CREAM CHEESE AND SAUSAGE STUFFED MINI PEPPERS
Perfect for game day or entertaining at home, these colorful stuffed peppers filled with cream cheese and sausage are an easy and impressive appetizer.

Steps:
- Cut peppers in half lengthwise and remove ribs and seeds. Place them on a parchment lined baking sheet.
- Preheat the oven to 350 degrees.
- Make the filling by mixing the sausage, cream cheese, cheddar and Parmesan together until well combined. Taste filling and add salt and/or pepper if needed.
- Fill the peppers with the sausage mixture. Bake for 12-14 minutes. Serve warm.

- In a skillet, cook the sausage, onion and garlic in oil until meat is browned. Add the broth, kidney beans, rice and Cajun seasoning. Bring to a boil. Reduce heat; cover and simmer for 5 minutes or until rice is tender. Add tomatoes. Simmer, uncovered, for 15 minutes or until thickened., Place pepper halves in a greased shallow 1-1/2-qt. baking dish. Place 1-1/2 teaspoons cracker crumbs in each pepper half. Fill with sausage mixture., In a skillet, cook bacon over medium heat until lightly browned, Top each pepper with half of cheese and 1 bacon half. Bake, uncovered, at 375° for 25-30 minutes or until bacon is crisp.

- Heat oven to 400 degrees F.
- Heat oil in a large skillet over medium heat. Add smoked sausage, onion, garlic and Italian seasoning and cook for 6-9 minutes, stirring occasionally, until onions are soft and smoked sausage is brown. Stir in white wine vinegar, cooked orzo, salt, pepper and 1/4 cup mozzarella; remove from heat and set aside.
- Mix together the marinara sauce and cinnamon and stir 1/4 cup of the sauce into the skillet. Spoon remaining sauce into the bottom of a 9x9-inch baking dish.
- Cut the tops off of the peppers, remove the seeds, stuff them with the orzo-smoked sausage mixture and place in baking dish. Sprinkle with remaining mozzarella cheese and bake until heated through, 25 minutes.

- Preheat oven to 375 degrees F (190 degrees C). Line 2 pie plates with aluminum foil.
- Pinch about 1/2 teaspoon sausage off and roll into a small oval shape. Stuff the sausage piece into a pepper. Repeat with remaining sausage and peppers.
- Drizzle 1 teaspoon olive oil into each foil-lined pie plate and divide the stuffed peppers into each one. Rotate the plates to roll and coat poppers in the oil.
- Roast poppers in the preheated oven until the sausage is cooked through and the poppers are very slightly dried out, about 20 minutes. Let cool before serving. Arrange onto a serving platter and sprinkle with parsley.

- Preheat the oven to 350ºF. Cut a small slit across the top and then another slit down the side of each pepper. Open up the pepper and remove the seeds and the membranes.

- Cut the tops off the peppers. Remove and discard the stems, then finely chop the tops; set aside. Scoop out the seeds and as much of the membranes as you can.
- Preheat the oven to 450˚. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until cooked through, about 6 minutes.
