SMILEY FRIES RECIPE

- Preheat oven to 425°F. Peel the potato and cut into one-inch cubes. Place in a microwave-safe bowl and cover with plastic wrap. Cut a small slit to vent. Microwave for 5 to 7 minutes until tender. Add the milk to the potato and mash the potato mixture with a fork or pastry blender well. Let cool a bit. Stir in the egg, cornstarch, cheese, breadcrumbs, salt and garlic salt. Mix well. Place the dough between two pieces of wax paper. Press or roll the dough to 3/8-inch thickness. Use a two-inch circle cutter to cut circles. Place the potato circles on a baking sheet lined with parchment paper. If the dough is too soft, place in the refrigerator to chill 30 to 60 minutes. Use a straw to make eyes and a small spoon to make smiles on each potato circle. Bake for 10 to 15 minutes until the tops start to brown.

- In a large bowl mix mashed potatoes, flour, breadcrumbs, cornstarch and egg. Mash with a fork until a dough forms. Season with salt and pepper. Roll dough out between two pieces of waxed paper to ¼ inch thick. Carefully peel off the top piece of waxed paper. Cut out 1½-inch circles, using the rim of a glass. Using the end of a drinking straw, cut out two circles for the eyes; use a spoon to cut out a mouth. Pour canola oil into a large pot to a depth of 2 inches. Heat until it reaches 350°F on a deep-fry thermometer. (Or add a pinch of dough to the oil; when it sizzles, the oil is ready.) Working in batches, cook fries in oil until golden brown and crispy, 2 to 4 minutes, flipping halfway through. Transfer to a paper towel-lined plate; sprinkle with salt. Serve with ketchup.
