Sweet and Smoky Barbeque Sauce image

Use this toward the end of cooking as you would for any BBQ meat such as pork, ribs, or chicken. I have even used it on beef and hamburgers, sausages, hot dogs, or anything you want, for the most part. I use it on everything from ribs to roasts to hamburgers to hot dogs. Even goes good with a good old classic grilled cheese sandwich. This is a great all-round BBQ sauce. Use right away or cool to room temperature, transfer to jars or containers, and refrigerate. The sauce will keep for several months in the fridge.

½ cup apple cider vinegar
6 tablespoons packed brown sugar
¼ cup molasses
¼ cup honey
¼ cup Worcestershire sauce
2 tablespoons rum
2 tablespoons prepared yellow mustard

1 tablespoon ground red chile pepper
2 tablespoons freshly ground black pepper
2 tablespoons garlic powder
1 teaspoon ground allspice
4 cups ketchup

Steps:

  • Mix vinegar, brown sugar, molasses, honey, Worcestershire sauce, rum, mustard, liquid smoke, ground chile, black pepper, garlic powder, and allspice together in a heavy saucepan over medium heat. Bring to a boil, reduce heat, and simmer until sauce is smooth and brown sugar is dissolved, about 5 minutes.
  • Stir ketchup into sauce and bring to a boil. Reduce heat and simmer, stirring occasionally, until sauce is dark and thickened, about 30 minutes.

3/4 cup packed dark brown sugar
1/2 cup kosher salt
1/2 cup ground espresso beans
2 tablespoons freshly ground black pepper
2 tablespoons garlic powder
1 tablespoon ground cinnamon
1 tablespoon ground cumin
1 tablespoon cayenne pepper
1 whole chicken (about 4 pounds), giblets removed
Special equipment:
Charcoal kettle grill, chimney starter, heavy-duty fireproof gloves, disposable aluminum tray, instant-read thermometer, hardwood charcoal, wood chunks or soaked wood chips, large non-reactive 5-gallon container.

Steps:

  • First, make the dry rub:
  • Combine all the ingredients except for the chicken in a resealable container, cover tightly, and shake well to combine. (Dry rub can be stored, covered, in a cool, dry place for up to 2 months.)
  • If brining:
  • In a stockpot, bring 1 gallon water and 1 cup dry rub to a boil, stirring until the sugar and salt are dissolved. Let the brine cool to room temperature, then transfer to a nonreactive container and refrigerate until chilled. Add the chicken to the cold brine and refrigerate for 4 to 8 hours.
  • Set a wire rack on a baking sheet. Remove the chicken from the brine, pat dry with paper towels, and place on the wire rack. Discard the brine. Refrigerate for 6 hours.
  • If using the dry rub instead of brining:
  • Put the chicken on a rimmed baking sheet and coat the chicken lightly all over with 1/2 cup dry rub (you may not need all of the rub) and set aside.
  • Prep your kettle grill:
  • Remove any ash and debris if the smoker has been previously used and clean the grates. Fill a chimney starter about halfway with hardwood charcoal. Loosely crumple a couple of pieces of newspaper and drizzle or spray them with vegetable oil (this helps the paper burn longer and speeds up the charcoal-lighting process). Stuff the paper into the chimney's lower chamber place the chimney on the smoker's top grate, and light it. Let the charcoal burn until the coals are glowing red and coated in gray ash, about 15 minutes. Put on a pair of heavy-duty fireproof gloves and carefully dump the charcoal into one side of the grill-over the bottom air vent if your grill has one-leaving the other half free of coals. Place a disposable aluminum tray on the other side to use as a drip pan.
  • Place a few hardwood chunks or a foil packet of wood chips over the coals. Add the top grate and put your meat over the drip pan. Cover the grill, placing the air vents in the lid over the meat. Open both vents about halfway.
  • Place the chicken in the smoker and smoke, maintaining a smoker temperature of between 200° and 225°F, replenishing the wood chunks or chips as needed, until an instant-read thermometer inserted into the center of a leg registers 165°F, 3 to 5 hours. Transfer the chicken to a cutting board and let rest for 10 minutes.
  • At this point, you can cut the chicken into quarters or tear the meat into shreds to make pulled chicken. Or, if you want extra-crispy skin, you can briefly roast the chicken in a 450°F oven, or prepare a grill with hot and cool sides, put the chicken over the cool side, cover the grill, and cook for 5 to 10 minutes.

1 tablespoon sesame oil
1 skinless, boneless chicken breast half
¼ cup barbeque sauce, divided
½ cup marinara sauce
1 (16 ounce) package pre-baked pizza crust
1 cup shredded mozzarella cheese
⅓ cup thinly sliced red onion
2 tablespoons chopped fresh cilantro

Steps:

  • Heat the sesame oil in a skillet over medium heat. Place the chicken breast in the skillet, and top with 1 tablespoon barbeque sauce. Cook 10 minutes, turn, and top with 1 tablespoon barbeque sauce. Continue cooking 10 minutes, until juices run clear. Cool slightly, and cut into chunks.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a small bowl, mix the remaining barbeque sauce and marinara sauce. Spread evenly over the pizza crust. Sprinkle with mozzarella cheese. Arrange cooked chicken chunks and red onion slices over the top.
  • Bake 15 minutes in the preheated oven, or until cheese is melted and bubbly. Remove from heat, sprinkle with cilantro, and let sit 10 minutes before slicing.

1 teaspoon extra-virgin olive oil, plus more for brushing
1/2 pound prepared pizza dough, at room temperature
1/3 cup plus 2 tablespoons dark barbecue sauce
1 8-ounce skinless, boneless chicken breast
Kosher salt and freshly ground pepper
2/3 cup grated smoked gouda cheese (about 3 ounces)
2/3 cup grated part-skim mozzarella cheese (about 3 ounces)
1/2 small red onion, thinly sliced
Fresh cilantro, for topping

Steps:

  • Brush a large bowl with olive oil. Shape the pizza dough into a ball, add it to the bowl and turn to coat with the oil. Cover tightly with plastic wrap and set aside in a warm place, 30 to 40 minutes.
  • Position racks in the upper third and middle of the oven. Place a pizza stone or inverted baking sheet on the top rack and preheat the oven to 425 degrees F for at least 30 minutes.
  • Meanwhile, lay out a sheet of parchment paper and brush with olive oil. Transfer the ball of dough to the parchment and roll it out into a 10-inch round, stretching it with your hands as needed. Lightly brush the dough with olive oil, cover with another piece of parchment and set aside to let rise slightly, about 30 minutes.
  • While the dough rises, mix 2 tablespoons barbecue sauce and 1 teaspoon olive oil in a small bowl. Put the chicken in a baking dish, season with salt and pepper and brush with the barbecue sauce mixture. Bake on the middle oven rack until cooked through, about 20 minutes. Let cool, then cut into 1/2-inch cubes.
  • Uncover the dough and spread with the remaining 1/3 cup barbecue sauce, leaving a 3/4-inch border. Top with the chicken, gouda, mozzarella and red onion. Slide the pizza (on the parchment) onto a pizza peel or another inverted baking sheet, then slide onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, 20 to 25 minutes. Sprinkle with cilantro.

Had some leftover BBQ sauce and some left over chicken, but not much of either so I made pizza. Don't overcook the bacon before you put it on the pizza since it will cook in the oven, too. Use your favorite BBQ sauce but go easy on it...a little goes a long way. Adjust the amount to the thickness of your crust. I use about a third of a cup for a thin crust, use more for thick.

1/2 Cup Tomato Sauce
1/2 tsp. Garlic Powder
1/2 tsp. Smoked Paprika

1 lb. Chicken Breasts (or chicken breast tenderloins)
1-2 Tbsp. Olive Oil
1 tsp. Garlic Powder
1 tsp. Smoked Paprika
1/2 tsp. Cayenne Pepper

1 Package Button Mushrooms
2 Cups Fresh Spinach
1/2 Cup Cilantro
1/4 Cup Jarred Jalapenos (optional)

Steps:

  • Prepare the homemade pizza dough. Allow dough to rise for 1-2 hours.Feel free to use a homemade or premade gluten free pizza crust if you'd like to keep this recipe gluten free. The process of making gluten free pizza crust differs from regular pizza crust, so be sure to read and follow the directions thoroughly for the best results.
  • Heat oven to 350 degrees.
  • Place chicken breasts on baking pan. Drizzle olive oil over chicken breasts and add garlic powder, smoked paprika, cayenne pepper, kosher salt, and pepper. Make sure chicken is coated in spices.
  • Bake chicken breasts for 20-22 minutes (or until internal temperature has reached 165 degrees Fahrenheit) and remove from oven. Set aside.
  • Place BBQ sauce, tomato sauce, garlic powder, smoked paprika, oregano, thyme, kosher salt and pepper in a small bowl. Stir until combined.
  • Chop button mushrooms, fresh spinach, and cilantro. Dice the chicken into chunks. Shred Gouda cheese.

  • Roll out 2 pizza crusts. Place the pizza crusts on two separate pizza pans. On each crust place 1/2-3/4 cup of sauce, sliced mushrooms, spinach, chicken, and Gouda (in that order).
  • Bake pizzas for 10-12 minutes or until cheese is golden and bubbly.
  • Remove from oven and garnish with pickled jalapenos and cilantro. Slice and serve.
