JACQUES PEPIN'S POTATOES FONDANTES
The credit for this recipe goes to Chef Jacques Pepin, thus the name of this dish and is a little tast of heaven. A nonstick skillet is crucial so the potatoes don't stick to the pan as the liquid evaporates.

Steps:
- Trim the potatoes of any eyes or damaged areas and wash well in cold water.
- Arrange as many potatoes as will fit in one layer in a 10-inch nonstick skillet (there should be a little room to spare; save any extra potatoes for another use).
- Add the rosemary, broth, oil, butter and salt. Bring to a boil over high heat. Reduce the heat to medium, cover the pan but leave the lid a tad ajar, and boil until the potatoes are tender when pierced with a fork, about 20 minutes. The liquid should still halfway surround the potatoes; if it doesn't, add more broth or water until it does.
- Remove the pan from the heat and press on each potato with a fork or 1/4-cup measure just until it cracks open. (do not press too hard) Set the pan over medium-high heat and cook, uncovered, until all the liquid has evaporated and the potatoes have browned on one side, about 10 minutes.
- Gently turn the potatoes and brown the other side, another 4 to 5 minutes.
- Remove the pan from the heat and let the potatoes rest for 5 minutes before transferring them to a serving platter.
- Sprinkle with the chives and serve immediately, passing the fleur de sel so diners can sprinkle some on if they want.
POTATOES WITH FLEUR DE SEL, BUTTER, GRILLED SARDINES, AND HAM

- In a large pot, place the potatoes in cold water and bring to a boil. Cook until potatoes are fork tender, approximately 15 minutes. Remove potatoes from pot and place on a serving dish. Add butter randomly on top of potatoes and sprinkle with fleur de sel.
- Preheat the grill.
- Place sardines and ham on grill. The sardines will only take a few minutes to cook, approximately 3 minutes on each side. Once the ham is done remove from grill.
- Divide potatoes, sardines, and ham on each plate. Sprinkle with a little fleur de sel and serve.
HERBED NEW POTATOES (ADAPTED FROM THE BAREFOOT CONTESSA)
These are the most wonderful potatoes. My family all really love them. How nice to have wonderful and easy in the same recipe. When new potatoes aren't available I have used the bags of very small potatoes available in any supermarket. This recipe is too good to be left for only one time of year!

Steps:
- Melt the butter in a large heavy bottomed pot.
- Add the whole potatoes, salt and pepper and toss well.
- Cook tightly covered 20 to 30 minutes over low-heat until fork tender. Don't overcook! (check at 20 minutes).
- Shake the pot several times to prevent the potatoes from sticking to the bottom or burning. *Don't remove the lid.
- Turn the heat off and keep the lid on for another 5 minutes.
- Toss gently with herbs and serve hot.
- Enjoy!

Steps:
- Place the potatoes in a large pot. Cover with 2 inches of water, and season with about 1 1/2 tablespoons sea salt. Bring to a boil, and cook until the potatoes are just tender, 15 to 20 minutes. Drain.
- In a large saute pan, melt the butter over medium-high heat. Add the potatoes, and saute, shaking the pan from time to time, until the potatoes are browned in patches, 10 to 12 minutes. Using a slotted spoon, transfer them to a serving bowl. Sprinkle with parsley, and serve, passing a small dish of fleur de sel at the table.
