SMOKED TURKEY SALAD WITH GRAPES, CASHEWS AND SHERRY DRESSING



Smoked Turkey Salad with Grapes, Cashews and Sherry Dressing image

Number Of Ingredients 12

2 1/4 lbs. smoked turkey meat, diced
1 1/2 lbs. California seedless grapes
1 quart celery, sliced
1 cup cashew pieces, roasted, salted
1/2 cup green onions, sliced
1/2 cup fresh parsley, chopped
1 1/2 cups mayonnaise
1/2 cup medium dry sherry
1/8 cup lemon juice
1/16 cup sugar
1/2 teaspoon salt
1 teaspoon pepper

Steps:

  • Mix together turkey, grapes, celery, cashews, onions and parsley. Add remaining ingredients and toss well. Serve with additional cashews as garnish.
  • If possible, add dressing at the last minute to keep the celery and cashews crunchy.

Smoked Turkey Salad with Grapes, Couscous, and Arugula image

1 2/3 cups water
1 cup couscous
1/2 teaspoon ground cumin
1 1/2 tablespoons minced fresh parsley leaves
a 3/4-pound piece smoked boneless turkey breast, cut into 3/4-inch cubes
2 1/2 cups red seedless grapes, halved
1/4 cup fresh red or pink grapefruit juice
1 tablespoon fresh lemon juice
1/2 cup packed fresh basil leaves, washed well, spun dry, and cut into thin strips
1 bunch arugula (about 2 cups, packed), washed well and spun dry, coarse stems discarded
2 tablespoons walnuts, toasted and chopped

Steps:

  • In a small saucepan bring water to a boil and stir in couscous. Cover pan and let couscous stand 5 minutes. Stir in cumin, parsley, and salt to taste with a fork and cool couscous mixture to room temperature.
  • In a bowl toss turkey, grapes, juices, basil, and salt and pepper to taste. Arrange arugula on 4 dinner plates and divide couscous amoung them. Top couscous with turkey mixture and drizzle any liquid remaining in bowl over salads. Sprinkle salads with walnuts.

2 cups jarlsberg cheese (8 ounces) or 2 cups swiss cheese, cut into 1x 1/4-inch strips (8 ounces)
2 cups red seedless grapes, whole (can sub 1 cup dried cranberries or dried cherries ) or 2 cups red seedless grapes, cut in half (can sub 1 cup dried cranberries or dried cherries )
1 1/2 cups slivered almonds, toasted (see 'how to' below)
2/3 cup mayonnaise or 2/3 cup salad dressing
2/3 cup sour cream
2 -4 tablespoons milk
salt and pepper
lettuce, if desired

Steps:

  • Mix turkey, cheese, grapes and almonds in very large (4-quart) bowl.
  • Mix remaining ingredients except lettuce in medium bowl. Pour over turkey mixture; mix gently. Cover and refrigerate until serving. Serve on lettuce.
  • How to Toast Nuts: To toast nuts, spread them in an ungreased shallow pan and bake at 350 degrees for 6 - 10 minutes, stirring frequently, until light brown. Or sprinkle in an ungreased heavy skillet and cook over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are light brown.

12 cups cubed cooked turkey breast
2 pounds green grapes, halved
5-1/4 cups diced celery
1 to 1-1/2 cups chopped pecans, toasted
3 green onions, sliced
2 cups mayonnaise
1-1/2 cups chicken broth
3/4 cup vinaigrette
1 tablespoon prepared mustard

Steps:

This is a salad my husband's cousin makes and all his family loves it. Toasting of almonds is 3-4 minutes not the 5 I had to post.

12 ounce(s) smoked turkey breast - (2 1/2 cups)
4 ounce(s) jarlsberg or swiss cheese (1 cup)
1 cup(s) seedless red grapes, halved
3/4 cup(s) slivered alomnds, toasted
1/3 cup(s) mayonnaise
1/3 cup(s) sour cream
1-2 tablespoon(s) milk
- salt and pepper, to taste

Steps:

  • In a medium bowl combine smoked turkey, Jarlsberg cheese, grapes and almonds.
  • In a small bowl combine, mayonnaise, sour cream, milk and salt and pepper. Blend well and pour over salad mixture, gently combine.
  • Refrigerate until serving time, 4-6 servings (The time it takes to refrigerate is not included in the cook time)
  • To toast almonds spread on cookie sheet. Bake at 375* for 5-10 minutes until golden brown, stirring occasionally or microwave 3-4 minutes, stirring frequently until light golden brown.

2 cups cooked turkey, cut into bite-sized chunks, or more to taste
⅓ cup mayonnaise
1 tablespoon mayonnaise
3 tablespoons Dijon mustard
2 tablespoons red wine vinegar
1 medium head Romaine lettuce, cut into bite-sized pieces
1 cup mixed salad greens
3 stalks celery, sliced
1 small red onion, finely sliced
¾ cup halved seedless red grapes
6 tablespoons olive oil
4 tablespoons red wine vinegar
1 pinch white sugar
salt and ground black pepper to taste
½ cup shelled salted peanuts, or more to taste

Steps:

  • Mix cooked turkey, 1/3 cup plus 1 tablespoon mayonnaise, mustard, and red wine vinegar together in a bowl and set aside.
  • Mix Romaine lettuce, salad greens, celery, red onion, grapes, olive oil, vinegar, sugar, salt, and pepper together in a large pretty serving bowl and toss to blend.
  • Make a depression in the center of the lettuce mixture in the serving bowl. Mound the chicken mixture in the center and sprinkle with peanuts.
