1/2 pound smoked kielbasa, diced
6 medium potatoes, peeled and cubed
2 cups frozen corn
1-1/2 cups chicken broth
1 celery rib, sliced
1/4 cup sliced carrot
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups whole milk
2/3 cup shredded cheddar cheese
1 teaspoon minced fresh parsley

Steps:

  • In a large saucepan, brown sausage; drain. Set sausage aside. In the same pan, combine the potatoes, corn, broth, celery, carrot and seasonings. Bring to a boil. , Reduce heat; cover and simmer for 15 minutes or until vegetables are tender. Add the milk, cheese, parsley and sausage. Cook and stir over low heat until cheese is melted and soup is heated through.

Best potato soup with sausage ever with a variation of the original German soup. My family loves this soup and I never have leftovers. This recipe is one my grandmother used to make when I was growing up and I have always loved this.

1 pound bulk mild Italian sausage
1 pound kielbasa smoked sausage, cut lengthwise and sliced into 1/2-inch pieces
4 cups diced potatoes, or more to taste
4 cups water
2 cups chicken broth
1 cup heavy whipping cream
1 stalk celery, diced, or more to taste
2 cubes chicken bouillon
1 tablespoon minced garlic
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
⅓ teaspoon crushed red pepper, or more to taste

Steps:

  • Heat a large pot over medium-high heat. Cook and stir Italian and kielbasa sausages in the hot skillet until browned, 5 to 7 minutes. Drain grease.
  • Stir potatoes, water, chicken broth, heavy cream, celery, bouillon, garlic, salt, pepper, garlic powder, and red pepper into the pot. Reduce heat and let simmer until potatoes are tender, about 1 1/2 hours.

1 tablespoon canola oil
1 medium onion (finely diced)
2 large carrots (peeled and finely diced)
1 rib celery (sliced)
2 smoked sausages (halved lengthwise and sliced)
1 teaspoon minced garlic
1 teaspoon salt
¼ teaspoon dried thyme
⅛ teaspoon black pepper
4 cups low sodium chicken broth
1½ lbs potatoes (about 6 medium, peeled and diced)
2 cups finely chopped kale
¼-½ cup cream ((optional))
freshly grated Parmesan cheese

Steps:

  • Heat a medum skillet over medium-high heat. Add oil, onion, carrots. celery and sausages and cook until onions are softened and translucent.
  • Add garlic, salt, thyme and pepper and cook for 1 minute.
  • Add chicken broth and potatoes. Bring to a simmer over medium-high heat, then reduce to medium heat and cover. Simmer for 15-20 minutes, stirring often, until potatoes and carrots are tender.
  • Stir in kale and cream and serve with Parmesan if desired.

1 lb smoked sausage, (sliced into ¼ inch thick slices)
⅓ cup water
3 lbs red potatoes, (peeled, dice into bite-size chunks)
1 large onion, (chopped)
3 cloves garlic, (minced)
1 cups sharp cheddar cheese, (shredded)
1 cup monterey Jack cheese, (shredded)
1 cup mozzarella cheese, (shredded)
1 tsp Slap Ya Mama seasoning
1 tsp salt
1 tsp black pepper
¼ tsp cayenne pepper
¼ tsp red pepper flakes
10.5 oz can cheddar cheese soup
10.5 oz can cream of celery soup
14.5 oz can beef broth

Steps:

  • Preheat oven to 350° and spray a 3 quart baking dish or 13 x 9 baking dish with non stick spray right before filling.
  • Add diced potatoes to large saucepan, cover with water, and boil for 15-20 minutes. Drain and return potatoes to pan.
  • In a large frying pan, add ⅓ cup of water, smoked sausage and onions. Cook until sausage has browned on both sides. Add more water, if needed.
  • Stir minced garlic into sausage and onions and continue cooking for an additional minute. Remove from heat and place on a plate lined with paper towels, set aside.
  • Mix soups, broth, all three cheeses and seasonings into potatoes. Stir.
  • Add in sausage and onion mixture. Stir until combined.
  • Pour into prepared baking dish and bake for 40 minutes uncovered. Carefully remove from oven, let sit for 10 minutes before serving.
  • Optional: top with sour cream, green onions, cilantro

3 potatoes, peeled and diced
2 stalks celery, chopped

1 tablespoon fresh dill or 1 teaspoon dried dill
1/2 teaspoon cayenne pepper

Steps:

  • In a large saucepan, melt the butter over low heat being careful not to burn it.

  • We need potatoes first, I used about a kilogram of white potatoes. I washed the potatoes and peeled them. Then I cut them into 2-2.5 cm cubes. The second ingredient is smoked sausage, I used about 500g of smoked pork sausage. I washed the sausage a little and cut it into slices not very thin, about 1 cm thick.
  • To start we heat a little sunflower oil in a soup pot and place the sliced sausage to fry. Roast the sausage about 3-4 minutes, to get a little color and aroma. Put the potatoes over the sausage, mix, and allow 2-3 minutes to fry together. Season with a tablespoon of sea salt and pour the water on top, to cover the potatoes well. I put about 3 liters of water in a 7-liter pot.
  • We let it boil until the potatoes are soft, about 20 minutes, while we make a roux. To do this, in a small pan or small saucepan we heat 50 ml of olive oil. After the oil has warmed, add two tablespoons of wheat flour. Mix flour in the oil, until it is homogenized and forms a paste. Allow boiling until golden brown and add a tablespoon of sweet paprika powder. Stir until the paprika dissolves and take the pan from the heat. For added flavor, I also added a teaspoon of sweet pepper paste.
  • Add the roux to the soup, using a sieve so that it does completely dissolved. Another favorite ingredient of mine is tarragon, which we add now, and let it boil for another five minutes. In the end, we season with a tablespoon of vegetable mix and a handful of chopped green parsley.
