Time 1h40m

Yield 6

Number Of Ingredients 13

1 cup ketchup
1 cup soy sauce
½ cup white sugar
¼ cup strawberry jelly
2 tablespoons prepared horseradish
2 tablespoons tomato paste
1 tablespoon butter
1 tablespoon vegetable oil
1 tablespoon vinegar
½ teaspoon salt
½ teaspoon ground black pepper
1 pinch ground paprika
1 ½ pounds bone-in pork chops

Steps:

  • Combine ketchup, soy sauce, sugar, strawberry jelly, horseradish, tomato paste, butter, oil, vinegar, salt, black pepper, and paprika together in a saucepan over low heat; cook and stir until marinade is smooth, about 5 minutes.
  • Place pork chops in a bowl; add marinade. Marinate pork chops in the refrigerator for 1 hour.
  • Remove pork chops from marinade, reserving the extra marinade.
  • Light charcoals in the grill and add several bags of fall leaves throughout getting the coals ready for grilling.
  • Place pork chops on the grill when the coals are about halfway ashed over. Baste pork chops with marinade and flip pork chops. Cover grill with lid so smoke from the leaves can permeate the pork chops. Cook until pork is slightly pink in the center, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

MESQUITE GRILLED PORK CHOPS

Mesquite Grilled Pork Chops image

This recipe comes from Weber's Big Book of Grilling. I have to admit I was skeptical when I read the list of ingredients for the paste - I just wasn't sure if I would like the flavor combinations. DH cooked these to perfection and the flavor was great. I highly recommend this recipe for grilled pork chops.

SMOKEY MESQUITE PORK CHOPS

Smokey Mesquite Pork Chops image

This recipe was on the Durkee Grill Creations Smokey Mesquite bottle. I shop at Sam's Club and they had samples and they were so good that I had to get everything to make these. It is not on the bottle that I got the last time so I thought I would post it here. I have never used the bourbon which is optional. I also use the bone in pork chops sometimes. I have just sprinkled the seasoning over before frying and they turn out great. I have added the marinate time to the prep time. Enjoy! They recipe calls for Durkee grill creations seasoning not powder but it keeps coming up as powder.

HOW TO MAKE SMOKED PORK CHOPS IN YOUR ELECTRIC SMOKER
Smoked pork chops are party-pleasers in any gathering. Pork, especially the thinner chops, does not take a long time to cook. The meat is very easy to smoke and the best flavors are brought out by simply seasoning with salt and pepper or using a dry rub. What you really need to watch out for is the most common culinary offense: Overcooking the pork chops.

From what I gather from smoking a big butt in Oak is that the smoke won't penetrate more than 1/4 inch. So, if you think the outside is "too smokey" you can can adjust the ratio of inside-to-outside.
