Trying to accommodate my growing allergy to all things squash, I started with the traditional Libby's Famous Pumpkin Pie recipe and happily landed here! (Prep time doesn't include cooking sweet potatoes.)

1/2 cup light brown sugar
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 large eggs
1 3/4 cups cooked sweet potatoes, mashed and drained well (I had 1 lb.)
1/2 cup pure maple syrup
1 cup 1% low-fat milk
9 inches unbaked pie shells

Steps:

  • Preheat oven to 425* F.
  • Combine dry ingredients.
  • Beat eggs and add sweet potatoes and sugar-spice mixture.
  • Carefully stir in maple syrup and milk.
  • Pour into shell.
  • Bake on center rack for 15 minutes.
  • Lower temp to 350, rotate the pie 180 degrees, and bake until knife inserted in center comes out clean, 40-45 minutes.
  • Let cool, at least slightly!
  • ***Do be sure to drain the cooked sweet potatoes well or your pie will be a bit oozy -- not that it will change the flavor!***.

If you love sweet potato, try this cake recipe enriched with a little bourbon and sweetened with maple syrup, plus the crunch of pecans.

¼ cup unsalted butter, softened
¼ cup light brown sugar
¼ cup pure maple syrup
1 tablespoon bourbon
½ teaspoon kosher salt
2 cups chopped pecans
1 teaspoon butter, or as needed
3 ¼ cups all-purpose flour, plus more for dusting
2 teaspoons ground cinnamon
1 ½ teaspoons baking soda
½ teaspoon kosher salt
½ cup unsalted butter, softened
1 cup white sugar
1 cup light brown sugar
4 large eggs, at room temperature
2 cups mashed sweet potatoes
1 tablespoon bourbon
½ cup buttermilk
½ cup sour cream
½ cup pure maple syrup
¼ cup unsalted butter, melted
¼ cup bourbon
1 (7 ounce) can whipped cream, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place the oven rack in the center of the oven. Line a baking sheet with aluminum foil.
  • Combine softened butter and brown sugar in a medium-sized bowl; stir until well combined. Add maple syrup, bourbon, and salt. Stir in pecans and mix until well coated. Set topping aside.
  • Butter a 10-inch tube pan. Line the bottom of the pan with parchment paper; butter the parchment paper and lightly dust with flour. Evenly spread topping into the bottom of the tube pan and set aside.
  • Whisk flour, cinnamon, baking soda, and salt together in a bowl.
  • Mix softened butter, sugar, and brown sugar together in the bowl of a stand mixer. Mix on medium speed until well combined, 3 to 4 minutes; the mixture will be a bit grainy in appearance. Add eggs, 1 at a time, mixing on medium speed after each addition. Use a spatula to scrape down the bowl as needed. Add sweet potatoes and bourbon and mix on medium speed until well combined, scraping the bowl as needed.
  • Combine buttermilk and sour cream in a separate bowl.
  • Add 1/2 the flour mixture to the mixing bowl and mix on low speed until well blended. Add 1/2 the buttermilk mixture and beat on low until blended, scraping the bowl as needed. Add remaining flour to the mixing bowl and continue mixing. Add remaining buttermilk mixture and continue beating on low speed until batter is thick and smooth.
  • Pour batter into the prepared tube pan and place pan on the prepared baking sheet.
  • Bake in the preheated oven until a wooden skewer inserted in the center of the cake comes out clean, 65 to 75 minutes. Remove cake from the oven and leave in the pan.
  • Prepare glaze by combining maple syrup, melted butter, and bourbon in a bowl. Use a wooden skewer to poke holes in the warm cake in the pan. Spoon 1/2 the glaze over the bottom of the cake.
  • Allow cake to cool on a wire rack, 20 to 25 minutes.
  • Invert cake onto a serving plate, remove parchment paper, and drizzle remaining glaze over the top of the cake. Serve with whipped cream.

I created these candied sweet potatoes with maple syrup to entice my young children to eat sweet potatoes. They didn't like them plain and none of us liked recipes using marshmallows, pineapple, etc. This slightly-sweet version fit the bill. The kids are grown-up now, but still request this be served every Thanksgiving.

2 ½ pounds sweet potatoes, peeled and cubed
butter-flavored nonstick cooking spray
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon ground nutmeg
½ teaspoon ground allspice
¼ cup pure maple syrup
3 tablespoons salted butter, melted

Steps:

  • Bring a pot of water to a boil; add sweet potatoes. Continue to boil until they are easily pierced with a knife, 15 to 20 minutes. Drain.
  • While potatoes boil, preheat the oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking pan with cooking spray.
  • Mash the potatoes thoroughly in a bowl. Mix cinnamon, salt, pepper, nutmeg, and allspice together and stir into the potatoes. Transfer to the prepared baking pan. Mix maple syrup and butter together and drizzle over top.
  • Bake in the preheated oven until heated through, 5 to 10 minutes.

4 medium sweet potatoes, peeled, sliced 1 1/2-inch thick (3 lbs)
1/2 teaspoon salt
3/4 teaspoon fresh ground pepper
3 tablespoons unsalted butter, cut into 1/2-inch pieces
1/3 cup pure maple syrup
1/3 cup water

Steps:

  • Preheat oven to 400 degrees. In a large saucepan, cover the sweet potato slices with water and bring to a boil. Reduce heat to moderate and cook until just tender. About 5 minutes. Drain well.
  • Arrange potato slices in a large casserole. Season with salt and pepper and then dot with butter pieces. Drizzle potatoes with maple syrup, sprinkle with water and bake for 25 minutes or until tender and lightly browned. If necessary, you can broil the casserole for a minute or two before serving.

4 medium sweet potatoes
1/2 stick butter, softened
1/4 cup sugar
3/4 cup brown sugar
2 eggs, beaten
1 teaspoon pure vanilla extract

1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/2 teaspoon salt
3/4 cup evaporated milk
1 unbaked pie crust
1 cup heavy whipping cream
1/4 confectioners' sugar
2 tablespoons maple syrup

Steps:

  • Preheat oven to 350°F. Bake sweet potatoes for 1 hour in the oven on a baking sheet. When done, let cool. Scrape the pulp out of the skin, transfer to a large bowl, and mash. Set aside. In a medium bowl, beat together butter, sugar, and brown sugar until creamy. Add eggs, vanilla, cinnamon, ginger, nutmeg, allspice and salt. Add evaporated milk and stir mixture into sweet potatoes. Beat together with mixer until smooth and pour into an unbaked pie shell. Bake on bottom rack of oven for 1 hour or until center of pie is firm. Serve warm. Add dollop of whipped cream if desired. MAPLE WHIPPED CREAM: In a medium bowl, beat together whipping cream and confectioners' sugar. Add maple syrup. Beat together until soft peaks form.

PAT My sweetie and her mama love their sweet potatoes. You think maybe that has something to do with why they are so sweet? Gina created this extra-special dish for the mamas in our lives, but I love to prepare these potato cakes for her on Mother's Day and serve Miss Gina in bed, of course.

Yield serves 4 as a side dish

Number Of Ingredients 14

1 pound sweet potatoes, peeled
1 small yellow onion, grated
3 or 4 green onions, finely chopped
1/3 cup all-purpose flour
2 large eggs, lightly beaten
1 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup peanut oil, for frying
1 recipe Mama Callie's maple syrup (recipe follows)
3/4 cup water
1 cup light-brown sugar
Small pinch of kosher salt
(makes 3/4 cup syrup)

Steps:

  • Grate the sweet potatoes into a medium mixing bowl. Add the grated onion, green onions, flour, beaten eggs, paprika, salt, and pepper, and mix well.
  • Heat the peanut oil in a large, deep cast-iron skillet over medium heat. Working in batches, drop 1/4 cup of the sweet-potato mixture into the hot oil, lightly flattening into 1/2-inch-thick pancakes with a spatula. Fry until golden and crisp, about 3 to 4 minutes per side.
  • Transfer to a paper-towel-lined sheet tray to drain. Sprinkle with salt. Repeat with remaining pancakes.
  • Combine the ingredients in a medium saucepan over medium heat. Bring the mixture to a boil, then reduce heat and simmer for 25 to 30 minutes, stirring occasionally, until thick and syrupy.
  • Don't grate the sweet potatoes until just before you're ready to mix and cook; otherwise, they might turn brown and ruin your beautiful cakes! If you've gotten ahead of yourself, or are serving your brunch buffet-style, hold the cakes warm in a 200-degree oven until ready to serve.
