- Mix 1 cup mayonnaise, 1/4 cup each chopped cilantro and scallions, 1 minced chipotle in adobo, 1 tablespoon lime juice, 1 teaspoon sugar, and salt. Toss with 2 pounds boiled sliced sweet potatoes.

Sweet, smoky, spicy and smooth. From Ellen Helman's "Home Cooking wit the Uncommon Gourmet". Perfect as a side to grilled meats. These are great as they are or are perfect fwith other seasonings that you may like....a sprinkling of brown sugar, cinnamon, nutmeg - or turn up the heat with a bit more cayenne........whatever suites your taste.

- Boil the potatoes in a large pot of salted water for 12-15 minutes until fork tender.
- Drain well and mash.
- Add the salt, pepper, liquid smoke, cayenne, butter, and light cream. Mix until completely incorporated.
- Serve at once.

- For the sweet potatoes: Preheat the oven to 350 degrees F.
- Toss the sweet potato with olive oil and a sprinkle of salt and pepper on a baking sheet. Roast until tender, about 45 minutes.
- For the mashed potatoes: Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and cook the potatoes, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling) and add the sweet potatoes. Mash the potatoes with the milk and butter using a fork or potato masher. Stir in the chopped chipotles, 2 teaspoons salt and freshly ground pepper to taste.

SMOKED PAPRIKA SWEET POTATOES (PUREE OR MASHED)
Seriously, there aren't words to describe how delicious this is. I first had it in a local gourmet organic restaurant, and couldn't get over how delicious it was. I later found the recipe on the web and was surprised how simple it was. Buying some nice smoked paprika is a MUST, don't even bother trying it without it. The flavor from the smoked paprika combined with the sweetness of the potatoes makes the dish extraordinary. (Don't worry if your grocery store only sells "yams", in north America yams and sweet potatoes are the same thing)

Steps:
- Pierce washed potatoes, wrap in foil, place on baking tray in oven at 400 degrees for 1 hour or until very tender.
- When cooled just enough to handle, peel off the skin and cut into chunks that fit your food processor or extremely powerful blender.
- Melt the butter and the spices together in the microwave.
- Blend the potato with the melted spiced butter and the cream following the instructions of your processor or blender, serve when blended throughout.
- *I used an extremely high powered blender (a vita mix) and had to stop and stir while pureeing multiple times so as to not burn out the motor. If it is too thick, add some more cream or milk to get it to the consistency you want it. Feel free to add more smoked paprika if you enjoy the flavor as much as I do!

- Fire up. Prepare a charcoal grill for indirect cooking by placing a chimney full of lit charcoal briquets on one side of the grill's charcoal grate in order to create direct and indirect cooking zones. Adjust the smoker or grill vents to bring the ambient temperature to about 325°F. On a gas grill, adjust the temperature knobs so that one half of the grill is off and the other half is heated enough to maintain a temperature of approximately 325°F on the indirect side.
- Prep. As the grill comes to temperature, cut each sweet potato in half lengthwise and wrap each half in a single layer of aluminum foil.
- Cook. Place the foil wrapped sweet potatoes on the main cooking grate as far away from the heat source as possible. Cover the grill, and allow the sweet potatoes to cook until the flesh is fork tender, about 1 hour.
- Remove the foil wrapped sweet potatoes from the grill and add 2 to 3 chunks of your favorite smoking wood to the hotter side of the grill. For a gas grill, fill a smoking box or smoking pouch with wood chips and add to the grill.
