Steps:
- Heat oven to 375°F. Combine topping ingredients and set aside.
- Cook pasta al dente according to package directions.
- Cook onion, mushrooms, and garlic in butter until tender, about 5 minutes.
- In a large bowl combine soup, mushroom mixture, milk, seasonings, and ½ of the cheese. Fold in turkey and pasta.
- Spread into a 9x13 casserole dish, top with remaining cheese, and sprinkle with topping.
- Bake 30-35 minutes or until hot and bubbly.

- In a large bowl, combine the first six ingredients; set aside. , In a small saucepan, combine the soup, milk, 1/2 cup cheese, wine, lemon juice and salt. Cook and stir over low heat until smooth and heated through. Pour over turkey mixture; toss to coat., Transfer to a 2-qt. baking dish coated with cooking spray. Top with bread cubes. , Bake, uncovered, at 375° for 25 minutes. Sprinkle with remaining cheese; bake 5 minutes longer or until cheese is melted.

LOW-CARB LEFTOVER TURKEY CASSEROLE
This recipe for Low-Carb Leftover Turkey Casserole boasts loads of bacon, broccoli, and blue cheese! It's a delicious way to give leftover turkey a fresh, new, facelift. This turkey casserole can work for low-carb, keto, gluten-free, grain-free, diabetic, LC/HF, and Banting diets.

- Preheat oven to 350º Fahrenheit. Grease an 8" X 8" baking dish or 6-8 cup casserole dish with butter or coconut oil. Line a plate with a paper towel.
- Spread cooked chicken or turkey evenly in the prepared baking dish.
- Fill the lower part of a steamer with 1 1/2 to 2 inches water. Bring to a simmer.
- Place broccoli in the top part of the steamer. Sprinkle lightly with salt. When water in the lower steamer comes to a simmer, place the top portion of the steamer on top and cover.
- Steam broccoli for 7-10 minutes or until crisp tender. Transfer to the prepared baking pan. Stir the turkey/chicken and broccoli gently a few times to mix.
- Meanwhile, heat a large skillet over medium-high heat. When skillet is hot, add bacon. Cook bacon until crisp, then transfer to the paper towel lined plate to drain. Sprinkle cooked bacon over the chicken and broccoli mixture.
- In a large mixing bowl, whip cream cheese until smooth using a mixer. Blend in the vinegar, garlic, and onion powder. Gradually add the stock, a tablespoon or two at a time, blending between each addition. Stir in 1/2 cup of the blue cheese crumbles.
- Spread the cream cheese mixture evenly over the turkey, broccoli, and bacon. Sprinkle with the remaining blue cheese. Bake for 30-37 minutes or until cheese has melted and casserole is bubbly in the center.
- If the top is not as browned as you would like, place the dish under the broiler for a few minutes. Allow to cool 5-10 minutes before serving.

I came up with this recipe to use some leftover smoked turkey without turning it into Tetrazini or using a cream sauce. I used whatever I had on hand at the time. All measurements of ingredients are approximations.

- Cook pasta in boiling salted water until al dente. Drain, do not rinse set aside.
- Saute garlic, onions, green onions and celery in olive oil until limp but not browned about 5 minutes.
- Add mushrooms, cook until liquid has evaporated.
- Add wine to deglaze the pan.
- Add frozen peas, seasoning, parsley, red pepper, salt & pepper. Cook an additional 2 minutes.
- Add turkey and pasta, cook until heated through. Adjust seasoning.
- Drizzle high quality olive oil over dish to taste before serving. (Or leave it out if you do not want the extra fat/calories).
TURKEY VEGETABLE CASSEROLE
I use a very thick slice of smoked or Cajun seasoned turkey from the deli for this recipe except after Thanksgiving when I use leftover roasted turkey. This is another dish that my vegetable hating child gobbled up. She's 18 now and away at college and still looks forward to having it. My vegetarian son loves it when I leave...

- 1. Preheat oven to 350. Spray a 9x13 pan with cooking spray. Cook macaroni and drain. Cook vegetables with celery salt and onion powder. Drain when carrots are tender.
- 2. Combine Velveeta, soup and water in a microwave safe dish and microwave for about 4-6 minutes until the Velveeta is melted. Stir occasionally to mix.
- 3. In a large bowl combine all ingredients and stir until blended.
- 4. Pour into cooking spray coated 9x13 dish and bake for 20 minutes or until warmed through.
