SMOKED-ALMOND CHEESE TOASTS
I created my recipe for appetizer toasts while planning the menu for a friend's bridal luncheon. Smoked almonds add a special touch to the chunky cheese spread.-Laura Murphy, Columbus, Mississippi

- Preheat oven to 350°. In a large bowl, beat cream cheese and milk until smooth. Stir in cheeses, almonds, tomato and pepper; spread over bread slices., Place on ungreased baking sheets. Bake until cheese is melted, 10-12 minutes. If desired, top with chopped fresh chives.

I got this recipe from my mother and have taken it to a number of potlucks. It always receives raves. Even non-salmon lovers like this appetizer.

Steps:
- In a medium bowl, mix salmon, cream cheese, lemon juice, green onions, horseradish, salt, hot pepper sauce and Worcestershire sauce. Form the mixture into a ball and wrap in plastic. Chill in the refrigerator 3 hours, or until firm.
- On a large piece of wax paper, mix walnuts and fresh parsley. Roll the ball in the walnuts and parsley until thoroughly coated. Chill in the refrigerator until serving.

- In a large bowl, beat the first 5 ingredients until smooth. Stir in cheese. Shape into a ball; roll in almonds. Wrap and refrigerate for at least 1 hour. Serve with crackers.
