This is variation of a recipe my mother used to make with my own spin on the seasonings! Also, one of our favorites to enjoy around the holidays!

8 slices bacon
1 tablespoon garlic powder
1 teaspoon seasoned salt
1 teaspoon dried basil
1 teaspoon dried oregano
2 pounds pork tenderloin
2 tablespoons butter
2 tablespoons olive oil

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the bacon in a large, oven-safe skillet, and cook over medium-high heat, turning occasionally, until lightly browned and still flexible, 6 to 7 minutes. Drain the bacon slices on a paper towel-lined plate. Remove any excess bacon grease from the skillet. Combine garlic powder, seasoning salt, basil, and oregano in a small bowl. Set aside.
  • Wrap the pork tenderloin with the bacon strips securing with 1 or 2 toothpicks per strip of bacon. Slice the tenderloin between each bacon strip to create the medallions. Dip both sides of the medallions in seasoning mix. Melt butter and oil together in the same skillet over medium-high heat. Cook each medallion for 4 minutes on each side.
  • Place skillet into the preheated oven and bake until the pork is no longer pink in the center, 17 to 20 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

2 (15 ounce) cans black-eyed peas, drained and rinsed
⅓ cup thinly sliced green onion
2 tablespoons olive oil
4 teaspoons chili powder
4 teaspoons red wine vinegar
1 Smithfield® Mesquite Seasoned Loin Filet, cut into 6 slices
6 slices Smithfield® Hickory Smoked Bacon

Steps:

  • To make Texas Caviar, combine peas and onions in medium bowl. Whisk together oil, chili powder and vinegar; stir into black-eyed pea mixture until well coated. Cover and marinate at room temperature for 2 to 4 hours, stirring occasionally.
  • Heat charcoal or gas grill to medium-high. Wrap 1 slice of bacon around sides of each filet; secure with wooden pick.
  • Grill pork filets 13 to 18 minutes, turning every 5 minutes, until internal temperature reaches 150 degrees F. Serve filets with Texas caviar.

14 strips bacon (about 13 ounces)
1 pork tenderloin, trimmed (about 1 1/4 pounds)
Kosher salt and freshly ground black pepper
1/3 cup Dijon mustard
3 tablespoons packed light brown sugar
1 1/2 teaspoons garlic powder
1/2 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Lay the bacon onto a rimmed baking sheet lined with a baking rack. Bake until the bacon has rendered some of its fat but is still completely flexible and hasn't begun to brown, about 15 minutes. Remove from the oven and let cool 5 minutes. Raise the oven temperature to 450 degrees F.
  • Generously sprinkle the tenderloin with salt and black pepper.
  • In a small bowl, stir together the mustard, brown sugar, garlic powder and cayenne. Coat the tenderloin all over with the mixture.
  • Starting at one end, wrap the bacon strips around the tenderloin, overlapping them slightly so they are shingled.
  • Place the tenderloin on the baking rack and roast until 130 degrees F at the thickest point, about 17 minutes. Let rest 5 minutes, then transfer to a cutting board using a long offset spatula and tongs. Slice into 1-inch-thick rounds and serve.

4 pieces of Sliced Bacon
Asparagus
Baby Yukon Gold Potatoes
1-2 tbsp of EVOO for drizzling
Garlic Powder optional
Salt & Pepper

Steps:

  • Preheat oven to 425.
  • Cut open and remove your Smithfield Fresh Pork from package.
  • Wrap 4 pieces of bacon around the tenderloin to completely cover it. Lay inside a glass baking dish.
  • Wash and dry your Asparagus and Potatoes. Place around the outsides of the tenderloin in your glass baking dish.
  • Drizzle vegetables with EVOO.
  • Use salt, pepper, and garlic powder [optional] lightly on your veggies. No need to season the pork, it's already done for you!
  • Bake for 30 minutes at 425 degrees.

Steps:

  • Preheat oven to 425°
  • Remove Smithfield Marinated Fresh Pork from wrapper
  • Wrap pork loin with bacon slices, and secure with wooden picks
  • Place loin in a foil-wrapped roasting pan or dish
  • Bake for 25 minutes or until a meat thermometer inserted into thickest portion registers 155°
  • Set oven to broil
  • Broil 5 inches from heat for 3-5 minutes or until bacon is crisp
  • Remove from oven and cover with foil
  • Let stand for 10 minutes until thermometer says 160°
  • Enjoy!
