SMOKED CHICKEN HOT WINGS
Smoked chicken wings that are tender and delicious. Serve with celery sticks and blue cheese dressing.

- Heat a smoker to 225 degrees F (110 degrees C) according to manufacturer's directions.
- Mix 1 tablespoon salt, pepper, and Cajun seasoning in a small bowl to make dry rub. Sprinkle over chicken wings.
- Cook chicken wings in the preheated smoker until tender, 1 to 1 1/4 hour.
- Combine hot pepper sauce, butter, vinegar, Worcestershire sauce, garlic powder, and salt in a small saucepan over low heat. Cook, stirring often, until butter is melted and sauce is smooth. Remove from heat.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Transfer smoked wings to a large bowl; stir in 1/2 of the sauce until wings are evenly coated.
- Grill coated wings until skin is browned and starting to get crispy, 4 to 5 minutes per side. Transfer to a large bowl and stir in remaining sauce until wings are well-coated.

If you know someone from Buffalo, they know someone who told them the secret ingredients to the Anchor Bar's famous Buffalo chicken wings. I know people from Buffalo. This is my version, as described to me many years ago, over almost as many beers.

- Combine the hot sauce, butter, vinegar, Worcestershire sauce, cayenne pepper, garlic powder, and salt in a pot and place over medium heat. Bring to a simmer while stirring with a whisk. As soon as the liquid begins to bubble on the sides of the pot, remove from heat, stir with the whisk, and set aside for use.

SMOKY BUFFALO WING SAUCE
This fabulous spicy sauce is incredibly easy to make! You can use this smoky, zippy sauce on chicken wings/drumettes, and other proteins.

Steps:
- 1. In a small saucepan over medium heat, combine all the ingredients. Bring to a simmer, whisking occasionally. Remove from heat and keep it warm until ready to serve. Just before serving, whisk again until all the ingredients are combined again.
- 2. Pour half of the sauce over cooked drumettes/wings and transfer chicken back to the oven (temperature off). Remove after 10 minutes and pour the rest of the sauce over. Serve immediately.

- When ready to cook, set the Traeger temperature to 375℉ and preheat, lid closed for 15 minutes. Grill: 375 ˚F.
- While grill is preheating, dry off chicken wings with a paper towel. Place wings in a large bowl and sprinkle with cornstarch, Traeger Chicken Rub and salt to taste.
- When the grill is hot, place the wings on the grill and cook for 35 minutes total, turning halfway through cook time. Grill: 375 ˚F.
- Check the internal temperature of the wings at 35 minutes. The internal temperature should be at least 165℉. However, an internal temperature of 175-180℉ will yield a better texture.
- For the Buffalo Sauce: In a saucepot, add the Franks Red Hot, mustard and butter. Whisk to combine and heat through on the stove top. Keep sauce warm while the wings are cooking.
- When wings are done, remove from grill and place into a medium bowl Pour the buffalo sauce over the wings, turning with tongs to coat. Grill: 375 ˚F.
