Steps:
- Place the potatoes in a deep saucepan and cover with cold water to a depth of 2-inches.
- Cook uncovered over high heat until the potatoes can be easily pierced with a knife, about 20 minutes.
- While the potatoes cook, steam the broccoli and leek until the broccoli is very soft, about 15 minutes, drain.
- Drain the potatoes and place them in a deep bowl.
- Using a sturdy fork, mash the potatoes into roughly 1-inch chunks.
- Add the broccoli and leek, mashing until only small lumps of the broccoli remain.
- Add the milk, 2 tablespoons at a time, mashing until the texture is pleasing to you.
- Season to taste with salt and pepper.
- In a small saucepan, melt the butter over medium heat until it is golden brown, 1 to 2 minutes, taking care it does not burn then stir in the mace.
- To serve, spoon the smashed potatoes into a serving bowl.
- With the back of the spoon, smooth the top, leaving several shallow indentations.
- Drizzle the butter, letting it pool in the hollows.
- Serve immediately.

- Halve the potatoes and add to a large pot. Cover with water and bring to a boil over high heat. Reduce the heat to medium-low and cook the potatoes for 10 minutes while you trim and chop broccoli into 1/2-inch dice. Add the broccoli to the potatoes and cook for 5 minutes more. Drain and return to the hot pot to dry. Stir in the milk, butter and cheese and mash until the cheese melts into potatoes and broccoli. - Heat bacon drippings in a large, deep saucepan or soup pot over medium-high heat. Add onion and celery; saute until softened, 3 to 5 minutes. Add sausage, sage, paprika, salt, and pepper; continue to saute, mashing up the sausage into small pieces until browned and no longer pink, 5 to 7 minutes.
- While sausage is cooking, poke several holes in a zip-top bag and add broccoli (this allows steam to escape). Microwave for 3 minutes.
- Pour broth into sausage mixture, then add mashed potatoes. Mix well, then add the broccoli, corn, and green chilies. Stir to combine all well and then add the sour cream. Taste and add more salt and pepper as needed. Let simmer for about 10 more minutes for flavors to meld.

- Butter a 8x12 baking dish.
- Whip together mashed potatoes, black pepper, salt, cream cheese, milk, egg and butter until smooth.

- Boil the potatoes in salted water until very tender; about 20 minutes. Cut the florets off the broccoli and add to boiling potatoes, till soft, about 7 minutes. Drain and transfer back into pot.
