1 (13 7/8 ounce) package refrigerated pizza crusts
1/2 lb sliced fresh mushrooms
1 small red onion, chopped
2 tablespoons butter
2 garlic cloves, minced
1 cup alfredo sauce
1/2 teaspoon dried thyme
1 (6 ounce) package Baby Spinach
1/2 lb italian chicken sausage, cooked and sliced
2 cups shredded smoked gouda cheese

Steps:

  • Unroll dough into a greased 15 x 10 inch baking pan; flatten dough and build up edges slightly.
  • Bake at 425° for 10-12 minutes or until lightly browned.
  • Meanwhile, in a large skillet, saute mushrooms and onion into butter until tender.
  • Add garlic; cook 1 minute longer.
  • Stir in Alfredo sauce and thyme; taste and season with salt and pepper, if needed; spread over crust.
  • Top with spinach, sausage, and cheese.
  • Bake for 10-15 minutes or until crust and cheese are lightly browned.
  • With pizza cutter, slice into 10 pieces (appetizer).

1 (13 7/8 ounce) refrigerated tube pizza dough (such as Pillsbury)
cooking spray
1 tablespoon cornmeal
1/2 cup shredded smoked gouda cheese
1 1/2 cups sliced plum tomatoes (about 4)
2 teaspoons olive oil
2 garlic cloves, minced
1/2 teaspoon fresh ground black pepper
2 tablespoons thinly sliced fresh basil

Steps:

  • Preheat oven to 450°.
  • Roll the dough into a 12-inch circle on a lightly floured surface. Place dough on a (12-inch) pizza pan or baking sheet coated with cooking spray and sprinkled with cornmeal. Crimp edges of dough with fingers to form a rim. Bake at 450° for 5 minutes.
  • Sprinkle cheese over pizza crust, leaving a 1-inch border. Arrange the tomato slices over cheese. Combine oil and garlic; sprinkle over tomato. Sprinkle with pepper.
  • Bake at 450° for 15 minutes or until lightly browned. Top with basil. Cut into 8 wedges.

Blonde pizza is made without tomato sauce. This makes two large (10 x 15 inch rectangular, or 14-inch round) thin and crispy crust pizza. If a thicker crust is desired, use smaller pans and roll dough thicker. Most of the time is spent waiting for the dough to rise. Made for RSC #11.

3 cups all-purpose flour (may substitute up to 1 1/2 cups whole wheat flour, if desired)
1 teaspoon salt
2 teaspoons instant yeast (rapid rise)
1 1/2 cups warm water
6 tablespoons olive oil, divided
1/2 cup minced shallot
1/4 cup minced garlic
1 teaspoon anchovy paste
1/2 teaspoon salt
1 teaspoon dried oregano
1 (10 ounce) package frozen chopped spinach, thawed
1 (14 ounce) can artichoke hearts
2 cups grated smoked gouda cheese

Steps:

  • Spinach Pizza
  • Mix flour, salt, and instant yeast in a mixing bowl. Add warm water and mix well.
  • Turn dough mixture out on to a floured surface, and knead until smooth and elastic, about 10-15 minutes.
  • Put 2 tablespoons oil into the mixing bowl, and turn the bowl to coat with oil. Add the dough to the oiled bowl and turn it around so that all sides are covered with oil.
  • Cover with a lid or plastic wrap and set aside in a warm spot to rise for 45 minutes.
  • Meanwhile, mix the remaining 4 tablespoons of oil with the minced shallots, minced garlic, salt, anchovy paste and oregano, and mash until a uniform paste is achieved. Set aside.
  • Squeeze the moisture out of the thawed chopped spinach. Measure out 1/2 cup of spinach for pizza, packing well into measuring cup. Reserve remaining spinach for another use.
  • Drain artichoke hearts and remove any tough outer leaves. Chop into quarters or smaller.
  • Preheat oven to 400 F and put rack at, or above, center.
  • After dough has doubled in size, punch down and turn out to floured surface. Divide in half, and roll each half to fit your pans.
  • Heap up a little dough around the edges.
  • Set dough in pans aside in a warm spot, covered with a clean kitchen towel or a large piece of plastic wrap, to rest for 15 minutes.
  • After resting, coat each dough with half of the shallot/garlic mixture.
  • Top with the pieces of artichoke, and small bits of spinach, evenly distributing around pizza. The pizza will not be completely covered with topping -- you will still be able to see small areas of dough.
  • Sprinkle the grated cheese over each pizza.
  • Bake for 20-25 minutes, or until crust is browned and cheese is bubbly. You may want to rotate pizzas halfway through baking to prevent uneven cooking.

2 tablespoons unsalted butter or 2 tablespoons unsalted margarine
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1/4 cup heavy cream
1/4 lb smoked gouda cheese, coarsely shredded
1/2 teaspoon smoked paprika (optional)
1 pinch nutmeg, freshly grated
salt
fresh ground pepper
water
1 1/2 lbs Baby Spinach
1 lemon, juice of (not the bottled kind, please!)
1 tablespoon extra virgin olive oil
1 small onion, finely chopped
1 1/2 cups smoked gouda cheese, bechamel
salt
fresh ground pepper
3 tablespoons fine dry breadcrumbs
2 tablespoons smoked gouda cheese, coarsely shredded

Steps:

  • PREPARE SMOKED GOUDA BECHAMEL:.
  • In a medium saucepan, melt the butter or margarine; add the flour and whisk over moderately high heat for 30 seconds.
  • Add the milk and bring to a boil, whisking constantly.
  • Cook over moderate heat, whisking constantly, until thickened, 4 to 5 minutes.
  • Add the cream, smoked Gouda, paprika (if using)and nutmeg and whisk just until the cheese is melted, about 2 minutes.
  • Season with salt & pepper.
  • Use right away or cover directly with plastic wrap and refrigerate.
  • PREPARE THE SPINACH:.
  • Preheat the broiler and position a rack 10 inches from the heat.
  • In a large soup pot, bring 1/4 inch of water to a boil.
  • Add the spinach and cook over high heat, tossing with long tongs, until completely wilted, about 3 minutes.
  • Transfer the spinach to a colander and drain, pressing out as much liquid as possible add a squeeze of lemon; put into kitchen towels and press the water out.
  • In a medium, ovenproof skillet, heat the olive oil and pinch of crushed red pepper flakes(if using); add the onion and cook over high heat, stirring, until softened, about 3 minutes.
  • Add the wilted spinach and cook, stirring, for 1 minute.
  • Add the Smoked Gouda Béchamel and cook over moderate heat, stirring, until bubbling, about 1 minute.
  • Season with salt and pepper.
  • Sprinkle the spinach with the bread crumbs and shredded Gouda and broil for 2 minutes, until golden and bubbling.
  • Serve hot.
