1 smoked boneless pork shoulder butt roast (2 to 2-1/2 pounds)
1 pound fresh carrots, sliced lengthwise and halved
8 medium red potatoes. peeled and halved
2 medium onions, cut into quarters
1 large head cabbage, cut into quarters
1 large turnip, peeled and cut into quarters
1 large rutabaga, peeled, halved and sliced

Steps:

  • Place pork roast in a large Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer for 1 hour. , Add the remaining ingredients; return to a boil. Reduce the heat. Cover and simmer for 1 hour or until the vegetables are tender; drain.

garlic powder to taste
6 pounds pork butt roast
2 onion, sliced
20 new potatoes, raw
16 carrots, peeled
2 cups mushrooms, halved

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large frying pan over medium high heat. Sprinkle pork on all sides with salt, pepper and garlic powder; rub into meat. Sear the meat on all sides until lightly brown. Transfer to a roasting pan.
  • Place onion slices over meat and in the roasting pan. Fill the pan 2/3 full of water. Cover and place in preheated oven for 3 hours. Add the potatoes and carrots; cover and cook 45 minutes. Add the mushrooms and cook another 15 minutes. Remove and let stand at least 10 minutes before serving.

3 pounds boneless smoked pork butt
Water (enough to cover the pork butt)
3 tablespoons brown sugar
1 medium to large cabbage (cut into 8 pieces)
5 black peppercorns
6 medium potatoes (peeled but left whole)

Steps:

  • Gather the ingredients.
  • Place smoked pork butt in a Dutch oven or stockpot. Add water to cover and add brown sugar. Cover pot and bring to a boil.
  • Reduce heat and simmer, partially covered, for 2 hours. (A pork butt requires about 40 minutes per pound.)
  • Halfway through the cooking process (after 1 hour), add the cabbage and peppercorns. Bring back to a boil, reduce the heat, and continue to simmer.
  • About 30 minutes before the cooking time is up, add the whole potatoes. Return to a boil, reduce the heat, and continue to simmer, partially covered, until the potatoes and meat are tender.
  • Transfer the meat to a cutting board and slice. Arrange on a platter with cabbage wedges and whole potatoes.

1 cup soy sauce
1/2 cup balsamic vinegar
2 tablespoons brown sugar
1/4 cup green onion
1 sprig rosemary (about 4-6 inches, the whole sprig, no need to break apart or chop)
1 garlic clove
1/4 teaspoon fresh ginger (grated or just a whole chunk)
1 tablespoon honey
1 tablespoon slurry (a mix of 1 tablespoon water and 1 tablespoon cornstarch, this will help the mix thicken)
2 cups pulled pork (approximately 1 lb)
2 carrots (julienned)
2 cups purple cabbage (shredded or julienned)
1 head Boston (or "Butter" lettuce, leaves separated)
1/2 cup green onions (chopped (for topping))
1/4 cup cilantro (chopped (for topping))

Steps:

  • Whisk all the sauce ingredients together in a small saucepan. Bring to a boil, then reduce to a simmer. Then strain after 12 minutes of reducing. Add back into the saucepan over heat.
  • In a separate small sealed container add 1 tablespoon of water with 1 tablespoon cornstarch or flour. Add the "slurry" to the saucepan with the strained sauce. Whisk to combine. Let continue simmering for 8-10 minutes until the sauce has thickened. Set aside.
  • In a large skillet heat up the pork on medium heat until warmed. Add 2-4 tablespoons of the sauce to the meat, as desired. Save the remaining sauce for topping your wraps. Remove from heat.
  • Assemble lettuce wraps: Scoop pork mixture into lettuce leaves, and top with your vegetables, onions, and cilantro. Drizzle with more reserved sauce as desired.

3 lb boneless smoked pork butt, ( i cooked 2)
1 lg head cabbage, cored, washed & cut into wedges
1 lg spanish onion (sliced into eights)
2 lg green bell peppers, large chop pieces
1 lg yellow or red bell pepper, large chop pieces
4 clove garlic, minced
1 1/2 Tbsp whole cloves (optional)
1 lb baby carrots
6-8 md potatoes, peeled, & quartered
1 stick butter
2 tsp steak seasoning( or to taste)

Steps:

  • 1. Preheat oven to 325 degrees F. Then stud ham with whole clove studs(optional) I like it for the flavor it gives to the smoked butt. Place in a shallow pan, add about 2 inches of water to pan, and put in oven. Cook for 40 minutes per pound, about 2 hours. I made 2 but it still bakes in the same amount of time.
  • 2. In the mean time wash & prep the remaining vegetables. To a large pot add potatoes & carrots, and enough water to cover them. Bring to a boil, and cook about 10 minutes, Then add butter, the cabbage, peppers, onions, & garlic and continue to cook about 20 minutes until all of the veggies are tender. Season with steak seasoning and stir to mix.
  • 3. When Smoked butt is fully cooked, remove from oven, let rest at least 10 minutes, then slice with a sharp knife, I like to use an electric knife, then place meat on top of veggies, cover with lid to keep warm. Serve while still hot.
  • 4. NOTE: This cut of meat can also be cooked in a Dutch oven or large stock pot. Cover with water & bring to a boil, then reduce heat and simmer for the same amount of time specified above, about 40 minutes per pound. Please follow directions on package. I prefer to bake it in the oven to minimize shrinkage during cooking.

2 -3 lb rolled smoked pork butt, in casing
1 cabbage
1 pkg carrots, cleaned
6 potatoes, peeled
4 turnips or rutabaga..or both
melted butter
finely chopped parsely or finely chopped baby dill

Steps:

  • 1. Have a large soup pan of boiling water.
  • 2. Take the pork butt out of the plastic wrap and carefully remove the paper casing. Carefully place the pork butt in the boiling water and boil on low heat for about an hour.
  • 3. Place the potatoes, turnips (or Rutabaga) and carrots in. When they are almost done cooking, place cabbage in. When the potatoes, turnips or rutabaga, carrots and cabbage are finished cooking take them all out of the pan. Take the pork butt out and slice it in not too thick slices. But about 1/3". Place on serving plater, place the vegetables around the pork and pour a little melted butter and chopped parsely or chopped dill on top of the vegetables. Serve hot!
  • 4. Save the water to make a bean soup or chowder with.
  • 5. Rose Packing Co. in Illinios sells both kinds of Smoked Pork Butt, rolled or square. I call them and spoke to Rick who is here in California. It is the exact recipe they used for making the Dainty brand my Grandmother, Mom and I used. They can have a case of it sent to their supplier here and I will pick it up next Friday. I am one happy camper!
