2 cups mashed potatoes
1 cup all-purpose flour
1 onion, diced
1 egg
½ teaspoon ground black pepper
½ teaspoon salt
½ cup vegetable oil, or as needed

Steps:

  • Mix mashed potatoes, flour, onion, egg, black pepper, and salt together in a bowl until batter consistency.
  • Heat vegetable oil in a skillet over medium heat. Drop 4-inch circles of batter into hot oil. Cook until golden brown, about 5 minutes per side. Remove with a slotted spoon and drain on paper towels. Repeat with remaining batter.

6 cups cubed Yukon Gold potatoes
3 1/2 cups divided panko
1 large lightly beaten egg
1/2 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon
1/2 cup chopped green onion
1/4 cup butter
1/4 cup sour cream
1 clove minced garlic
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons extra virgin olive oil

Steps:

  • In a large Dutch oven, combine potatoes and add water to cover. Bring to a boil over medium-high heat; reduce heat, and simmer 10 to 12 minutes, or until tender. Drain well and mash.
  • In a large bowl, combine potatoes, 2 cups panko, egg, cheese, bacon, onion, butter, sour cream, garlic, salt and pepper. Form potatoes into 3-inch patties; dredge in remaining panko.
  • In a large skillet, heat oil over medium-high heat. Add potato patties, and cook, 3 to 4 minutes per side, or until brown and crisp. Serve immediately.

  • Put 1 3/4 pounds baby potatoes in a pot and cover with water. Add 2 bay leaves, 2 garlic cloves and a big pinch of salt; bring to a boil. Reduce to a simmer and cook until the potatoes are tender, 20 to 25 minutes. Drain, discarding the bay leaves and garlic. Toss the potatoes with 2 tablespoons olive oil, transfer to a baking sheet and smash with a spatula or measuring cup. Drizzle with more olive oil and season with salt and pepper. Broil, turning, until crisp and golden, 15 to 20 minutes.

3 slices bacon
2 tablespoons butter
1 small onion, chopped
1 stalk celery, chopped
¼ teaspoon minced garlic
1 ¼ cups mashed potatoes
1 cup shredded American cheese
¾ cup all-purpose flour
1 egg, slightly beaten
¼ teaspoon prepared yellow mustard
⅛ teaspoon ground black pepper
1 dash hot sauce
1 tablespoon vegetable oil
2 tablespoons sour cream

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels, reserving bacon grease in skillet; crumble bacon.
  • Melt butter in bacon grease over medium heat; cook and stir onion, celery, and garlic until tender and lightly browned, about 15 minutes. Transfer vegetables and bacon to large bowl; stir in mashed potatoes, American cheese, flour, egg, mustard, black pepper, and hot sauce.

I searched the internet for a recipe to use up some left over mashed potatoes. This is what I found and made. It's simple, easy, and a great way to use up left over mashed potatoes. This is one recipe that I always come to when I have leftover mashed potatoes. I once made these and I wasn't serving them right away, so I let them cool down then I froze them. A few weeks later I removed them from the freezer let them defrost and they were just as good. I have even added leftover chicken pieces and leftover meatloaf to this and it was yummy.

1 cup mashed potatoes (left over)
1/3 cup flour
1 green onion (finely chopped)
1/2 teaspoon baking powder
1 teaspoon salt

1 -2 tablespoon milk
2 -3 tablespoons shortening or 2 -3 tablespoons vegetable oil

Steps:

  • Beat the egg.
  • Mix the beaten egg with the mashed potatoes.
  • Stir in the dry ingredients.
  • Add the milk and mix well.
  • The batter should be very thick.
  • Melt the shortening or heat the oil in a skillet.
  • Spoon batter into the skillet to form 3" to 3-1/2" inch wide pancakes, about 1/2" thick.

1-1/2 cups mashed potatoes

I have not tried this recipe but was given this by a co-worker with a suggestion that I might need to try it "hint hint". So I have posted it so I will not lose it. It is supposed to be an extremely moist cake and I plan to use some of the instant mashed potatoes to make it. Update: I have made this cake and it is a very dense cake. Almost like a big brownie. My co-workers loved it but this is not a light, fluffy cake.

1 cup mashed potatoes, hot and unseasoned
1 cup water, lukewarm
2 cups all-purpose flour, sifted
3/4 cup unsweetened Dutch-processed cocoa powder
2 teaspoons instant coffee granules (optional)
1/2 teaspoon baking soda
1 pinch salt
1 cup miniature semisweet chocolate chips (optional)
2/3 cup unsalted butter, softened
2 cups granulated sugar
1 teaspoon vanilla
4 large eggs

Steps:

  • Preheat oven to 350 degrees. Grease and flour a 13 by 9 inch baking pan.
  • Place mashed potatoes into medium bowl. With a whisk, gradually stir in water to form a smooth mixture, do not beat mixture excessively. Cool to lukewarm.
  • Sift flour, cocoa powder, coffee granules, baking soda and salt. Place chocolate chips in small bowl with about 1 Tablespoon of the sifted dry ingredients and stir well until chips are coated. Set aside.
  • In a large bowl, combine butter, sugar and vanilla. Beat 2 minutes at medium speed. Add eggs, 2 at a time, beating in at a low speed until blended. Increase mixer speed to medium; beat 1 minute.
  • At lowest speed, add sifted dry ingredients in 3 additions and mashed potato-water mixture in two additions, beginning and ending with dry ingredients and beating after each addition just until blended. Batter may still appear curdled after all ingredients have ben added -- this is okay. Remove bowl from mixer.
  • Fold in chocolate chips.
  • Turn batter in prepared pan. Bake 27 to 32 minutes. Sift confectioners' sugar over top just before serving.
