SIMPLE SMOKED CHICKEN SALAD RECIPE



Simple Smoked Chicken Salad Recipe image

This recipe calls for smoked chicken, but if you don't have that you can use any kind of chicken and add some liquid smoke or smoked paprika... Or it works great as a base recipe to follow for regular chicken salad.

1 cup celery, finely chopped
4 cups cooked chicken (smoked)
1 cup onion, finely chopped
1/2 teaspoon salt
1/4 teaspoon cracked black pepper
1 1/4 cups mayonnaise

Steps:

  • *In a food processor fitted with a metal blade, add celery and pulse until it turns into a minced consistency. Remove from food processor and place in a large mixing bowl.
  • Add 2 cups of chicken to food processor and pulse until desired consistency is reached; transfer to the mixing bowl with the celery and pulse the remaining chicken in the food processor.
  • Add onion, salt, pepper, and 1 cup mayonnaise to the celery and chicken; stir until blended. Add more mayonnaise if necessary.
  • Serve on whole grain bread or on top of Triscuits for a healthy snack or light lunch.
  • *If you like bigger chunks of celery, you can skip the first step and place chopped celery right into the mixing bowl.
  • Try some additions if you'd like: Hard boiled eggs, Grapes, Apples, Chopped almonds or walnuts, Raisins, Cucumber, Pickle Relish.

5 pounds chicken breasts
2 tablespoons ground black pepper
1 tablespoon celery salt
1 pound celery, diced
1 medium red onion, diced
1 teaspoon caraway seeds
30 ounces mayonnaise

Steps:

  • Boil chicken breasts in a pot filled with water until no longer pink in the centers and juices run clear, about 40 minutes.
  • While chicken finishes boiling, preheat an outdoor charcoal grill for medium-high heat and lightly oil the grate. Place approximately 10 coals off to one side and light; coals are ready when they have some white dust.
  • Add hickory chips to a container or on aluminum foil on top of coals. Place chicken breasts onto the preheated grill as far away from the heat as possible.
  • Smoke chicken just until a light smoke is apparent, no more than 15 minutes. Transfer chicken to a plate to cool, about 10 minutes.
  • Dice each chicken breast; sprinkle with pepper and celery salt. Place diced celery and red onion in a large bowl; add chicken 3 breasts at a time, sprinkling with 1 pinch caraway seeds and mixing well after each addition. Stir in mayonnaise. Cover and refrigerate until ready to serve.

This chicken dish is full of fresh summer flavours, perfect for a quick and healthy midweek meal

500g bag new potato
2 large corn cobs
½ red onion , thinly sliced
juice 1 lime
2 tbsp olive oil
2 garlic cloves , crushed
½- 1 tsp sweet smoked paprika
4 skinless chicken breasts , each halved across the middle to make 2 thin escalopes
small bunch coriander , leaves roughly chopped
lime wedges, optional, to serve

Steps:

  • Bring to the boil a saucepan of water big enough to hold all the potatoes and corn. Cook the potatoes for 12 mins, adding the corn after 6 mins, until both are tender. Drain well.
  • Meanwhile, mix the sliced red onion with the lime juice and half the oil in a large salad bowl. Mix the remaining oil with the garlic, paprika and some seasoning in a shallow bowl, then toss in the chicken until thoroughly coated.
  • Heat a griddle pan, then griddle the chicken for 3 mins on each side until cooked through. Tip the potatoes into the bowl with the onions. Stand a corn cob on one end on a chopping board, then slice down the length, cutting off the kernels in strips. Mix into the potato salad with the coriander and seasoning, then serve alongside the smoky griddled chicken, with lime wedges, if using.

2 large skinless, boneless chicken breasts (about 1 1/2 pounds)
1/4 cup extra-virgin olive oil
1/2 teaspoon smoked paprika
Kosher salt and freshly ground pepper
1 clove garlic
3 jarred piquillo peppers (2 whole, 1 thinly sliced)
1/3 cup mayonnaise
Juice of 1/2 lemon
3 tablespoons chopped fresh cilantro
16 small Bibb or romaine lettuce leaves
2 stalks celery, thinly sliced
3 tablespoons salted Marcona almonds, roughly chopped

Steps:

  • Preheat a grill to high. Toss the chicken with 1 tablespoon olive oil, the paprika, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Grill the chicken until marked and cooked through, about 7 minutes per side. Let cool slightly, then thinly slice.
  • Meanwhile, make the dressing Combine the garlic and the remaining 3 tablespoons olive oil in a small microwave-safe bowl; microwave until the garlic is softened, about 1 minute. Transfer the garlic and oil to a blender; add the 2 whole piquillo peppers and puree until smooth. Transfer to a bowl and whisk in the mayonnaise, lemon juice and 2 tablespoons cilantro; season with salt and pepper.
  • Divide the sliced chicken among the lettuce leaves; drizzle with the dressing. Top with the celery, almonds, the remaining sliced piquillo pepper and 1 tablespoon cilantro.

This super easy to assemble chicken salad gets a smoky kick from pureed chipotles in adobo. It's great in a deli roll, or piled on top of a salad.

3 tablespoons mayonnaise
1 teaspoon rice vinegar
1 teaspoon pureed chipotles in adobo (see cooking tip)
1 teaspoon chopped fresh thyme leaves
Kosher salt and freshly ground pepper (to taste)
1/2 cup coarsely chopped celery
1/2 cup chopped onions (such as Vidalia)
1/2 cup chopped red bell pepper
3 cups shredded cooked chicken (white or dark meat, or a combination)

Steps:

  • In a large bowl combine the mayonnaise, vinegar, pureed chipotles, thyme, salt, and pepper. Stir in the celery, onions, pepper, and chicken until the chicken salad is well combined. Serve chilled.
  • Place the chicken and add-ins in a pot: Arrange the chicken in a single layer on the bottom of the pot. It's fine if they overlap a little, but they cook more evenly if they are in a single layer. Scatter the salt and seasonings over top.
  • Cover the chicken with water: If using wine, pour this over the chicken first. Pour in enough cool water to cover the chicken by an inch or so.
  • Bring the water to a boil: Place the pot of chicken on the stovetop over medium-high heat. Bring the water to a boil. You'll see some white scummy foam collecting on the surface as the water comes to a boil-if you'll be using the poaching liquid for a soup or other recipe, you can skim this off; otherwise, it's fine to leave it.
  • Reduce to a simmer, cover, and cook: As soon as the water comes to a boil, reduce the heat to low, cover the pot, and let the chicken simmer. Begin checking the chicken after 8 minutes: it is done when opaque through the middle and an instant-read thermometer in the thickest part of the meat registers 165 F. Chicken will typically finish cooking in 10 to 14 minutes depending on the thickness of the meat.
  • Remove from the poaching liquid: Remove the chicken from the poaching liquid and place it on a cutting board.
