POLISH KRAUT AND APPLES

Steps:
- Place half of the sauerkraut in an ungreased 3-qt. slow cooker. Top with sausage, apples, brown sugar, caraway seeds if desired and pepper. Top with remaining sauerkraut. Pour apple juice over all., Cover and cook on low until apples are tender, 4-5 hours.

GRILLED SMOKED SAUSAGE WITH APPLE FENNEL "SAUERKRAUT"
Steps:
- Clean and cut the fennel in long strips (julienne) and trim tops, reserving for later use.
- Heat oil in heavy-bottomed saucepan over medium heat, add onion and kosher salt. Cook until onion begins to brown, add strips of fennel, stir, and let cook covered for about 5 minutes or until fennel begins to wilt, reduce heat to medium-low.
- Meanwhile, mix grated apple with lemon juice and add to pan, cover and cook, stirring occasionally for 15 minutes. Add butter, mixing well. Add caraway seeds, reserved fennel tops and hard cider or apple juice. Cook for an additional 5 minutes, uncovered. Season, to taste, with salt and pepper. Remove from heat and let sit to allow the flavors to mingle. (The sauerkraut can be made up to 2 days in advance and kept covered in the refrigerator until ready to use.)
- Build charcoal fire or preheat gas grill. Just before serving, warm sauerkraut and grill sausages. To grill sausages, place on the cooking grate over direct medium heat for 6 to 8 minutes, turning occasionally to mark all sides of the sausage. Meanwhile, split the buns and brush a little butter on the inside. Toast until lightly browned. When ready to serve, place 1 sausage and a generous amount of the sauerkraut on the bun and serve with mustard on the side. Enjoy immediately.
EASY SAUSAGE BAKE WITH SAUERKRAUT AND APPLES
Steps:
- Gather the ingredients. Heat the oven to 425 F.
- In a large ovenproof saute pan or Dutch oven over medium heat, heat the vegetable oil. Add the onion and sliced sausages and saute until the onion is golden and the sausage is lightly browned, 5 to 7 minutes.
- Add the apples and saute for 1 minute longer.
- Add the apple juice, vinegar, brown sugar, sauerkraut, and pepper.
- Add the caraway seeds, if using.
- Cover and bake for 1 hour.
- Serve with crusty rolls or biscuits and a tossed salad. Enjoy.

SMOKED SAUSAGE AND APPLES
This is a real easy way to fix smoked sausage. I do it in the microwave and usually serve it with a green veggie and corn bread.

Steps:
- Slice smoked sausage into 1 inch coins, and place in a microwavable bowl with a lid.
- Add apples and onions.
- Sprinkle brown sugar over all. Add water. Cover.
- Microwave on high for about 5 mins or till apples are tender. (I use my fresh vegetable button for hard veggies).
- May season with salt and pepper if care to. We normally don't.
- Note: If you do not have a bowl with lid that will go into microwave, you may use plastic wrap, just be sure to vent it, by folding in one corner of wrap to make a little hole.
SMOKED SAUSAGE AND APPLE BAKE
An easy and delicious blend of smoked sausage, apples, onions, and sauerkraut that everyone will love! This is great served with potatoes and cornbread. If you do not wish to use brandy, a good quality apple cider may be substituted for it in the gravy.

- Preheat the oven to 350 degrees F (175 degrees C). Brown the sausage in a large skillet over medium heat. Set aside.
- Make a layer of sliced apples in the bottom of a 2 quart casserole dish. Sprinkle with a bit of the cinnamon. Layer half of the onion, then half of the sauerkraut over the apples. Place all of the sausage slices over the sauerkraut, reserving the drippings in the pan. Cover the sausage with the remaining sauerkraut, onion, and top with apple slices. Sprinkle the remaining cinnamon over the top.
- Pour the heavy cream and brandy into the skillet with the sausage drippings. Place over medium heat, and stir to remove the bits of sausage flavor from the bottom. Pour over the sausage and apple casserole.
- Cover, and bake for 1 hour in the preheated oven. Let stand for a few minutes before serving.

Steps:
- Saute sausage with water covered, about 8 minutes. Discard grease. Set aside.
- Saute potatos in about 2-3 T butter until tender. Set aside.
- Saute apples and onions in remaining 1 T butter until tender.
- Combine cider vinegar, sugar, and parsley.
- Return the sausage and potatoes to the saute pan along with the apples and onions. Add the vinegar, sugar, and parsley to the skillet. Mix well.
- Warm over medium heat until warmed through.
- Serve.

- Rinse sauerkraut and squeeze dry.
- Cut sausage into 2-inch pieces.
- Put 1/2 the sauerkraut in the slow cooker.
- Add the sausage pieces on top.

- In a large sauce pan or Dutch oven, combine the sauerkraut, diced apples, caraway seeds, brown sugar, apple cider and salt over medium heat. Bring to a simmer, then cover and reduce heat to medium-low. Simmer, covered, for 90 minutes, stirring periodically. Remove to the bowl of a slow cooker and turn on to low heat.
- Slice uncooked bacon into 1/2-inch pieces. Wipe out the pan used to cook the sauerkraut and heat over medium-high heat. Add the sliced bacon and cook, stirring occasionally with a wooden spoon, until crispy. Remove bacon to the slow cooker with the sauerkraut using a slotted spoon and drain all but 2 tablespoons of bacon drippings.
- Heat the bacon drippings over medium heat, then add the sliced onions and kielbasa. Cook for 12-15 minutes, until the onions begin to caramelize and the sausage is starting to crisp and brown around the edges. Transfer to the slow cooker with the other ingredients and cook on high for 1 1/2-2 hours or on low for 3-4 hours.
