SMOKED FATTIE
This is a treat on the smoker or grill and is basically a sausage roll stuffed with cheese and other items you can think of.

Steps:
- Roll out sausage to form a rectangle about 3/8 inch thick.
- Spread the cheese over the sausage leaving a 1 inch border to prevent leakage while cooking.
- Roll the sausage back into a log shape, sealing the seams and edges so as not to have cheese escape.
- Place on a smoker or on a grill with indirect heat at 225F to 250F.
- Cook until internal temperature is 165F to 170F.
- Let cool to room temperature, slice and serve with crackers.

- To make the bacon weave, lay eight bacon strips, side by side, vertically. Horizontally, weave the top bacon strip through the vertical strips. For the remaining horizontal strips, pull back every other vertical bacon strip (see the picture above). Lay a bacon strip down up snug to the horizontal strips. Pull the vertical strips back down. Do the same thing again, but with the other vertical bacon strips. Do this for the rest of the bacon until you have a complete bacon weave.
- Roll or pat out the ground beef to the same size shape as the bacon weave. Lay the cheese along the middle of the square of ground beef. Spread the BBQ spice rub across all the beef.
- Roll up the ground beef into a log. Tuck in the sides to make sure there is no opening for the cheese to melt out of. Lay the beef on the bacon weave and wrap the weave around the beef log.
- Smoke the fatty in a smoker set to 250F for about 2 1/2 hours. Remove when the internal temperature is at 165F.

- Lay out two large pieces of plastic wrap of non-stick wax paper. Begin making a simple bacon weave (watch my video on Facebook!). Next, take your ground pork and mix with the seasoning thoroughly. Spread the ground pork out over the top of the bacon weave making sure to leave ½ inch of bacon overlap on all sides. In another bowl, mix together all of the filling ingredients. Place the filling ingredients at one side of the fatty and, using the plastic wrap, roll the fatty up so that the filling is kept in the middle and the bacon surrounds it on all sides. Once completely rolled, tightly wrap it in the plastic wrap and set in the fridge for 15 minutes to set.
- Preheat your Oklahoma Joe’s Bronco Drum Smoker to 275F. Add some wood chips or wood chunks for additional smoke flavor if desired.
- Unravel your fatty and carefully fold the bacon over the ends so that it is completely covered. Place it onto the smoker and cook for about 2-2.5 hours until the internal temperature hits 160F.
- About 20 minutes before the fatty is done, puree your pickled jalapenos, pickled jalapeno juice and garlic cloves. Add a bbq sauce skillet to the smoker with some butter. Add the rest of the keto spicy bbq sauce to the skillet and let simmer for 5 minutes. Increase the heat on the smoker to as hot as it will go. Glaze the outside of the fatty with the sauce and keep the extra for dipping. Let the fatty caramelize for 5 minutes.

- The Filling. The filling for the Fattie can be as basic or as sophisticated as you want. I will show you a rather basic filling. Don't worry! It will still knock your socks off.
- The Meat. Starting with a 1 pound tube of your favorite pork sausage lay out 1 sheet of plastic wrap or wax paper unto the work surface. Center tube of sausage and apply another sheet of plastic wrap on top.
- Adding the Filling. Now that you have a nice flat piece of meat it's time to add the filling. Remove the top piece of plastic wrap and spoon the cream cheese mixture into the center of the sausage leaving room at the ends for proper sealing.
- Rolling the Fattie. Now it's time to roll this sucker up. Using one end of the plastic wrap fold the sausage over the top of the filling. Repeat with the other side and make sure it over laps.
- Seasoning the Fattie. Take the Fattie out of the fridge and unwrap. Sprinkle with your favorite BBQ rub. Make sure you cover the entire Fattie with the rub.
- Smoking the Fattie. If you do not have a smoker set up your charcoal or gas grill for indirect cooking. Try to keep the grill around 250f degrees.
- Extra Step. Now that you have mastered the Fattie you can take it to the next level by doing a few different things. Try wrapping the Fattie in bacon before you smoke it or as shown in the pictures you can wrap the smoked Fattie in dough and bake it for an extra decadent treat.
- The Extra Filling. I told you I had plans for the extra filling. Place extra cream cheese filling on foil and smoke along with the Fattie. This makes a great mid smoke snack because it only takes about 30 minutes for it to brown up and acquire a great smoky flavor.

- Put the breakfast sausage in a 2 1/2 gallon resealable plastic bag. Seal the top, leaving a small opening for air to escape. Using a rolling pin, roll the sausage into a rectangle that is 14 3/4 inches (the width of the bag) by 12 inches.
- Build the bacon weave. Moisten your countertop or workspace with a damp towel. Lay a 15-inch rectangle of parchment paper, plastic wrap, or heavy-duty foil on the dampened workspace and smooth it out.
- Fold back the even-numbered strips of bacon (2, 4, 6, and 8) and lay a ninth strip of bacon snugly against the folds (perpendicular to the first 8 slices).
- Lay a sheet of plastic wrap over the completed bacon weave and gently roll with a rolling pin to tighten the weave and expand its size. Chill for at least 2 hours.
- Retrieve the sausage rectangle from the refrigerator and slice the long sides of the plastic bag with a knife or scissors. (You can use the bag as an aid in rolling the fattie, or transfer the sausage to a piece of parchment, plastic wrap, or heavy-duty foil.
- Arrange the cheese slices or grated cheese on the sausage rectangle leaving a margin of about an inch. Sprinkle the diced hot links evenly over the cheese.
- Cut the ends off the Polish sausages on a 45-degree angle. Butt the diagonal cuts together to form one 12-inch Polish sausage and arrange the pieces on the sausage rectangle parallel to and 1 inch above the edge of the short side.
- Once again, moisten your countertop or workspace with a damp towel, then cover it with plastic wrap. Gently unwrap the bacon weave and place it on the countertop.
- Set up your smoker following the manufacturer’s instructions and preheat to 225 to 250 degrees. Add the wood chunks just before smoking.
- Gently unwrap the bacon-wrapped fattie and place it seam-side down on one of the racks of your smoker. Smoke the fattie until nicely browned on the outside and cooked to at least 160 degrees in the center.
