Smoked Salmon Scramble image

A special version of scrambled eggs which is quick and easy to make before getting on with the task of cooking Christmas dinner.

Number Of Ingredients 6

2 slices bread
1 tablespoon butter
1 egg, beaten
1 tablespoon milk
freshly ground black pepper to taste
⅓ cup flaked or chopped smoked salmon

Steps:

  • Toast bread.
  • Heat butter in a small saucepan over medium heat. Pour in egg and milk, and stir in black pepper. Stirring constantly, cook eggs until light and fluffy. Remove from heat and stir in salmon.
  • Slice toast into triangles and place, with points in toward the middle, around a plate. Spoon eggs into the center and serve warm.

Transform a shop-bought croissant into something extra special with smoked salmon, creamy scrambled egg and chives, for a quick and easy brunch or lunch

4 croissants
knob of butter
6 eggs
50ml double cream
handful chopped chives
slices of smoked salmon
black pepper

Steps:

  • Heat the grill. Split and lightly toast the croissants. Meanwhile, make the scrambled eggs. Melt the butter in a frying pan. Beat and season the eggs and scramble lightly in the pan. When the eggs are just cooked, but still soft, stir in the double cream and chopped chives.
  • Fill each croissant with a few slices of smoked salmon and the creamy scrambled egg. Sprinkle with some black pepper and extra chopped chives.

Scrambled Eggs with Smoked Salmon image

1/4 pound sliced smoked salmon
12 eggs
1/2 cup heavy cream
Salt and freshly ground black pepper
2 tablespoons butter
12 to 15 blades of fresh chives, finely chopped

Steps:

  • Reserve 2 slices of salmon for garnish. Chop the remaining salmon into very small pieces.
  • Whisk your eggs and cream together. Add 1/2 of your chopped chives and season eggs with salt and pepper. Preheat a large nonstick skillet over medium heat. Melt butter in the pan and add eggs. Scramble eggs with a wooden spoon. Do not cook eggs until dry. When eggs have come together but remain wet, stir in chopped salmon. Remove pan from the stove and place on a trivet. Garnish the eggs with remaining salmon and chives and serve right out of the warm pan.
  • Note: If you are serving these eggs with the other recipes provided as a brunch, a platter of store bought fruit filled dainties will complete your elegant brunch. Allow 1 dainty per person but halve dainties so that guests may mix and match varieties.

  • Heat the oven to 160°C, fan 140°C, gas 3. Whisk the eggs briefly with the butter and lots of salt and pepper (the butter will still be in lumps). Put the croissants in the oven to warm through while you make the scramble.
  • Pour the egg mixture into a cold, nonstick frying pan and put on a low heat. Stir with a heatproof spatula to collect the cooked egg from the base of the pan. Stir gently, folding the scramble until softly set with no liquid egg. Remove from the heat immediately, as the heat from the pan will make it keep cooking. Fold in most of the chives.
  • Slice the warmed croissants in half, then spoon in the scramble and add a few ribbons of salmon. Sprinkle in more chives and a little black pepper to serve.
