Easy and elegant enough for the in-laws. Be sure, when filling the chops, not to stuff it too full, or the meat will be done cooking before the cheese has had a chance to melt.

- Preheat an outdoor grill for medium heat.
- In a small bowl, combine the cheese, bacon, parsley, and 1/8 teaspoon black pepper.
- Lay the chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, going all the way to the bone, but leaving the sides intact. Stuff cheese mixture into pocket, and close with a wooden toothpick. Brush meat with oil, and season with salt and more black pepper.
- Lightly oil the grill grate. Grill over medium heat for 5 to 8 minutes on each side, or until pork is done. Careful not to overcook!

- Grate 1 teaspoon orange peel; set aside. Peel and section the orange. Set four segments aside; coarsely chop remaining segments and set aside., In a skillet, brown pork chops on both sides in oil. Place chops in an ungreased 9-in. square baking dish; set aside., In the same skillet, saute the celery, onion and parsley in butter until tender. Add the croutons, walnuts and pepper; cook for 1-2 minutes. Stir in broth and reserved chopped orange and peel. Cook 1 minute longer., Spoon dressing over the chops; top with reserved orange segments. Cover and bake at 350° for 30-35 minutes or until a thermometer reads 160°.

- 1. Use a Pork Brine or Italian Dressing. Let the chops marinate for at least 30 minutes or several hours. 2. Remove from Brine/Marinade and place on a tray. Pat dry, 3. Dust both sides with All Purpose Rub. Sprinkle a bit of dark brown sugar on the exposed side for sugary glaze. 4. Set up your grill for indirect cooking and throw on some fruit wood. 5. Place the pork chops far away from the heat. You'll want to smoke these at 225 - 250 for 1.5 - 2 hours. If you want to achieve a good smoke ring,make sure smoke is billowing the entire time. 6. You'll need to add coals after probably an hour or so to keep your temp above 225. 7. When they are somewhat firm (internal temp of at least 160), they are done. Your pork chops should NOT be hard. Stop smoking them a little early and sear them above direct heat for a couple minutes. Seals the juices and makes grill marks.

This was my mother's original recipe, but through the years I've changed is slightly. Now my four daughters enjoy making this family favorite. Before we retired, we raised hogs on a farm in Pennsylvania. I cooked a pork dish at least once a week then, and I still do today.

SMOKED PORK CHOPS WITH APPLES
I was looking for something new to do with some smoked pork chops and I found a recipe on cooks.com that I altered slightly. The original called for cranberry-apple drink rather than cider. The glaze never really thickened for me, but it the chops were still delicious. I used MacIntosh apples, unpeeled. My kids and husband cleaned their plates and my husband has already requested that I make it again.

- In skillet over high heat, heat chops, cider, syrup, and vinegar till boiling. Reduce heat to medium, cover and cook 15 minutes, turning chops once.
- Meanwhile, cut apples into wedges. Remove pork chops to platter. Add apple wedges to liquid in skillet. Heat to boiling and cook until apples are fork-tender and liquid is thick and syrupy, about 10 minutes.
