CHIPOTLE RANCH DIP
I came up with a very quick, easy lower-in-fat dip or sauce to make with those leftover chipotle peppers. This dip combines the smoky chipotle with the great seasoning of ranch dressing mix. Makes a great veggie dip, or even a topping on hamburgers or Mexican foods. Chipotle peppers are very spicy; start with one and taste. Removing seeds will tone down the heat. I usually use 2 with seeds. You can also substitute low-fat Greek yogurt in place of the sour cream.

- Whisk the mayonnaise, sour cream, ranch dressing mix, green onions, garlic, lime juice, and chipotle chile together in a bowl until blended. Serve immediately, or refrigerate until needed.

VEGGIE BASKET WITH SMOKEY RANCH DIP

Steps:
- Smokey Ranch Dip:
- Put all of the ingredients, except bell pepper, into a mixing bowl and whisk until well mixed. Refrigerate until ready to use. Scoop into a hollowed out bell pepper to serve.
- Veggie Basket:
- Bring a large pot of boiling salted water to a boil. Drop the green beans, asparagus spears, and broccoli florets, 1 vegetable at a time, into the boiling water and cook for 1 to 2 minutes or until tender. Immediately remove vegetables to a bowl of ice water to stop the cooking. When cool, drain completely.
- Arrange blanched vegetables and all other vegetables as desired on a platter. Serve with the dip.
SMOKY RANCH DIP
I got this recipe from the Food Network (Party Line with the Hearty Boys). We served this at my daughter's first birthday party, and it was really very tasty with the raw veggies, especially the red bell pepper strips. Please, please try to find the smoked paprika; it's the key to this dip.

- Put all of the ingredients (except for what you're going to use to hold the dip), into a mixing bowl and whisk until everything is well mixed.
- Refrigerate the dip until you are ready to use it.

SMOKY RANCH DIP & GAME DAY SNACK TRAY

- Combine all spices in a small food processor. Pulse several times, until mixture is more powder-like.
- Mix 3 tablespoons of the ranch seasoning (which is the equivalent of 1 packet of store-bought ranch) with 16 oz sour cream. Let sit for several hours, stir, then serve.
