Steps:
- Pre-heat your oven to broil (or grill) settings to medium-high heat (about 200°C | 400°F).
- Place potatoes in a large pot of salted water. Bring to the boil; cook, covered for 30-35 minutes or until just fork-tender. Drain well.
- Lightly grease a large baking sheet or tray with cooking oil spray. Arrange potatoes onto the sheet and use a potato masher to LIGHTLY flatten the potatoes in one piece (not too hard or they will end up mashed).
- Mix together the butter, garlic and parsley. Pour the mixture over each potato. Sprinkle with salt and pepper and lightly spray with olive oil spray.
- Broil (or grill) until they are golden and crispy (about 10-15 minutes). Remove from oven, sprinkle over the parmesan cheese and return to the oven until the cheese is melted.
- To serve, season with a little extra salt and parsley, and serve immediately.

Steps:
- Preheat oven to 425.
- Poke holes in the red potatoes with a fork for proper ventilation.
- Place potatoes on a microwave safe plate or bowl and microwave for 5 minutes.
- Flip potatoes over and microwave for an additional 5 minutes or until soft - depending on your microwave, this could be less.
- Place potatoes onto a baking sheet lined with parchment paper.
- Use a potato masher or the bottom of a cup to mash the potatoes so they are about 1/2" thick.
- Use a pastry brush to brush each side of the potato with olive oil, which will help crisp up the skin.
- Season potato with salt and pepper ( you could also add other seasonings that you love at this stage)
- Bake smashed red potatoes for 14 minutes. Remember that timing in an oven largely depends on your oven - additionally gas ovens tend to run a bit hotter, so you may want to check potatoes for doneness around 10 minutes.
- Sprinkle with Parmesan cheese and return to oven for 1-2 minutes or until cheese is melted.
- Remove potatoes from oven and sprinkle with fresh parsley before serving.

SMASHED RED POTATOES WITH BASIL & PARMESAN
Steps:
- Put the potatoes and 1 tsp. salt in a large saucepan or pot and fill with enough cold water to cover the potatoes by about 1 inch. Bring to a boil over high heat. Lower the heat to maintain a steady simmer, cover the pot partially, and cook until the potatoes are quite tender when tested with a fork, 15 to 20 minutes. Reserve some of the cooking water and then drain the potatoes. Dump them back in the pot and set over medium heat. Dry the potatoes by shaking the pan and stirring until most of the moisture has steamed off, about 2 minutes. Remove the pan from the heat. Using the side of a large metal spoon, cut through the skins and flesh of the potatoes, reducing the chunks to a very coarse mash. Stir in the olive oil and garlic. Add up to a couple of tablespoons of the cooking water to loosen the mash if necessary. Stir in the basil and cheese. Season to taste with salt and pepper and serve immediately.

SMASHED POTATOES
I got this recipe off of foodnetwork.com. What a wonderful recipe. Another way to make potatoes interesting. I made them as this recipe called for and it was delicious. The next time I made it I made variations to this. After smashing them, I put on the olive oil and then sprinkled dill weed and chives and covered in mozza cheese, and served with herbed sourcream. So delicious.

- Place unpeeled potatoes in a large pot and add water until covered by about 1-inch. Add 1 tablespoon of salt. Place pot over high heat, cover, and bring to a boil. Reduce heat slightly to keep potatoes at a boil for about 15 minutes, or until tender when pierced with a sharp knife (but not falling-apart tender).
- Meanwhile, preheat oven to 450 degrees F and coat a large rimmed baking sheet with non-stick cooking spray. Drain and transfer potatoes to prepared baking sheet, about 1-inch apart. Use a potato masher or the flat bottom of a clean glass to smash potatoes down lightly, keeping intact. Sprinkle with a little salt and pepper, drizzle with olive oil, sprinkle with Parmesan, and sprinkle with a little thyme or rosemary. Roast in preheated oven for 20 to 25 minutes until browned and crispy.

- Pressure Cooker: Add cleaned and unpeeled potatoes to the pressure cooker. Add 1 cup water. Set valve to seal. Cook on high pressure for 10 minutes.Stove-top: Add cleaned, unpeeled potatoes to a pot. Cover with water. Bring water to a boil. Turn heat down to medium-high. Boil for 10 minutes or until fork-tender. Cooking times may vary a little depending on the variety and size of potatoes. This is a good average! Just make sure they are fork-tender.
- Spray a half sheet baking pan with nonstick baking spray. For easier cleanup the pan can be lined with aluminum foil first, then spray the foil.
- Remove potatoes from the pressure cooker and drain. Let sit for a minute until they are dry. Smash potatoes with a potato masher or a large fork. I usually smash them until they are about 1/2 inch thick. The flatter and thinner the potato the crispier it will be.
