Loaded with garden-fresh vegetables, this Mexican specialty is sure to be popular with the whole family. Plus, it's a snap to prepare on a busy weeknight.

Number Of Ingredients 15

1 pound lean ground turkey
1 cup chopped red onion
1 to 2 garlic cloves, minced
2 cups julienned zucchini
1 cup salsa
1 cup frozen corn
1 cup julienned sweet red pepper
1 can (4 ounces) chopped green chilies
2 tablespoons minced fresh cilantro
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
8 flour tortillas (8 inches)
2 cups shredded reduced-fat Mexican cheese blend

Steps:

  • In a large nonstick skillet, cook the turkey, onion and garlic over medium heat until meat is no longer pink; drain. Add zucchini, salsa, corn, red pepper and chilies. Reduce heat; cover and simmer until vegetables are tender. Stir in seasonings., For each quesadilla, place one tortilla in an ungreased nonstick skillet. Sprinkle with 1/4 cup cheese. Top with 1/2 cup filling, then sprinkle with another 1/4 cup cheese. Cover with another tortilla. Cook over medium heat, carefully turning once, until lightly browned on both sides and cheese begins to melt. Cut into eight wedges.

1 ripe avocado, pitted and peeled
4 oz (half of 8-oz package) regular cream cheese or reduced-fat cream cheese (Neufchâtel), softened
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup julienne-cut oil-packed sun-dried tomatoes, drained
1 can (4.5 oz) Old El Paso™ chopped green chiles, drained
1 cup shredded Monterey Jack cheese with jalapeño peppers or regular Monterey Jack cheese (4 oz)
1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 tortillas; 8 inch)
8 slices (1 1/2 oz each) smoked turkey breast
1 cup shredded Cheddar cheese (4 oz)
2 tablespoons butter or margarine
4 ripe olive slices, if desired

Steps:

  • In medium bowl, mash avocado. Stir in cream cheese, cumin, garlic powder, salt and pepper. Stir in tomatoes and chiles.
  • Sprinkle 3/4 cup of the Monterey Jack cheese on 4 of the tortillas. Top each with turkey slice. Spread avocado mixture over turkey. Top with remaining turkey slices. Sprinkle with 3/4 cup of the Cheddar cheese. Top with remaining tortillas.
  • In 12-inch skillet, melt 1/2 tablespoon of the butter over medium heat. Add 1 quesadilla; cook 2 to 4 minutes, turning once, until golden brown. Repeat with remaining butter and quesadillas. Garnish with remaining Monterey Jack and Cheddar cheeses. Top each with olive slice.

2 flour tortillas
1/2 cup shredded cheddar cheese (2 ounces)
1/2 cup chopped smoked turkey
1/2 granny smith apple, peeled and thinly sliced
store-bought salsa, for serving (optional)

Steps:

  • Heat an empty large skillet over medium heat until the surface is hot. Place 1 tortilla in the skillet and cook until the underside is warm, about 20 seconds. Flip the tortilla over. Sprinkle the surface with half of the cheese, the turkey, the apple, and then the remaining cheese. Top with the second tortilla.
  • Cook until the underside is toasted, about 1 1/2 minutes. Flip the quesadilla and cook until the second side is toasted, about 1 1/2 minutes more.
  • Transfer the quesadilla to a cutting board and cut into 6 wedges. Serve hot, with the salsa, if desired.

2 flour tortillas
2 tablespoons cranberry sauce
3 tablespoons grated Jack or Cheddar
2 tablespoons leftover stuffing
2 tablespoons cooked and chopped green beans
3 tablespoons chopped cooked turkey
1 teaspoon chopped jalapeno peppers
Vegetable oil cooking spray

Steps:

  • Place 2 tortillas on your board. Spread 1 with cranberry sauce and set aside. Sprinkle the cheese over the other one and crumble the stuffing on top. Add the green beans, turkey, and jalapeno peppers. Pick up the first tortilla and place it cranberry side down onto the filled one. Press gently but firmly to keep the quesadilla together.
  • Spray a nonstick skillet with cooking spray and put it over medium heat. Place the quesadilla in the skillet and cook until the bottom is lightly browned and the cheese is melted, about 2 minutes. Flip the quesadilla and cook it on the other side for another 2 minutes. Slide it onto a cutting board, cut it into wedges, and serve.

Corn and Smoked Turkey Pudding image

2 tablespoons butter
1/2 cup finely sliced onions
1 cup finely sliced red bell peppers
1 tablespoon cornstarch dissolved in tablespoons chicken broth
1 cup light cream
4 eggs, separated
1 teaspoon Dijon mustard
2 cups thawed frozen corn kernels
1 cup shredded smoked turkey or chicken breast
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees.
  • Heat butter in a 9-inch skillet. Cook the onions and peppers until soft and onions are a little brown. Cool to room temperature. Butter a 2 quart baking dish (not too deep).
  • When cool transfer these to a mixing bowl and add cornstarch, cream, egg yolks and mustard. Whisk well to blend.
  • Fold the corn and turkey into the egg mixture. Season with salt and pepper. Beat the egg whites until they hold stiff peaks but are not dry and fold them into the egg yolk mixture. Transfer to the buttered baking dish and bake for 35 to 40 minutes or until brown and puffy.
  • Serve with a side dish of sliced ripe tomatoes and vinaigrette.

ANDOUILLE AND CREAM CHEESE SLIDER

1 tablespoon seafood boil seasoning
8 ounces cream cheese, softened
1 tablespoon oil
One 12-ounce jar roasted bell peppers, chopped
1 cup chopped green onion
4 to 5 slider rolls, toasted

Steps:

  • Prepare a grill for cooking over medium heat Slice the sausage on the bias 1/2-inch thick.
  • Grill the sausage until it has grill marks on each side and set aside.
  • Stir the seafood seasoning into the cream cheese and set aside.
  • Heat a skillet over medium heat and add the oil. Cook the roasted bell peppers with the green onions, stirring, until warmed.
  • Spread the cream cheese on the rolls and add the peppers and sausage. Serve immediately.
