1 pound Ground sirloin
1 pound ground pork
1/2 pound Italian sausage (bulk)
2 whole onions (chopped)
2 jalapeno pepper (seeds and stems removed and minced)
1 cup chopped green bell pepper
8 garlic clove (chopped)
2 Tablespoons Chili Powder
3 Tablespoons brown sugar
1 Tablespoon ground cumin
2 teaspoons smoked paprika
3 Tablespoons tomato paste
1 Tablespoon ground coriander
1 Tablespoon Mexican oregano
1/2 teaspoon black pepper
1/4 teaspoon salt
2 California bay leaves
1 1/2 cup Merlot Wine
28 ounce can chopped tomatoes (fire-roasted is good here)
28 ounce can Pinto beans (drained and rinsed)
14 ounce can Kidney beans (drained and rinsed)
1 Cup water
1 teaspoon Better than Bouillon beef bouillon
1/2 cup sharp cheddar cheese (shredded)

Steps:

  • Heat a large dutch oven over medium high heat. Add 2 tablespoons olive oil.
  • Add sausage, onion, sirloin, pork, jalapeno, green bell pepper and garlic.
  • Cook 8 minutes or until sausage and beef are browned. Add chili powder and next 10 ingredients (through bay leaves) and cook 1 minute stirring constantly.
  • Stir in wine, tomatoes and drained beans. Dissolve bouillon in water and add to chili. Add more water if necessary for consistency.
  • Cover and cook on low for at least 1 hour, stirring occasionally.
  • Uncover and cook on low for 30 minutes, stirring occasionally. Discard bay leaves.
  • Serving suggestions: grated cheese, saltine crackers, flour tortillas, corn chips, fresh chopped onion, thin sliced radishes.

1/2 medium yellow onion (finely diced)
1 tablespoon minced garlic
1 15-oz. can pinto beans (drained and rinsed)

1 15-oz. can tomato sauce
1 15-oz. can diced tomatoes
3 tablespoons tomato paste
1 tablespoon maple syrup
3 tablespoons chili powder
2 teaspoons garlic powder

1/2 teaspoon smoked paprika

1/4 teaspoon ground pepper
1 cup beef broth (chicken broth or water works too)
shredded cheddar cheese

Steps:

  • First, heat a large stockpot over medium/high heat.
  • Then, add ground beef, yellow onion, and minced garlic and sauté for 7-10 minutes or until beef is fully browned.
  • Next, add pinto beans, kidney beans, tomato sauce, diced tomatoes, tomato paste, and maple syrup to the pot and stir to combine.
  • Add spices and 1 cup of broth and stir to combine.
  • Bring beef chili to a boil, then reduce heat to low and let simmer for 10-15 minutes to thicken.
  • Top with your favorite toppings and enjoy!

1 onion, chopped
5 cloves garlic, minced
2 small green bell peppers, seeded and chopped
1 habanero pepper, seeded and chopped
2 pounds lean ground turkey
2 tablespoons chili powder
2 teaspoons red pepper flakes
1 tablespoon paprika
1 tablespoon ground cumin
2 teaspoons dried oregano
1 teaspoon ground black pepper
1 (1 ounce) envelope instant hot chocolate mix
2 teaspoons seasoned salt
1 tablespoon Worcestershire sauce
1 teaspoon liquid smoke flavoring
2 (14.5 ounce) cans diced tomatoes with green chile peppers, drained
1 (8 ounce) can tomato sauce
1 (15 ounce) can kidney beans, drained
½ cup cheap beer
½ cup canned whole kernel corn
1 tablespoon hot pepper sauce

Steps:

  • Heat the olive oil in a large saucepan over medium heat. Add the onion, garlic, green peppers and habanero pepper; cook and stir until the onion is transparent. Push these to one side of the pot, and crumble in the ground turkey. Cover, and cook for about 5 minutes, stirring occasionally, or until the meat is no longer pink. Stir everything together so the garlic doesn't burn.
  • Season with chili powder, red pepper flakes, paprika, cumin, oregano, pepper, hot cocoa mix and seasoned salt. Stir in Worcestershire sauce, liquid smoke, diced tomatoes with green chilies, tomato sauce and kidney beans. Crack open a beer, and pour in about 1/3. Drink or discard the rest. Partially cover the pan, and simmer over medium heat for about 50 minutes, stirring occasionally.
  • Mix in the corn and hot pepper sauce, and simmer for about 10 more minutes. Remove from the heat and allow to cool for a few minutes before serving.

1/3 cup chili powder
1 1/2 tablespoons cumin seeds, toasted and crushed or 1 tablespoon cumin powder

1/2-1 tablespoon cayenne pepper
1 tablespoon onion powder
1 tablespoon dried garlic
1 tablespoon dried oregano

Steps:

  • Heat oil in large pot.
  • Cook bell pepper, onion, garlic, for 5 minutes.
  • Add meat, cook till browned.
  • Add remaining ingredients except for the corn meal mixture.
  • Cook for 2 hours over low heat or in a crock pot.
  • Stir in the corn meal mixture
  • Taste to see if it `s to your HEAT!
  • Season adding salt and pepper as you like, Cook 30 more minutes.
  • Remove bay leaves and garnish as you like.
  • Or:
  • Skip the oil and browning just go ahead and toss all into a crock pot for 8 hours. Giving it a stir when passing by.

1 lb ground turkey thighs
1 lb ground turkey breast
2 cans (14 oz each can) diced tomatoes
1 can (14 oz) kidney beans
1 can (14 oz) white breans
6 oz tomato paste
32 oz chicken broth
1 large onion (finely minced)
1 jalapeño pepper (chopped)
1 green bell pepper (chopped)
8 cloves garlic (finely minced)
4 tbsp chili powder
1 1/2 tsp cayenne pepper
2 tsp smoked paprika
1 tsp ground cumin
2 tsp dried oregano
2 tsp brown sugar
2 tsp cocoa powder
1/2 tsp salt
4 tbsp olive oil
2 cups Sharp Cheddar (shredded, for serving)
8 tbsp sour cream (for serving)

Steps:

  • In a large Dutch Oven heat 2 tablespoon of olive oil. Add onion, garlic and both types of peppers and cook over medium heat stirring occasionally for 10 minutes.
  • In a medium sauté pan heat the remaining 2 tablespoons of olive oil and add ground turkey thighs and breast. Cook, stirring constantly and breaking up the big chunks with a fork until the liquid evaporates and meat is thoroughly cooked and slightly brown, about 7-10 minutes.
  • Add cooked meat into a pot with an onion and pepper mixture.
  • Pour in diced tomatoes and beans.
  • Dilute tomato paste with 1 cup of chicken broth and add into a pot.
  • Add chili powder, cayenne pepper, smoked paprika, oregano, cumin, brown sugar, cocoa powder, the remaining chicken broth and ½ teaspoon of salt.
  • Give everything a good stir, cover with a lid and reduce the heat to low. If the soup becomes too thick, add ½ cup of chicken broth.
  • Simmer for 1 hour.
  • Adjust the seasoning and serve immediately with shredded Cheddar cheese and a dollop of sour cream.

1 (15-ounce) can crushed tomatoes
1 (14.5-ounce) can petite diced tomatoes
3 tablespoons chili powder
2 teaspoons smoked paprika
2 teaspoons dried oregano
1 1/2 teaspoons ground cumin
1 teaspoon hot sauce, optional
Kosher salt and freshly ground black pepper, to taste
1/2 cup sour cream
2 green onions, thinly sliced
1 cup corn chips

Steps:

  • Heat olive oil in a large skillet over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat. Add garlic, onion and chili. Cook, stirring occasionally, until tender, about 4-6 minutes. Place ground beef mixture into a 6-qt slow cooker. Stir in beef stock, kidney beans, black beans, crushed tomatoes, diced tomatoes, chili powder, paprika, oregano, cumin and hot sauce; season with salt and pepper, to taste. 1 tablespoon Worcestershire sauce
1 tablespoon Montreal Steak Seasoning
1 tablespoon cooking oil
1 green pepper (diced)
1 yellow onion (diced)
3 cloves garlic (minced)
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 teaspoon chipotle powder
14.5 ounce can crushed tomatoes
14.5 ounce can diced tomatoes (undrained)
14.5 ounce canned beans (drained and rinsed)
4.5 ounce canned diced chilis
2 tablepsoons tomato paste
1 cup beef broth
2 teaspoons salt
1/2 teaspoon ground black pepper (or to taste)

Steps:

  • Mix the ground beef with the Worcestershire sauce and Montreal Steak Seasoning. You can also use 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 1/2 teaspoon of garlic powder instead.
  • Form the meat mixture into a giant meatball, then flatten it down a wee bit but leave it quite thick.
  • In a large skillet or Dutch oven, heat the oil over medium-high heat and sautee the onions, garlic, and bell pepper for 4-5 minutes or until the onions are translucent.
  • Add the spices to the sauteed veg and cook for an additional minute or until fragrant.
  • Add the crushed tomatoes, diced tomatoes, diced chilis, drained and rinsed canned beans, tomato paste, and beef broth to the veggies. Bring this up to a simmer. Season with the salt.
  • Fire up your Traeger or pellet smoker to 225-F.
  • Put the chili on the bottom rack of your smoker, and position the giant beef flattened meatball on the rack above the chili, placing it directly ABOVE the chili pot so that all the beef drippings go into the chili.
  • Cook it at 225-F for about an hour, then turn the heat up to 325-F and cook for an additional 40-60 minutes or until the beef comes to an internal temperature of 165-F. Use your probe or digital meat thermometer to check the temperature.
  • Stir the chili every 30-40 minutes, and if it starts to get too thick, add up to 1 cup of beef broth a bit at a time so it doesn't get too runny. Heat the broth first so you don't drop the temperature of the chili.

  • While your grill preheats, prepare your meat and vegetables for smoking. Lay a large piece of aluminum foil on a baking sheet.   • Preheat the smoker. Preheat your smoker to 225 degrees F with your favorite hardwood. I like to use oak or hickory for this recipe.
  • Make the chili. In a large stock pot or cast iron pan (that can be transferred to your smoker), heat 1 Tablespoon of olive oil over medium high heat until it is shimmering. Add in most of your chopped onions (reserve some for topping the hot dogs later) and bell peppers, and cook for 3-5 minutes, or until the onions are slightly translucent and the peppers start to soften. Add in the ground beef and the garlic and cook for 3-5 more minutes, breaking apart the ground beef into small pieces with your spoon or spatula. Cook until the ground beef is cooked through. Carefully pour in the crushed tomatoes and sprinkle in the seasoning. Stir to thoroughly incorporate and taste. Add salt and pepper, if needed.
