APPLE COBBLER
One of our classic recipes, refreshed! A little less sugar in both the filling and the topping highlights the tart apples. We prefer it with a scoop of vanilla ice cream.

Steps:
- Heat oven to 350°F.
- Place sliced apples into ungreased 13x9-inch baking dish.
- Combine 1/4 cup sugar and 1/2 teaspoon cinnamon in bowl; sprinkle over apples.
- Combine flour, 3/4 cup sugar, eggs, baking powder, 1 teaspoon cinnamon and salt in bowl; mix until mixture resembles coarse crumbs. Sprinkle over apples. Pour melted butter over topping. Bake 45-55 minutes or until lightly browned and apples are tender.
- Serve warm or at room temperature with vanilla ice cream, if desired.

- Preheat oven to 325 degrees F (165 degrees C). Melt butter in a 9 x 9 inch baking dish.
- Blend together flour, baking powder, sugar, and milk.
- Pour batter in baking dish over the butter. Sprinkle fruit on top of the batter, do not stir. Bake for 1 hour or until golden brown.

MINCED BEEF COBBLER
A hearty yet healthy dish that's perfect for a rainy evening, and it's low-fat too

- Heat oven to 180C/160C fan/gas 4. Dry-fry the mince and onion in a large non-stick frying pan over a high heat. Stir frequently to break up the mince, until well browned. Add the mushrooms and plain flour, followed by the stock and Worcestershire sauce. Bring to a simmer, then gently cook for 10 mins.
- Meanwhile, to make the cobbles, mix the self-raising flour and thyme together in a bowl. Stir in the yogurt with enough cold water to form a scone-like dough. On a lightly floured surface, roll out to the thickness of about 1.5cm and use a cutter to stamp out 12 x 5cm rounds.
- Stir the peas into the mince mixture, then transfer to a baking dish. Randomly place the cobbles on top of the mince, then bake for 20-25 mins, until cobbles are risen and golden brown. This is good served with horseradish sauce.

- Mix pears with 1/2 cup sugar and let stand.
- Put margarine in 2-quart casserole and place in 325° oven until melted.
- Combine all dry ingredients, including remaining 1/2 cup of sugar.
- Mix well.
- Beat egg and add to milk.
- Slowly combine with dry ingredients to make a batter.
- Pour over melted margarine.
- Do not stir.
- Spoon pears on top of batter.
- Do not stir.
- Bake at 325° for 1 hour.
- Serve hot or cold.
- Cool Whip or ice cream topping is very good.
- I haven't tried this recipe, but after two reviews, I'm editing the recipe to cut the sugar in half.

APPLE COBBLER

Steps:
- Preheat oven to 375° and spray a 13 x 9 baking dish with a non stick spray.
- Peel and slice apples 1/4" thick and place in a large mixing bowl.
- Sprinkle sugar, brown sugar, lemon juice, corn starch, cinnamon and nutmeg over apples. Stir and let sit for 5 minutes., stir again and pour apples into prepared baking dish. Set aside.
- In a medium mixing bowl, whisk flour, sugar, brown sugar, baking powder and salt together. Add butter, and with a fork or pasty blender, mix until crumbly.
- Pour boiling water to flour mixture and stir until combined.
- Spoon mixture over apples and spread gently making sure all the apples are covered.
- Sprinkle with a little extra sugar and cinnamon on top and pop in the oven.
- Bake uncovered for 55-60 minutes or until topping is baked thoroughly and has started to brown.
- Serve warm topped wth vanilla ice cream.

- In a large bowl, gently fold the berries, sugar, cornstarch, lemon juice, and vanilla extract together until thoroughly combined. Spread filling evenly into prepared pan.
- Whisk the flour, sugar, baking powder, and salt together in a large bowl. Using a pastry cutter or two forks, cut the butter into the mixture until it resembles coarse meal (pea-sized crumbs). A pastry cutter makes this step very easy and quick! You could also use a food processor, too. While slowly stirring, slowly drizzle in 1/2 cup buttermilk. Mix until evenly combined. Take handfuls of dough and gently flatten out. Place dough all over the top of the berry filling. There’s no special trick to this– just flatten the dough in sections and cover most of the berries.
- Brush the top of the biscuit dough with 1 Tablespoon of buttermilk, then sprinkle with coarse sugar. These two are optional, but both help achieve a shiny, crunchy, golden brown crust.
