SMOKY THREE-BEAN BEEF CHILI
Bacon, ground beef and three types of beans make this delicious chili one of the heartiest we've ever tasted. But don't take our word; taste for yourself!

Steps:
- In a bit of olive oil, sauté the onion, bacon, carrot, and celery, until the onion is soft and the bacon fat rendered.
- Add the garlic and sauté a moment more.
- Add the beef and cook until brown, breaking it up with a wooden spoon (or a potato masher).
- After the beef is browned, add the chicken stock, tomato paste, canned tomatoes, beans, and all the spices and herbs.
- Bring to a boil and simmer as long as you feel like it. It doesn't need much more cooking at this point.
- Season to taste.
- Serve garnished with tortilla chips, shredded KRAFT Cheddar Cheese, sliced scallions, PHILADELPHIA Cream Cheese, and or any other topping of your choice.
- *If you want to make the chili more spicy, double (or triple!) the amount of cayenne pepper. It is up to you.

- In 4-quart saucepan or Dutch oven, heat oil over medium-high heat. Cook celery, bell pepper, onion and garlic in oil 3 minutes.
- Stir in remaining ingredients except tortilla chips and green onions. Heat to boiling. Reduce heat; cover and simmer 30 to 40 minutes, stirring occasionally, until vegetables are tender and flavors are blended.
- Top individual servings with tortilla chips and green onions.

- Microwave onions, bell peppers, chili powder, oil, garlic, cumin, and oregano in bowl, stirring occasionally, until vegetables are softened, about 5 minute Transfer to slow cooker.
- Add all other ingredients except salt, pepper, and scallions. Cover and cook until beans are tender, 9-11 hours on low or 5-7 hours on high.
- Let chili settle for 5 min, then remove fat from surface using large spoon. Discard bay leaves. Transfer 1 Celsius cooked beans to bowl and mash smooth with potato masher. (I don't bother with this.) Stir mashed beans into chili and let sit until heated through, about 5 minute Season with salt and pepper to taste, sprinkle with scallions, and serve.

THREE BEAN CHILI
Making chili from scratch is quite simple. My recipe for Three Bean Chili can be prepared on your stovetop in about 90 minutes or slow-cooked in a crockpot all day long. It's made with ground beef, three kinds of beans, canned tomatoes and my homemade chili seasoning. It's a classic chili recipe that we have enjoyed for years. Easily catered to the likes and dislikes of spiciness.

- Brown ground beef with some salt and pepper, add your fresh onion if using, if using dry it's not necessary. Drain any excess grease.
- Dump everything in your crock pot and cook on low 6-8 hours. (or cook on the stove top by simmering for 60-90 minutes)

- Sauté vegetables: In a large heavy-bottomed pot or Dutch oven, heat oil over medium heat. Add the onions and all three peppers. Sauté (sweat), stirring occasionally, until softened, about 7-8 minutes. Add the garlic, chili powders, cumin, paprika, oregano and coriander. Season with 1 teaspoon of salt and ½ teaspoon of ground black pepper. Cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, until the tomato paste is caramelized, about 2 minutes.
- Deglaze the pan: Slowly add the beer to deglaze the pan, using the back of a wooden spoon to scrape up any browned bit from the bottom of the pan. Bring to a simmer. Add the tomatoes and bay leaf. Increase heat to medium-high and bring back to a simmer. Immediately reduce heat to maintain a gentle simmer.
- Cook: Cover and simmer for 10 minutes. Remove lid, stir and continue to simmer for an additional 10 minutes.
- Add the beans and corn: Add the kidney beans, black beans, refried beans and frozen corn. Bring the soup back to a gentle simmer over medium heat. Immediately reduce to low and cook for 8-10 minutes, or until the soup is thickened and chili is warmed through. Stir in lime juice. Taste and adjust for seasoning with salt, pepper, hot sauce and/or lime juice. Use tongs to remove bay leaf and discard.
