This is a throw together, pop in oven & 45 minutes later it's dinner time. I had some left over apple sauce, potatoes and a chop so I created this recipe - it was very tasty so I thought I would share the recipe. I have made this recipe for one serving but increase as many times as you wish. Add more potato if you wish.Could be cooked on the BBQ too

1 cup applesauce
1 1/2 cups wine-cured sauerkraut, drained & squeezed
2 tablespoons coarse grain hot mustard
1 medium potato, cooked, sliced
1 smoked pork chop
pepper

Steps:

  • Place a piece of foil in a baking dish large enough to hold the chop and other ingredients. The foil must be large enough to seal over the top of the chop
  • Place half the apple sauce in the bottom of the dish.
  • Add half of the sauerkraut.
  • Add half the potato slices.
  • Season with pepper.
  • Coat one side of the chop with half the mustard and lay it, mustard side down on the potato slices.
  • Coat the top side of the chop with remaining mustard.
  • Add remaining applesauce, then kraut and top with remaining potato slices.
  • Seal the foil over the top.
  • Bake in 350° oven for 45 minutes.
  • If you wish open the foil to brown the taters for the last 15 minutes.

I love this no fuss dinner. It is perfect for those cold days of Autumn. I like to add a layer of apples on top of the chops before covering them with the second layer of potatoes & Kraut.

2 smoked pork chops
1 1/2 cups mashed potatoes
1 1/2 cups sauerkraut, well drained
3 tablespoons sweet Russian mustard (any sweet dark mustard will do)
salt & pepper
1 tablespoon butter

Steps:

  • Mix the potatoes and the kraut.
  • Place half the sauerkraut/potato mixture in a Pyrex pie plate.
  • Spread 1 1/2 tbsp of mustard over the sauerkraut.
  • Place the chops on the sauerkraut.
  • Spread remaining mustard on the chops.
  • Cover with remaining sauerkraut/potato mixture.
  • Season with salt & pepper.
  • Put the pat of butter on top.
  • Seal with foil and bake in a 350°F oven for 45 minutes to an hour.
  • I like uncover the chops for the last 15 minutes or so to lightly brown the potato topping.

As a soldier during WWII my Dad learned to make this hearty pork dish from a local German woman during the Allied occupation of Germany. I don't know the German name for it, but it is delicious!

8 center cut pork chops
2 pounds sauerkraut, drained
1 large red apple, diced
1 onion, chopped
1 cup brown sugar
1 tablespoon caraway seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large nonstick skillet over medium-high heat, and brown the pork chops on both sides, about 5 minutes per side. Place the chops into a 9x13-inch baking dish.
  • Mix the sauerkraut, apple, onion, brown sugar, and caraway seeds in a bowl until well combined, and spread the sauerkraut mixture over the pork chops. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the pork is no longer pink inside, about 45 minutes. An instant-read thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C).

1 tablespoon canola oil
4 large sweet potatoes, cooked, peeled and cut lengthwise into thirds
1/2 cup packed brown sugar
1/8 teaspoon pepper
2 large tart apples, peeled and thinly sliced
1/4 cup apple juice or water

Steps:

  • Preheat oven to 325°. In a large skillet, cook chops in oil over medium heat 2-3 minutes on each side or until lightly browned; drain. , Transfer to a greased 13x9-in. baking dish. 1 apple - peeled, cored, and diced

2 smoked pork chops
12 ounces of sauerkraut
on tart apple, shredded
2 tsp. oil or pork fat
1/4 tsp. caraway seeds
1/4 tsp. white pepper (or black)
1 clove minced garlic
1/4 cup white wine vinegar
1/8 tsp. celery seed
1 to 1/2 tsp sugar

Steps:

  • Preheat your oven to 300F. In a dutch oven, heavy pot or deep saucepan quickly brown the chops in a small amount of oil or pork fat. Remove the chops and set aside. Lower the heat and add the sauerkraut and remaining ingredients. Tuck the browned pork chops into the sauerkraut mixture, making sure they're completely surrounded to retain their moisture. Place in the oven uncovered for 1 to 2 hours. Serve with warm German-style potato salad and asparagus.

Braised Sauerkraut with Smoked Pork image

6 smoked pork chops (each about 1 inch thick)
2 tablespoons olive oil
2 2-pound jars sauerkraut, rinsed twice, drained well
2 garlic cloves, sliced
6 bay leaves
10 whole black peppercorns
2 russet potatoes (about 1 1/2 pounds), peeled, cut in half lengthwise
2 large tomatoes, peeled, quartered
3 cups water

Steps:

  • Boil smoked pork chops in large pot of water 5 minutes. Drain pork chops well.
  • Heat olive oil in heavy large Dutch oven over medium-high heat. Arrange half of sauerkraut in bottom of Dutch oven. Sprinkle sauerkraut with sliced garlic, bay leaves and whole peppercorns. Arrange pork chops, potato pieces and quartered tomatoes over. Cover with remaining sauerkraut. Pour 3 cups water over. Bring mixture to boil. Reduce heat; cover and simmer 25 minutes, stirring occasionally (be careful not to break up potatoes).
  • Uncover and boil until most of liquid evaporates and potatoes are tender, about 20 minutes. Remove Dutch oven from heat. Cover and let stand 15 minutes. Discard bay leaves and peppercorns.
  • Transfer pork chops, potatoes and tomatoes to large plate. Cut potatoes into large serving-size pieces. Spoon sauerkraut and any remaining liquid in Dutch oven onto center of serving platter. Arrange pork chops, potatoes and tomatoes on serving platter around sauerkraut and serve.
