reserve some of the microwaved broccoli and potatoes and add them after blending if you like more substance to your soup. Enjoy!

Steps:
- Heat olive oil in a skillet over medium heat; saute onion until translucent, 5 to 10 minutes.
- Spread potatoes and broccoli onto a microwave-safe plate. Cook in microwave until tender, 4 to 5 minutes.
- Place onion, potatoes, broccoli, milk, chicken broth, pepper, salt, ginger, and thyme in the Vitamix® or blender. Start on variable 1, slowly increase to variable 10, and end on high for 4 to 5 minutes. Serve hot.

- Vitamix Pizza Soup. This pizza soup is essentially tomato soup with some cheese thrown in for good measure, and it’s super delicious. I always add a sprinkling of cheese to my tomato soup anyway, so why not add it right into the pot?

- Vitamix Tortilla Soup. This soup is vegan-friendly, gluten-free, and ready to eat in less than 15 minutes. Now, you do need to start this on the stove-top, but it gets finished in the Vitamix.
- Vitamix Vegetable Soup. This recipe calls for steamed potato and pumpkin, but if you want to speed things up, just dice them up and nuke them in the microwave for around 5 minutes (add a bit of water to the bowl and cover).

- In the bowl of a high speed blender that heats (I use a Vitamix), add 1 1/2 cups broccoli along with the carrots, onion, cheddar, bouillon and milk. Per manufacturer’s directions, turn on the blender and blend until smooth and hot – about 5-6 minutes. On the Vitamix, this means turning the blender on its’ lowest setting and increasing the speed slowly to its highest setting before flipping the switch to high. This may vary depending on your blender.
